This no-bake cheesecake with sour cream is very simple and easy. When a dessert is needed quickly, this one is quick to make. Everyone seems to like it. It doesn't matter whether I provide toppings or keep it plain. This one is a success at my house and church gatherings.

1 (8 ounce) package cream cheese, softened
1 (8 ounce) container sour cream
⅓ cup white sugar
1 teaspoon vanilla extract
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 (9 inch) prepared graham cracker crust

Steps:

  • Mix cream cheese, sour cream, sugar, and vanilla extract together in a bowl. Fold in whipped topping. Spread into graham cracker crust. Refrigerate for at least 30 minutes before serving.

1/2 cup butter, softened
1/2 cup shortening
2 cups sugar
4 large eggs
3-1/2 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1-1/2 cups buttermilk
2 teaspoons vanilla extract
1-1/2 cups ground walnuts
FROSTING:
11 ounces cream cheese, softened
3/4 cup butter, softened
5 to 5-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
1/3 cup finely chopped walnuts

Steps:

  • Preheat oven to 350°. Cream butter, shortening and granulated sugar. Add eggs, one at a time, beating well after each addition. Combine flour, baking soda and salt; gradually add to creamed mixture alternately with buttermilk and vanilla. Beat on low speed just until combined. Stir in ground walnuts. , Pour into three greased and floured 9-in. round pans. Bake until a toothpick inserted in the center comes out clean, 20-25 minutes. Cool 5 minutes; remove from pans to wire racks to cool completely. , For frosting, beat cream cheese and butter. Add confectioners' sugar; mix well. Beat in vanilla until smooth. Spread frosting between layers and over the top and sides of cake. Sprinkle with walnuts. Refrigerate.

1 1/2 cups sifted cake flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 eggs
3/4 cup whipping cream
1 cup sugar
1/2 cup chopped walnuts
1/4 cup butter, melted
2 cups sifted powdered sugar (confectioners')
1/2 teaspoon vanilla
light cream (about 2 tablespoons)

Steps:

  • FOR THE CAKE: In a bowl sift together the cake flour, baking powder, and salt. In large mixing bowl combine the eggs and cream; beat with rotary beater or electric mixer till well blended. Beat in sugar; continue beating till thickened (about 5 minutes). Stir in the flour mixture. Stir in the walnuts. Pour the batter into a greased and floured 9 x 9 x 2 inch baking pan. Bake at 350°F till the cake tests done, 25 to 30 minutes. Cool. Frost with Golden Butter Frosting.
  • GOLDEN BUTTER FROSTING: In a small saucepan melt 1/4 cup butter; keep over low heat till butter is golden brown. (Watch carefully to prevent scorching.) Remove from heat. Place 2 cups sifted powdered sugar in a mixing bowl. Beat in the melted butter. Add 1/2 teaspoon vanilla. Blend in enough light cream to make frosting of spreading consistency. Quickly spread frosting on top of cooled cake.

1 (16 ounce) box graham crackers
2 (13 ounce) containers marshmallow cream
2 (8 ounce) containers Cool Whip (thawed)
4 teaspoons vanilla extract
1 (11 1/2 ounce) bag semi-sweet chocolate chips
1 cup heavy whipping cream
1 teaspoon salt

Steps:

  • Line bottom of 9x13" casserole dish with graham crackers.
  • Mix marshmallow cream and cool whip in mixer until smooth (scraping down sides).
  • Add vanilla extract to mixture.
  • Spread 1/3rd of marshmallow mixture over top of graham crackers.
  • Add another layer of graham crackers, another 1/3rd of marshmallow mixture, repeat. And finish with a layer of graham cracker on top.
  • Over medium-low heat, melt chocolate chips with the heavy whipping cream.
  • Once melted and combined, add salt and turn off heat.
  • Let cool for 15 minutes, but wisk every 5 minutes while cooling.
  • Pour over the top of the graham crackers, spread evenly.
  • Put container in freezer for 30 minutes, uncovered.
  • Remove from freezer, cover and place in the refrigerator overnight.

2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
1 cup walnuts, chunky pieces not crumbs
1 cup maraschino cherry, well drained on a paper towel and halved
2 1/2 cups self-rising flour, remove 2 tablespoons to use to coat the walnuts and cherries
1 1/4 cups sugar
3/4 cup margarine, room temperature
1 teaspoon vanilla extract
1 teaspoon almond extract
3 large eggs, at room temperature
1/2 cup light sour cream, room temperature
1/2 cup buttermilk, room temperature

Steps:

  • Preheat oven to 350°F.
  • In a small bowl or container, mix together granulated sugar and ground cinnamon and set aside.
  • In another small bowl mix together the walnuts, cherries and 2 tablespoons of flour to coat. This will prevent them from sinking to the bottom of the cake. Set aside.
  • Cream together the sugar and margarine.
  • Beat in vanilla and almond extracts and eggs, one at a time.
  • Beat in sour cream and buttermilk.
  • Sift together: flour, baking powder, baking soda and salt, and add to wet ingredients.
  • Fold in the nuts and cherries.
  • Spray the bundt pan heavily with Pam and sprinkle evenly with sugar/cinnamon mixture.
  • Pour in the batter.
  • Bake for 27 to 35 minutes on middle rack, until toothpick inserted in centre comes out clean.
  • Cool 10 minutes in pans before removing to wire rack.

An old fashioned Southern Style nut cake. Like fruit cake, this will last several weeks covered in aluminum foil. It has lots of nuts. It is a nut lovers dream.

Number Of Ingredients 12

1 lb flour (4 cups)
1 lb sugar (2 cups)
3/4 lb butter
1/2 cup molasses
1 teaspoon baking soda, dissolved in
1 cup Bourbon (don't use scotch) or 1 cup rye whiskey (don't use scotch)
2 lbs shelled pecans (8 cups) or 2 lbs walnuts (8 cups)
2 boxes seeded raisins (muscat) (optional)
6 eggs
1 teaspoon ground cloves
2 teaspoons ground cinnamon
2 teaspoons ground nutmeg

Steps:

  • Preheat oven to 275°F.
  • Coat raisins and nuts with flour and set aside.
  • Cream butter and sugar, then add eggs one at a time.
  • Add molasses and spices, then add floured nuts and raisins.
  • (Note: if not using raisins you may wish to add extra nuts) Last add whiskey and soda mixture.
  • Bake in large bundt pan lined with waxed paper for 3 to 3 ½ hours over a pan of water set on the oven floor.
  • Keeps for weeks wrapped in aluminum foil.
  • For a Christmas cake that will last even longer wrap cake in cheesecloth dampened with Bourbon and then in foil and store in a cool place. Check Cheese cloth at least once a week and dampen again as needed.

My favorite cake recipe is Whipping Cream Cake. It's a variation on the pound cake I fell in love with in the corner delis in New York sold by the slice wrapped in celophane. It's fancy enough for company with raspberry sauce and extra whipped cream, or great just plain in my lunchbox the next day.

1 cup butter
3 cups sugar
6 eggs
3 cups cake flour, sifted
1 cup heavy whipping cream
1 teaspoon vanilla
1 teaspoon lemon extract (or almond or rum--whatever you feel like)

Steps:

  • Cream butter and sugar in mixer bowl until light and fluffy.
  • Add the eggs, flour, and whipping cream-mix well.
  • Stir in flavorings.
  • Spoon into a greased and floured bundt pan.
  • Bake at 325 degrees for about an hour or until cake tests done. Cool in the pan for several minutes.
  • Invert onto a wire rack to cool completely.
  • Garnish with powdered sugar, berry sauce, ice cream, or whatever strikes your fancy.
  • It is also excellent "unadorned."
