4 oz Butter
3 Tbl Minced garlic
Favorite hot sauce to taste
2 tsp Cayenne
3 tsp Worcestershire sauce
3 Tbl Ppaprika
1 bottle Heinz Chili Sauce
1 Bottle Bottle of Lobster or Clam juice
15 oz 15-count peeled and deveined shrimp
8 oz Scallops
8 oz Crab (You can get Blue Crab at one of the Big Warehouses)
1/2 cup White wine (Your favorite)
2 Tbl Brandy ( I love the taste of B & B)
1 pint Cream
White pepper and salt to taste
1/2 cup Parsley, chopped

Steps:

  • Melt your butter in a saute pan add your garlic, hot sauce, Worcestershire sauce and cayenne.
  • Saute each type of seafood separately. Pull out each type when 2/3 cooked and place in one separate bowl.
  • Add wine to sauce and scrape bottom of pan to absorb any dark bits into your sauce.
  • Put left over sauce into a dutch oven and add clam/lobster juice, chili sauce, and Bandy.
  • Simmer sauce for a few minutes; add the seafood. Cook till seafood is done.
  • Add cream and season with white pepper and salt to taste.
  • Garnish the dish with chopped parsley.

1/4 pound (1 stick) unsalted butter
2 tablespoons good olive oil
2 tablespoons minced garlic (6 cloves)
2 teaspoons minced fresh rosemary leaves
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
2 large lemons
2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. Slice the ends off the zested lemon, cut five (1/4-inch-thick) slices, and tuck them among the shrimp. Roast for 12 to 15 minutes, just until the shrimp are firm, pink, and cooked through. Cut the remaining lemon in half and squeeze the juice onto the shrimp. Serve hot with the toasted bread for dipping into the garlic butter.

Steps:

  • In large pan over medium heat, melt butter. Add salt, white pepper, celery seed, paprika, lemon juice, Worcestershire sauce, Tobasco, white wine, cocktail sauce and clam juice.
  • Add seafood, stir and bring to a full boil. Add half-and-half and return contents of pan to boil.
  • Place butter in bottom of deep bowl, pour in pan roast, sprinkle with paprika and serve.

2 cups clam broth or juice
1 tablespoon sweet butter
1 teaspoon celery salt
1 teaspoon Worcestershire sauce
6 extra select shucked oysters with juice
2 tablespoons sweet chili sauce
2 cups half-and-half
1 slice white toast
Pinch sweet Hungarian paprika
1 package oyster crackers

Steps:

  • In a double boiler with water boiling on high, combine clam juice, butter, celery salt, and Worcestershire sauce. Once the butter melts, add the oysters and cook for 30 seconds, stirring constantly. Add chili sauce and stir well. Add half-and-half and cook for a few minutes until the cream is hot, but not boiling. Add a slice of white toast to a warm 9-inch soup plate and underline with a 10 5/8-inch plate. Using a slotted spoon, transfer oysters over toast in soup plate. Remove top pan and pour hot liquid contents over the oysters, filling to about 1/4-inch beneath the rim. Garnish with a dash of paprika. Serve with 1 package of oyster crackers.

1 1/2 pounds white-skinned potatoes (about 3 baking potatoes)
8 cloves garlic, unpeeled
2 small red onions
1 unwaxed lemon
1/4 cup regular olive oil
12 ounces small clams in their shells
6 to 8 baby squid
1 1/4 pounds or 16 unpeeled raw colossal-size shrimp with heads-on
3 tablespoons dry white vermouth or white wine
Salt and freshly ground black pepper
2 to 3 tablespoons roughly chopped parsley leaves

Steps:

  • Preheat the oven to 425 degrees F. Cut the potatoes, without peeling, into thick slices and each slice into quarters. Put them into a large roasting pan with the whole garlic cloves.
  • Quarter the onions, peel them (I find it easier to do it this way around), then halve each quarter horizontally. Quarter the lemon and cut each quarter into 1/2-inch pieces. Add the onion and lemon to the pan with the potatoes and garlic.
  • Drizzle with 2 tablespoons of the oil and roast for 1 hour.
  • Meanwhile, soak the clams in a bowl of water - if any are smashed or don't close after they've soaked, throw them away. Slice the squid into rings.
  • After 1 hour, take the pan out of the oven and put it over low heat on the stove top so that the pan doesn't cool while you add the seafood.
  • Arrange the drained closed clams, baby squid rings, and whole raw shrimp over the potatoes, garlic, lemon pieces, and onions.
  • Splash the seafood with the remaining 2 tablespoons of oil and the vermouth, then season with salt and pepper, to taste.
  • Put the roasting pan back in the oven for 15 minutes, by which time the clams should have opened and the shrimp have turned pink. Discard any clams that have not opened.
  • Scatter with parsley and serve straight from the pan: it couldn't look more beautiful.
  • Make Ahead Note: Potatoes can be prepared 1 day ahead. Submerge in a bowl of water and store in the refrigerator. Drain and pat dry before using. Onions and lemons can be cut 1 day ahead and stored in bowls tightly covered with plastic wrap in the refrigerator.

8 oz. unsalted butter (2 sticks)
3/4 c. all purpose flour
1 c. chopped yellow onion
1/2 tsp. celery seeds
1 Tbsp. minced garlic
2 Bay leaves
1/4 c. tomato paste
1/2 c. dry sherry
5 c. fish or shrimp stock
1 (14.5 oz.) diced tomatoes with juice
1 Tbsp. sugar
1/2 tsp. Tabasco sauce
1/2 tsp. crushed red pepper
24 med. shrimp, peeled and deveined
36 shucked oysters, drained
3 cans lump crab meat, drained
6 oz. heavy whipping cream
1 Tbsp. Creole Seasoning (recipe to follow)
3 c. cooked white rice

Steps:

  • In a Dutch oven or large heavy pot, heat half of the butter over medium-high heat. Add the flour, reduce the heat to medium, and cook, stirring constantly with a large wooden spoon, to make a thick roux almost the color of milk chocolate, 15 to 20 minutes. Add the onions and celery seed, cook, stirring, for 1 minute. Add the garlic and bay leaves, and cook, stirring, for 30 seconds. Place the tomato paste in a small bowl and whisk in the sherry to blend. Add to the pot, and cook, stirring, for 30 seconds. Add the stock, and whisk to blend. Add the tomatoes and their juices, the sugar, salt, black pepper, and red pepper, and cook, stirring, occasionally, for 20 to 25 minutes. Add 2 cups of the court-bouillon and bring to a simmer. Season the shrimp, crab meat, and oysters with Creole Seasoning. Add the shrimp and cook for 3 minutes. Add the oysters and cook until the oysters curl, 1 to 2 minutes. Add heavy whipping cream and boil for 1 minute. Add last 4 oz. of butter. Divide equally between 2 large soup bowls, and repeat with the remaining ingredients in 2 batches. Spoon 1/2 cup of rice into the center of each bowl and serve immediately. Creole Seasoning: 2 1/2 tablespoons paprika 2 tablespoons salt 2 tablespoons garlic powder 1 tablespoon black pepper 1 tablespoon onion powder 1 tablespoon cayenne pepper 1 tablespoon dried leaf oregano 1 tablespoon dried thyme Combine all ingredients thoroughly and store in an airtight jar or container. ONE-PAN SEAFOOD ROAST WITH SMOKY GARLIC BUTTER



One-pan seafood roast with smoky garlic butter image

Give the Sunday roast a new look with hasselback potatoes and smoky, charred seafood, all cooked in one pan. Serve with bread for mopping up the buttery juices

400g baby new potatoes
1 tbsp olive or rapeseed oil
2 corn cobs
8-12 large prawns , heads and shells on
8-12 mussels or large clams (or a mixture)
2 medium squids with tentacles, cleaned
150g butter
small bunch parsley , chopped, plus a little to serve
1 tsp smoked paprika
3 garlic cloves , crushed
1 lemon , zested then cut into wedges
200g ring chorizo , peeled and sliced

Steps:

  • Heat oven to 200C/180C fan/gas 6. Use a large knife to hasselback the potatoes; cut incisions in each potato making sure you don't cut through to the base, and keep the cuts as close together as possible. Toss the potatoes in oil and some seasoning in your largest roasting tin (an oven tray is ideal - line with parchment first if it's old). Roast for 20 mins.
  • Butterfly the prawns by cutting a line down the back of each one, through the shell from the base of the head to the top of the tail. Pull out the black line of intestine from each one. Clean the mussels under cold water, pulling off any hairy or stringy bits. Hasselback the squid in the same way you did the potatoes.
  • Cut each corn cob into four pieces - the easiest way to do this is by positioning your knife, covering it with a tea towel and hitting it with a rolling pin. Add the corn to the tray, toss in the oil and return to the oven for 5 mins.
  • Mash together the butter, parsley, paprika, garlic and lemon zest. Stuff some of the butter into the back of each prawn and inside the squids. Turn the oven up to 220C/200C fan/gas 6. Add the seafood, lemon wedges and chorizo to the pan and toss everything together. Dot the remaining butter over the top, season well and return to the oven for 10 mins. If any of the prawns haven't turned pink or any mussels haven't opened, move them around the pan to the hot spots, then return to the oven for another 2-3 mins. Remove and discard any mussels which haven't opened. Scatter some parsley over and serve.

¾ cup unsalted butter
2 heads garlic, chopped

1 pound uncooked medium shrimp, peeled and deveined
1 pound Snow Crab legs
2 lobster tails, split in half lengthwise
4 andouille sausage links, cut into quarters
3 ears corn, cut into chunks

Steps:

  • Remove grit from clams by soaking in salt water for 20 minutes. Repeat this step twice. Scrub shells clean.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Melt butter in a medium saucepan over low heat with garlic, Cajun seasoning, seafood seasoning, and cayenne until garlic is fragrant, 1 to 2 minutes. Remove from heat.
  • Place clams, shrimp, crab, and lobster on a sheet pan. Add sausage and corn. Pour seasoned butter over and mix to ensure all is covered.
  • Bake in the preheated oven until shrimp just turns opaque, clams open, and sausage is browned, 25 to 30 minutes.

2 pounds cooked large Alaska King crab legs, cut lengthwise in half

Fresh Italian parsley sprigs

Steps:

  • Preheat oven to 450°F. Brush 2 large roasting pans with 1 tablespoon olive oil each. Mix shallots, minced parsley, and lemon peel in small bowl. Arrange lobster tails, cut side up, in 1 roasting pan; brush with 2 tablespoons olive oil. Sprinkle with salt and pepper, then 2 tablespoons shallot mixture. Roast until just opaque in center, about 15 minutes.
  • Meanwhile, combine shrimp, scallops, 2 tablespoons olive oil, and 2 tablespoons shallot mixture in medium bowl; sprinkle with salt and pepper and toss gently to coat. Arrange in single layer in second prepared roasting pan. Roast alongside lobster until shrimp and scallops are just opaque in center, about 5 minutes for shrimp and 7 minutes for scallops. Transfer lobster to large platter; cover with foil. Arrange crab legs in lobster roasting pan; drizzle with remaining 2 tablespoons olive oil, sprinkle with remaining shallot mixture, then drizzle with 3 tablespoons water. Roast just until heated through, about 5 minutes.
