AUTHENTIC MEXICAN SALSA ROJA



Authentic Mexican Salsa Roja image

This Mexican-style homemade salsa is fresh, unbelievably delicious, easy to make and seriously the best homemade salsa recipe you'll ever have.

Number Of Ingredients 6

6 ripe medium tomatoes (stem removed)
2 - 4 jalapeno or serrano chiles (or more for additional heat)
1/2 medium onion (diced)
1/3 cup fresh cilantro (chopped)
1 tablespoon of lime juice (or more to taste)
Salt to taste

Steps:

  • Heat a large cast iron skillet or a heavy-bottomed skillet over high heat. Add the tomatoes and the chiles to the pan and char on all sides, rotating the vegetables occasionally until blackened. This can take about 6 minutes for the chiles and 10 to 15 minutes for the tomatoes. The tomato skins should begin to pull away from the flesh and the chiles will look blistered.
  • Transfer the chiles to a cutting board and allow them to cool. Place the tomatoes, including any charred skin that has completely fallen off, in the bowl of a food processor or blender. Pulse a couple of times for about 10 seconds or until the tomatoes are blended but with a few small chunks for texture.
  • Transfer the blended tomatoes to a bowl. Cut the charred chiles in half lengthwise and remove the stems and seeds. You can remove the ribs if you don't like the salsa too spicy. Chop the chiles into small dice.
  • Mix the chiles, onions and cilantro with the tomatoes until combined. Stir in the lime juice and salt. Taste and season with additional lime juice and salt, if needed. Cover and refrigerate until cooled. Serve with chips.

2 cups chopped tomatoes
¼ cup chopped red onion
¼ cup chopped yellow onion
2 tablespoons canned green chilies
2 tablespoons fresh lime juice
2 tablespoons chopped fresh cilantro
2 cloves garlic, peeled
1 teaspoon ground cumin
¼ teaspoon salt

Steps:

  • Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

3 jalapeno peppers
1 medium onion, quartered
1 garlic clove, halved
2 cans (one 28 ounces, one 14-1/2 ounces) whole tomatoes, drained
4 fresh cilantro sprigs
1/2 teaspoon salt
Tortilla chips

Steps:

  • Heat a small ungreased cast-iron skillet over high heat. With a small sharp knife, pierce jalapenos; add to hot skillet. Cook for 15-20 minutes or until peppers are blistered and blackened, turning occasionally., Immediately place jalapenos in a small bowl; cover and let stand for 20 minutes. Peel off and discard charred skins. Remove stems and seeds., Place onion and garlic in a food processor; cover and pulse 4 times. Add the tomatoes, cilantro, salt and jalapenos. Cover and process until salsa reaches desired consistency. Chill until serving. Serve with chips.

5 roma (plum) tomatoes
3 serrano peppers
½ cup chopped onion
⅔ cup chopped fresh cilantro
1 clove garlic, peeled and crushed
salt to taste

Steps:

  • Place roma (plum) tomatoes and serrano peppers in a medium saucepan over medium high heat with enough water to cover. Bring to a boil. Boil 15 minutes. Remove from heat and drain.
  • Place roma tomatoes, serrano peppers, onion, cilantro and garlic in a blender or food processor. Puree about 30 seconds, or to desired consistency. Transfer to a medium serving bowl, and salt to taste.

12 corn taco shells
2 tablespoons canola oil
½ cup diced onion
2 cloves garlic, pressed
1 pound rotisserie chicken, meat pulled and shredded
1 (8 ounce) can tomato sauce
1 cup salsa, divided
1 (1 ounce) package taco seasoning
1 (15 ounce) can vegetarian refried beans
2 cups shredded lettuce
2 cups shredded Mexican cheese blend
1 cup chopped green and red bell peppers
1 cup diced tomatoes

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Place taco shells on a baking sheet.
  • Heat oil in a large skillet over medium heat; stir in onion and garlic. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add chicken, tomato sauce, 3 tablespoons salsa, and taco seasoning; stir well. Cook until heated through, stirring occasionally, 5 to 6 minutes.
  • Meanwhile, put refried beans in a microwave-safe container. Stir, cover, and microwave on high until hot, 3 to 5 minutes. Stir again and set aside.
  • Warm taco shells in the preheated oven for 3 to 5 minutes.
  • Place warmed taco shells on a serving platter. Lay out remaining salsa, chicken mixture, refried beans, lettuce, Mexican cheese, bell peppers, and tomatoes in nice serving bowls and allow diners to fill their own tacos.

Just like the salsa I enjoyed in a small restaurant in downtown Cancun - took me a while to get it just right!

4 ripe fresh tomatoes (RIPE tastes better!)
1 onion
1 lime
1 ripe jalapeno pepper (2 if you like it HOT!)
1 bunch fresh cilantro
1/2 teaspoon salt

Steps:

  • Chop up the tomatoes to your preferred size.
  • Dice the onion (if it is a large onion you may only want to use half).
  • Chop up the cilantro and the pepper.
  • Put it all into a bowl and squeeze all of the juice from the lime on top.
  • Add a bit of salt.
  • stir it up.
  • enjoy!

  • Add all of the ingredients into a food processor and process until you reach your desired consistency. My favorite restaurant salsas tend to be less chunky so I pulse a few times to break things up, then process for 10-15 seconds until there aren't any large chunks but stopping before turning everything into a soup.
  • Taste the salsa and adjust as necessary. You may prefer more lime juice or a bit more salt (different brands of tomatoes have different salt content so depending on which brand you are using, you might even need to add another 1/2 teaspoon of salt, which might seem like a lot - that's why it's important to taste and adjust and I always start on the lower end and work my way up).
  • If you want more heat, add in some of the seeds from your jalapenos (I always start with one jalapeno and then add in the second jalapeno, then some of the seeds if needed to get the heat where I like it since most of the spiciness in the jalapenos is in the seeds themselves).
  • Chill in the fridge for at least 1 hour before serving so the flavors have a chance to really combine. Serve with fresh tortilla chips! Can be stored in the fridge for up to 1 week.
