Over the years, I've tried to instill a love of cooking in our seven children. And we've enjoyed a variety of delicious recipes, including this one. - Nancy Robaidek, Krakow, Wisconsin

1 pound ground beef
1 medium onion, chopped
1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
1 can (4 ounces) mushroom stems and pieces, drained
1 teaspoon garlic salt
1 teaspoon dried basil
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon salt
2 cups whole milk
1 cup shredded Monterey Jack cheese or part-skim mozzarella cheese
Biscuits, optional

Steps:

  • In a 10-in. cast-iron or other ovenproof skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the spinach, mushrooms, garlic salt and basil. Cover and cook for 5 minutes. , In a saucepan, melt butter over medium heat. Stir in the flour and salt until smooth. Gradually add milk. Bring to a boil; cook and stir until thickened, about 2 minutes. Stir in cheese. Pour over meat mixture; mix well. Reduce heat; cook, covered, until heated through. If desired, serve with biscuits.

1/2 stick unsalted butter
1 small yellow onion, chopped
20 ounces frozen chopped spinach, thawed and squeezed dry
1 cup whole-milk ricotta
3 large eggs
1/4 cup crumbled feta
2 tablespoons chopped fresh dill
Coarse salt and pepper
4 sheets frozen phyllo dough, thawed

Steps:

  • Preheat oven to 375 degrees. In a 10-inch nonstick, oven-safe skillet, melt butter over medium. Transfer 2 tablespoons to a small bowl. Add onion to skillet and cook, stirring, until softened, 5 minutes. Remove from heat and let cool slightly. Stir in spinach, ricotta, eggs, feta, dill, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Lay 1 sheet phyllo on a work surface and lightly brush with reserved melted butter. Lay over spinach mixture, folding edges under to fit inside skillet. (Keep extra phyllo covered while you work.) One at a time, brush remaining 3 sheets and add to skillet, rotating and scrunching each sheet slightly so edges are offset and top is ruffled. Bake until golden brown and heated through, about 30 minutes.

1 ½ teaspoons garlic salt

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the spinach to the skillet and cover; allow to cook 5 minutes. Stir in the garlic salt and cover again for another 5 minutes; remove from heat. Sprinkle with Parmesan cheese to serve.

2 large eggs, room temperature, lightly beaten
3 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
2 cups ( 8 ounces) crumbled feta cheese
1-1/2 cups shredded part-skim mozzarella cheese
1/4 cup chopped walnuts, toasted
1-1/2 teaspoons dried oregano
1-1/2 teaspoons dill weed
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 cup julienned soft sun-dried tomatoes (not packed in oil), optional
1/3 cup canola oil
12 sheets phyllo dough (14x9-inch size)

Steps:

  • Preheat oven to 375°. In a large bowl, combine eggs, spinach, cheeses, walnuts, seasonings and, if desired, tomatoes; set aside. Brush a 10-in. cast-iron or other ovenproof skillet with some of the oil; set aside., Unroll phyllo dough. Place 1 sheet of phyllo dough on a work surface; brush with oil. (Keep remaining phyllo covered with a damp towel to prevent it from drying out.) Place in prepared skillet, letting edges of phyllo hang over sides. Repeat with an additional 5 sheets of phyllo, again brushing with oil and rotating sheets to cover the skillet., Spread spinach mixture over phyllo in skillet. Top with an additional 6 sheets of phyllo, again brushing with oil and rotating sheets. Fold ends of phyllo up over top of pie; brush with oil. , Using a sharp knife, cut into 8 wedges. 2 1/2 tablespoons balsamic vinegar
1 (10 ounce) package fresh spinach
2 tablespoons chopped pecans, toasted

1 pinch sugar

Steps:

  • Fry bacon in a big skillet until crisp; transfer bacon to a papertowel lined plate to drain; crumble and set aside.
  • Reserve 1 tablespoon bacon drippings in skillet.
  • Add vinegar to bacon drippings; bring mixture to a boil over medium-high heat; stir to loosen bacon particles.

1/4 cup cream
4 ounces low-fat cream cheese, cubed

Steps:

  • In a large nonstick skillet, saute onion, mushroom and garlic in bacon grease until soft.
  • Season with salt and pepper, and garlic powder if not using fresh garlic.
  • Add entire bag of spinach and gently mix, then cover and reduce heat to low.
  • After a few minutes when spinach has wilted, add cream and cream cheese and gently stir until cream cheese chunks have melted into the sauce.
