Chinese Satay Chicken Stir Fry image

{Video below} My homemade copycat of the Chinese takeout favourite - chicken satay stir fry! The coconut and peanut flavour is not as intense as Malaysian and Thai satay sauce, and the satay seasoning flavour is stronger. The chicken is tenderised the way Chinese restaurants do - perfect to make breast nice and juicy. This step is optional, but I think it's worth it for a true Chinese restaurant experience! MARINATING TIME: 20 minutes for tenderising, 10 minutes for seasoning, both optional.

8 oz / 250g chicken breast
3/4 tsp baking soda ((bi carb soda) (optional))
1/2 tsp coriander powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp chilli powder ((Not US Chilli powder! See Note 1))
1 1/2 tsp Curry Powder ((Note 2))
1/2 tsp salt
1/4 tsp white pepper
1 1/2 tbsp smooth peanut butter
2 tsp brown sugar
1 tsp light soy sauce ((Note 3))
2 tsp rice vinegar
2 tsp Sriracha ((or other hot sauce))
1/2 tsp lemongrass paste ((Note 4))
1/3 cup coconut milk ((full fat))
1/4 cup water
1 tbsp peanut oil ((or other plain oil))
1 onion (, finely chopped)
2 garlic cloves (, minced)
Shallots/scallions (, sliced (optional garnish))

Steps:

  • Cut chicken in half length wise then slice thinly. Place in a bowl with baking soda, use fingers to coat. Set aside for 20 minutes.
  • Rinse well, pat dry with paper towel then place in a bowl.
  • Mix together Seasoning.
  • Sprinkle 1 tsp of Seasoning over chicken. Mix to coat then set aside for 10 minutes (not critical, can skip this).
  • Place all ingredients except water in a bowl. Add remaining Seasoning. Mix, then add water and mix.
  • Heat oil in wok or skillet over high heat. Add onion and garlic, stir fry for 1 minute.
  • Add chicken and stir fry for 2 minutes until just cooked through and a bit browned.
  • Lower heat slightly, then add Sauce. Stir fry until it reduce down and becomes thicker - 1 to 1 1/2 minutes.
  • Serve immediately with rice - or for a low carb, low cal option, try Cauliflower Rice! Garnish with sliced shallots/scallions if desired.

Chicken satay tossed in a noodle salad loaded with plenty of veggies with a creamy peanut satay dressing! Serve this warm or at room temperature.

¼ cup peanut butter ((preferably smooth))
1 garlic clove (, minced)
1 tbsp sesame oil
2 tbsp soy sauce
2 tsp brown sugar
1 1/2 tbsp sriracha (, or 2 tsp chili paste/sauce + 2 tsp vinegar)
2 tbsp lime juice
6 tbsp coconut milk ((I used low fat))
2 tbsp water
1/4 tsp salt
10 oz/300g fresh egg noodles ((Note 1))
2 cups red cabbage (, shredded)
2 cups green cabbage (, shredded)
2 carrots (, finely chopped)
1/4 tsp salt
2 scallion/shallot stems (, finely sliced on the diagonal)
1 large red chilli ((not very spicy), deseeded and finely sliced (Note 2))
12 oz / 350g chicken breast (, cut in half vertically and thinly sliced)
Salt and pepper
1 1/2 tsp curry powder
2 tsp sweet soy sauce/ kecap manis ((Note 3))
1 tbsp cooking oil
3 tbsp peanuts (, roughly chopped)

Steps:

  • Mix dressing ingredients in a bowl until smooth.
  • Prepare noodles according to packet instructions.
  • Place both cabbages and carrots in a bowl, add 1/4 tsp salt, toss to combine and set aside for 5-10 minutes to wilt lightly.
  • Place the Satay Chicken ingredients EXCEPT the oil in a bowl and toss to coat.
  • Heat oil in a non stick fry pan over high heat. Add the chicken and cook for 3 minutes until golden, then transfer to a plate.
  • Toss noodles and remaining salad ingredients with chicken and Dressing, then serve. Serve at room temperature or warm.

I've adapted this recipe from an old Womens Weekly Chinese cookbook, it's proven to be a hit in my household. The original recipe was for beef, so I imagine you could substitute this in my recipe. I've used broccoli, capsicum and spring onions, but you could add whatever vegetables you like.

500 g chicken thigh fillets, skin and all visible fat removed
1 1/2 teaspoons soy sauce
1/4 teaspoon black pepper (or a good grind of the pepper grinder!)
2 teaspoons sesame oil
1 teaspoon cornflour
2 tablespoons water
1 tablespoon peanut oil (or I use spray oil, extra light olive oil)
200 g of thin dried noodles (or noodles of choice)
1 garlic clove, finely diced
1 medium onion, roughly sliced
3 teaspoons peanut butter (I use reduced fat)
2 teaspoons shaox hsi wine
1 teaspoon curry powder
1 teaspoon Chinese five spice powder
1/2 teaspoon cayenne pepper
2 tablespoons water
2 teaspoons soy sauce
1/2 teaspoon sugar
5 -6 pieces broccoli
1/2 capsicum, finely chopped
1 -2 spring onion, finely chopped

Steps:

  • For the chicken, cut into 3-4cm pieces and lightly pound with a meat mallet, so the chicken is of the same thickness.
  • In a bowl, combine the water and corfour, mix until it is paste-like.
  • To the bowl, add the soy sauce, black pepper, and sesame oil - mix well.
  • Add the chicken to the bowl, toss to coat, and then refrigerate for 20 minutes.
  • Combine the peanut butter, shaox hsi wine, curry powder, 5 spice powder, cayene pepper, water, soy sauce and sugar in a bowl. Stir until peanut butter has broken down and blended in with other ingredients. (Note: you might need to press down on the peanut butter with a spoon or fork as you're stirring).
  • Heat up water in a saucepan for the noodles. Add the noodles to the saucepan and cook as per instructions. Drain and set aside.
  • Heat up the oil in a wok and saute the chicken until browned. Remove and set aside.
  • Add the onions (and a bit more oil if needed), and cook a few minutes until they become transparent.
  • Add the garlic and cook a further minute or two.
  • Return the chicken to the wok, and then add the sauce.
  • Sit until boiling, then reduce heat and cook 4-5 minutes, stiring as needed.
  • Add the vegetables and half the spring onions, toss through and cook 1-2 minutes (Note: I like my vegetables crunchy).
  • Add the noodles to the wok, toss through - add a little more water if needed.
  • Serve in bowls and top with spring onions.

My family likes to try and use chopsticks when they eat this pasta and chicken stir-fry. It's one of their favorites.

8 ounces uncooked angel hair pasta
1/3 cup stir-fry sauce
2 tablespoons honey
1/4 teaspoon crushed red pepper flakes
1 pound boneless skinless chicken breasts, cut into strips
1 tablespoon canola oil
1 medium sweet red pepper, julienned
1 medium onion, cut into thin wedges
1 tablespoon minced fresh cilantro
1 to 2 teaspoons sesame oil
1 tablespoon sesame seeds

Steps:

  • Cook pasta according to package directions. Meanwhile, in a small bowl, combine the stir-fry sauce, honey and red pepper flakes; set aside., In a large skillet, saute chicken in oil until browned and no longer pink. Add red pepper and onion; cook for 2 minutes or until vegetables are crisp-tender. Stir in sauce mixture. Add cilantro and cook for 1 minute., Drain pasta; toss with sesame oil. Serve with chicken mixture; sprinkle with sesame seeds.

12 ounces uncooked whole wheat spaghetti
1/3 cup peanut butter
1/4 cup water
1/4 cup reduced-sodium soy sauce
2 tablespoons lime juice
2 tablespoons honey
2 teaspoons hot pepper sauce
1 garlic clove, minced
3 tablespoons peanut oil
5 cups fresh baby spinach, thinly sliced
2 cups shredded rotisserie chicken
1/2 cup shredded carrots
4 green onions, thinly sliced
1/4 cup chopped unsalted peanuts
2 tablespoons minced fresh cilantro

Steps:

  • Cook spaghetti according to package directions. , Meanwhile, in a small microwave-safe bowl, microwave peanut butter on high for 30 seconds or until melted. Whisk, in the water, honey, soy sauce, lime juice, pepper sauce and garlic. Add the oil in a steady stream, whisking constantly., Drain spaghetti and rinse in cold water. Transfer to a large bowl. Pour dressing over pasta; toss to coat. Add the spinach, chicken, carrots, onions and peanuts. Toss to coat. Sprinkle with cilantro.
