1 head cabbage, finely chopped
6 tablespoons margarine
1 onion, minced
½ pound processed cheese food (such as Velveeta ®), cut into chunks
1 (10.75 ounce) can cream of mushroom soup
¾ cup bread crumbs
salt and pepper to taste

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Place the cabbage into a large pot with enough lightly salted water to cover; bring to a boil. Reduce heat to medium-low, cover, and simmer until tender, 5 to 7 minutes. Drain and allow to steam dry for a minute or two.
  • Melt the margarine in a large skillet over medium heat; cook the onion in the melted butter until golden. Reduce the heat to low; add the cheese food and allow to simmer until completely melted. Pour the mushroom soup into the skillet. Stir the drained cabbage, bread crumbs, salt, and pepper into the mixture. Transfer to a 2-quart casserole dish.
  • Bake in the preheated oven until the cheese begins to bubble, 20 to 30 minutes.

It's rare that everyone in the family raves over a recipe, but this cabbage casserole has become a family favorite.

1 medium cabbage, cut in half
3 Tbsp vegetable oil
2 medium onions, chopped
3 celery ribs, chopped
1 medium bell pepper, chopped
1 c heavy cream
1/2 c butter
4 slice white bread, toasted and trimmed
salt
cayenne pepper
1 Tbsp fresh parsley, minced
2 clove garlic, minced
8 oz swiss cheese, grated
3/4 c dried fine breadcrumbs

Steps:

  • 1. Cook the cabbage in boiling salted water until just tender. remove from the heat and drain. When slightly cooled, chop fine.
  • 2. Heat the oil in a large saucepan over medium heat. Add the onions, celery, and bell pepper. Cook, stirring often, until soft and golden, 5 to 6 minutes. Add the cabbage and cook, stirring often, until soft, about 10 minutes. Add the cream, butter, and the toasted bread cubes and stir until the butter is completely melted. Season with salt and cayenne. Add the parsley and garlic. Mix well and pour the mixture into a large casserole.
  • 3. Combine the cheese and fine dried bread crumbs and sprinkle evenly over the top. Bake at 350 degrees until heated through, about 30 minutes.
  • 4. If I'm in a hurry, I skip boiling the cabbage and just add it to the pan with the onions, celery and bell pepper.

One of our favorite vegetables gets the royal treatment: It's filled with a cheesy, bacony kale stuffing, coated in crispy breadcrumbs and baked until melting and tender. You can make it vegetarian by replacing the bacon with 4 ounces of sliced button mushrooms.

4 slices bacon
Kosher salt
1 large head cauliflower
8 ounces kale, stems removed
2 large eggs, beaten to blend
4 scallions, thinly sliced
2 garlic cloves, finely grated
3/4 cup grated Muenster cheese
1/2 cup heavy cream
1/2 cup plus 2 tablespoons panko breadcrumbs
1/4 cup plus 2 tablespoons finely grated Parmesan
3 tablespoons chopped fresh oregano
1/3 cup (5 tablespoons plus 1 teaspoon) butter, melted

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment.
  • Arrange the bacon on the prepared baking sheet and roast until the bacon is browned and the fat has rendered, 15 minutes. When cool enough to handle, finely chop and transfer to a medium bowl. Reserve the baking sheet.
  • Meanwhile, bring a heavily salted pot of water to a boil over high heat (the water should be very salty, even more than the sea). Carefully remove as much of the cauliflower stem as you can without cutting any of the stalks of the florets. Remove any small inner leaves. (You want to be able to freely pipe filling into the nooks of the cauliflower.)
  • Boil the cauliflower until just beginning to get tender, 5 to 7 minutes. Do not overcook, or it will break apart as you stuff it. Carefully remove the head from the water and allow to drain and cool.
  • Add the kale to the same pot and cook bright green, 2 to 3 minutes. Drain and squeeze dry. When cool enough to handle, finely chop and transfer to the bowl with the bacon.
  • Add the eggs, scallions, garlic, Muenster, cream, 1/2 cup panko, 1/4 cup Parmesan and 2 tablespoons oregano to the kale mixture and stir to combined. Transfer to a large piping bag (or 1-gallon freezer bag) and cut a 3/4-inch opening at the tip. Turn the cauliflower stem-side up, and start piping the filling in between the stalks of the florets until you've used about half of the filling. (The bottom of the head will start to expand, and you will see the filling start to push out from the top in between the florets. Turn the cauliflower right-side up and use your finger to push between the florets to separate them slightly and pipe filling in the gaps. Use all the filling, even if it looks like the cauliflower is going to explode -- it won't. It will just be full of flavor!
  • Mix together the butter with the remaining 2 tablespoons panko, 2 tablespoons Parmesan and 1 tablespoon oregano in a small bowl. Put the cauliflower right-side up in the center of the reserved baking sheet and smear with the butter mixture to coat the entire head. Bake until deep golden brown, 45 to 55 minutes. Let cool 10 minutes before cutting into wedges.

Basic Pierogi
Two 3-pound heads green cabbage (outer leaves removed)
8 ounces room-temperature cream cheese
4 tablespoons melted unsalted butter
Coarse salt and freshly ground pepper
2 sticks unsalted butter

Steps:

  • Make the cabbage filling:Quarter and core cabbage. Working in batches, steam cabbage until very tender, 20 to 30 minutes. Drain; let cool. Working in small batches, place steamed cabbage in a thin kitchen towel, and squeeze out as much liquid as possible. Grind cabbage with the fine blade of a meat grinder. Stir in cream cheese and butter. Season with salt and pepper. For each pierogi, use 1 tablespoon plus 2 teaspoons filling.
  • Make the clarified butter:Melt butter in a small saucepan over low heat. Remove from heat, and let milk solids sink to bottom. Skim foam from surface. Carefully pour off clarified butter, leaving solids behind. Makes 1 cup.
