VICHYSSOISE
Vichyssoise is a thick French velvety soup made with leeks, potatoes and cream, that is traditionally served cold.

Steps:
- In a pot, melt the butter over medium heat.
- Add the leeks, lower the heat and gently fry without browning.
- Add the potatoes, and mix well.
- Add water and season with salt and pepper.
- Bring to a boil and cook over low to medium heat for about 30 minutes, or until the potatoes are tender.
- Drain the leeks and potatoes but reserve the cooking water.
- Pass the vegetables through a potato masher.
- Add a ladle of the cooking water and the cream. Whisk well, then strain everything through a strainer.
- Pour the filtered Vichyssoise into the pot, place it on a medium heat and bring it to the boil while continuing to whisk.
- Remove from the heat as soon as it comes to a boil and let cool to room temperature.
- Place the vichyssoise in the refrigerator for at least 2 hours.
- Adjust the seasoning with salt and pepper if necessary before serving.
- Pour the vichyssoise into bowls and sprinkle with chopped chives

CLASSIC VICHYSSOISE SOUP

Steps:
- In a heavy bottomed pot, or dutch oven, heat the olive oil and the butter, over medium high heat.
- Sauté the onion until translucent (about 2 minutes).
- Add the leeks and sauté until soft (about 4-5 min).
- Add the potatoes and sauté with the onions and leeks for a couple of minutes. Season with salt and pepper.
- Add the chicken broth and bring to a boil.
- Lower the heat and simmer for 30 minutes, or until the potatoes are tender.
- Using an immersion hand blender, puree the soup until smooth. Alternatively, you can work in batches using a regular blender.
- Add the heavy cream and turn the heat back up to medium. Cook for about 5 minutes so it thickens a little.
- Taste for seasoning and add more salt and pepper if necessary. Add a pinch of freshly grated nutmeg. Remove from heat.
- Wait for the soup to cool down to room temperature and chill for at least one hour before serving (overnight is better).
- Garnish with some chopped chives and serve.
SOME LIKE IT HOT AND CHOCOLATE CHEESECAKE CUPCAKE

- Preheat the oven to 350 degrees F. Line mini cupcake pans with paper liners (for a total of 36 mini cupcakes).
- For the chocolate mayonnaise cake: Mix the sugar and cocoa in a medium bowl. In a small bowl, combine the baking soda and 1/2 cup cold water. Add the baking soda mixture to the sugar mixture, and then mix in the vanilla and salt. Add the flour and mix to combine. Fold in the mayonnaise.
- For the dark chocolate chile cheesecake: Mix together the cream cheese, sugar, vanilla and egg in a stand mixer with the whisk attachment until fluffy and smooth, about 3 minutes.
- Using a double boiler, melt the dark chocolate. Mix the chocolate into the cheesecake batter, and then mix in the ancho and cayenne.
- Layer the cupcake liners with the chocolate mayonnaise cake batter first. Then add a layer of the dark chocolate chile cheesecake batter. Fill the liners with both batters about three-quarters full because the cupcakes will rise. (Depending on your layering technique, you may have more of one batter than the other. You can always make straight cupcakes or cheesecakes with the extra batter.)
- Bake about 18 minutes. Set aside to cool completely.
- For the chile cream buttercream frosting: In a medium bowl, sift together the ancho, cinnamon and cayenne with the confectioners' sugar. Cream together the cream cheese and butter in a stand mixer on medium speed. Add the ancho mixture and vanilla and mix until smooth.
- Put the frosting in a piping bag and frost the cooled cupcakes generously.
VICHYSSOISE
Steps:
- Heat butter until it begins to brown: In a large (6-quart) pot, heat the butter on medium high heat until it melts and foams up. Continue to heat until the foam subsides a little and the butter just begins to brown.
- Add potatoes, water or stock, salt, bring to simmer: Add the chopped potatoes, salt, and water or stock. Bring to a boil, reduce to a simmer. Cook, partially covered for 30-40 minutes, until the potatoes are completely cooked through. Remove from heat.
- Purée until smooth: Purée using an immersion blender or working in batches, blend in a blender. (Careful! With hot liquids only fill the blender 1/3 of the way full, and hold the blender top on with your hand while blending.) Purée until completely smooth. If you want an even smoother soup, you can take the extra step of pressing the purée through a sieve with a rubber spatula.
- Cool and stir in sour cream and cream: Allow to cool a bit before stirring in the sour cream and whipping cream. Allow to cool completely and chill in the refrigerator. The soup should be served just below room temperature (maybe 65°F or 18°C). If it is too cold, it won't taste as good. Add more salt to taste. Serve garnished with chopped fresh chives.

This is simple to prepare and makes a good potato soup. It can be prepared in advance up to the addition of the half and half. Just refrigerate at that point and when ready to serve add the half and half and serve or heat and serve. As the Title says, Some like it hot, some like it cold!

Steps:
- Melt butter in your soup pot.
- Saute leeks and onion in butter until they're a light yellow or golden color.
- Add broth, potatoes and pepper.
- Bring to a boil, reduce heat and simmer for about 20 minutes or until potatoes are done.
- Using a blender or food processor run the soup, including all the liquid until it is velvety smooth. You may have to do this in batches.
- Taste and adjust seasonings if necessary.
- If serving cold or if you are making it in advance put in fridge until it's ready.
- When ready to eat add the half and half and stir. You may need to add more half and half to get the consistency you like.
- If eating it hot microwave or put it on the stove to reheat.
- Add any garnish and enjoy.
