THE PERFECT PICNIC PASTA SALAD

The Perfect Picnic Pasta Salad image

Pasta salad is almost always the most disappointing side dish at the picnic or cookout, but this recipe shows you how to transform what is normally an "afterthought" to a dish that's good enough to enjoy on its own, or as the perfect complement to grilled meat. Top this with extra fresh chopped herbs if you like.

Time 3h45m

Yield 8

Number Of Ingredients 22

3 tablespoons Dijon mustard
¼ cup cider vinegar
¼ cup rice vinegar
1 teaspoon kosher salt
2 teaspoons white sugar
1 pinch cayenne pepper
1 cup olive oil
2 teaspoons chopped fresh tarragon
2 teaspoons chopped fresh dill
2 teaspoons chopped fresh Italian parsley
1 teaspoon chopped fresh chives
1 teaspoon chopped fresh thyme
1 pound rotini (corkscrew) pasta
1 cup sliced snow peas
1 cup thinly sliced carrots
½ cup shelled English peas
1 cup broccoli florets
½ cup diced bell peppers
1 cup sliced cherry tomatoes
¼ cup finely diced red onion
2 tablespoons sliced green onions
1 teaspoon kosher salt, or to taste

Steps:

  • Whisk Dijon mustard, cider vinegar, rice vinegar, salt, sugar, and cayenne together in a large bowl for about 30 seconds. Whisk in olive oil in 1-teaspoon increments until emulsified. Whisk in tarragon, dill, parsley, chives, and thyme. Remove and reserve 1/2 of the dressing in a separate small bowl.
  • Bring a large pot of lightly salted water to a boil; cook rotini at a boil until tender yet firm to the bite, about 8 minutes. Add snow peas, carrots, peas, and broccoli about 2 minutes before the pasta is done. Drain pasta and veggies well, but do not rinse.
  • Transfer hot pasta mixture to the vinaigrette in the large mixing bowl and toss well to combine. Let rest for 5 minutes and toss again. Toss occasionally until the mixture is almost room temperature, 15 to 20 minutes.
  • Add bell peppers, cherry tomatoes, red onion, green onions, salt, and the reserved dressing and toss well.
  • Wrap and chill in the refrigerator for 3 to 4 hours before serving. Toss and adjust seasoning before serving.

PICNIC PARTNER MACARONI SALAD

Picnic Partner Macaroni Salad image

Exactly as the recipe title says, a fantastic picnic partner - I think we all have a macaroni salad at a picnic in the summer, and this is a very tasty one -

Provided by Chef mariajane

Categories     < 30 Mins

Time 20m

Yield 6-8 serving(s)

Number Of Ingredients 11

2 cups macaroni, uncooked
1 cup plain yogurt
1/2 cup mayonnaise
2 tablespoons onions, very finely chopped
1/4 teaspoon dry mustard
1/4 teaspoon basil
1/4 teaspoon pepper
2 stalks celery, thinly sliced
1 cup frozen peas, thawed and drained
1/2 cucumber, sliced and quartered
1 cup cubed cheddar cheese

Steps:

  • Cook and drain macaroni, saving 1 cup pasta water. Cool macaroni. Rinse in cold water to cool and drain well.
  • In large bowl, combine yogurt, mayonnaise, onion and seasonings. Add macaroni, toss to coat. Add celery, peas, cucumber and cheese. Mix well. Cover. Chill at least 2 hours or overnight. Pasta has a tendency to absorb a lot of liquid as it sits, so if the salad appears dry, add some of the pasta water to hydrate again.
  • Stir gently before serving.

SUMMER PICNIC MACARONI SALAD

Summer Picnic Macaroni Salad image

This is the macaroni salad that is served at every family gathering or picnic during the warm weather. It is a true summer comfort food. It also seems to get better with age. I hope you enjoy it.

Provided by lockedhalo

Categories     Tuna

Time 18m

Yield 6 serving(s)

Number Of Ingredients 11

1 lb salad macaroni (cooked)
1 cup frozen peas
4 sweet pickles, finely minced (baby gherkins)
1/2 cup diced celery
1/2 cup diced sweet onion
6 ounces albacore tuna in water, drained
1 cup sharp cheddar cheese, cubed (about 1/4-inch pieces)
1 cup mayonnaise
granulated sugar
white vinegar
salt and pepper

Steps:

  • Drain the macaroni.
  • Pour a mixture of 3 tablespoons vinegar and 2 tablespoons sugar over the drained (still in the colander) macaroni.
  • Drain the macaroni (again).
  • In a large bowl mix salad macaroni, peas, baby gherkins, celery, sweet onion, tuna, cubed cheese.
  • Dressing: Take the mayo, sugar, some vinegar, salt and pepper to taste; mix into the macaroni mixture. You may want to add more dressing.
  • This is a very forgiving salad. You can sub salad shrimp, ham or chicken for the tuna or ditch the meat/fish and add some grated carrots (if using carrots you might want to cut back on the sweet pickles), diced zucchini and diced red peppers.
  • Chill, check the dressing and enjoy.
