BEEFY FRENCH ONION POT PIE
This easy dish was in a back issue of Taste of Home. If you like onions--and who doesn't, right?--you will love this extra-oniony casserole. So quick and easy to prepare in under 30 minutes.

- 1. In a large skillet over medium heat cook ground beef and onion until beef is no longer pink; drain.
- 2. Stir in the French onion soup; bring to a boil. Transfer to an ungreased 9-inch deep dish pie plate. Sprinkle with the mozzarella cheese.
- 3. Bake in a preheated 350-degree oven for 3 minutes, or until the cheese is melted. Top with the biscuits and bake 15-20 minutes longer or until biscuits are golden brown.
BEEFY POT PIE

Steps:
- 1. Preheat oven to 350 degrees F. In a large skillet, brown ground beef leaving some chunks. Drain well on paper towels.
- 2. Return beef to pan and add soup, water, peas and carrots, and seasonings. Bring mixture to a boil; then reduce heat and simmer, uncovered, for approx. 5 minutes.
- 3. Remove skillet from heat and stir in 1/2 cup cheese and 1/2 can french-fried onion rings.
- 4. Pour mixture into a greased 12 x 8 baking dish. Cut each biscuit in half and place halves, cut side down, around the edge of the casserole. Bake, uncovered, for 15-20 minutes or until biscuits are done.
- 5. Top with remaining cheese and french-fried onions - bake an additional 5 minutes or until onions are golden brown.

- Preheat oven to 400 degrees F (200 degrees C).
- Place the bacon into a skillet, and cook over medium heat until browned. Remove bacon from skillet, reserving 4 tablespoons bacon fat, and drain on paper towels.
- Place the onions into the same skillet with the bacon fat, and cook over medium-high heat until evenly browned, about 8 minutes. Season with salt and pepper. Combine the milk and cream in a bowl. Sprinkle the flour over the onions, and stir to blend. Stir in the milk mixture. Cook and stir over medium heat until the mixture thickens. Remove from heat, stir in the bacon, and set aside to cool 10 minutes.
- Beat the eggs in a mixing bowl until light colored and frothy. Stir a spoonful of the onion mixture into the eggs. Add another spoonful of the onion mixture, and continue stirring. Repeat, until all the onions have been stirred into the eggs and are thoroughly blended. Pour the mixture into the prepared pie shell. Sprinkle with nutmeg.
- Bake in preheated oven until the crust is lightly browned, about 20 minutes. Remove from the oven and cool 5 minutes before serving.

- Place a rack in lower third of oven; preheat to 400°. Heat oil in a large heavy pot over medium-high. Season ½ cup flour with salt and pepper. Add beef and toss to coat; shake off excess. Working in batches as needed to avoid steaming meat, cook beef, turning often, until browned all over, 8–10 minutes per batch. Transfer to a plate.
- Cook bacon in same pot, stirring often, until brown and crisp. Add ¼ cup water and cook, scraping up browned bits, then add onion, leek, and carrot and cook, stirring occasionally, until vegetables are starting to soften, about 5 minutes. Stir in garlic and parsley and return beef to pot. Add brandy and simmer until liquid is almost completely evaporated, about 1 minute. Add thyme leaves, bay leaf, star anise, broth, and wine and season with salt and pepper; bring to a simmer.
- Mix 1 Tbsp. flour and 1 Tbsp. butter in a small bowl until smooth; stir into meat mixture. Cover pot and braise in oven until beef is very tender, 1–1½ hours.
- Melt remaining 4 Tbsp. butter in a large skillet over medium-high heat. Add mushrooms and pearl onions and cook, stirring, until browned, 8–10 minutes. Stir in lemon juice; season with salt and pepper. Add mushrooms and onions to stew, cover pot, and return to oven. Cook until onions are very tender, 25–30 minutes. Let stew cool.
