Crispy, buttery puff pastry folded around succulent salmon and spinach makes this salmon en croute the ultimate showstopper dinner.

3 cups baby spinach (washed and dried )
2 garlic cloves (crushed)
1 tsp lemon juice
salt and pepper (to taste )
400 g (14oz) puff pastry
500 g (1lb) salmon
1 egg (beaten)
2 tsp butter
1 garlic clove (crushed )
1 cup cream
2 tbsp dill (chopped)
1-2 tsp lemon juice
salt and pepper (to taste )

Steps:

  • Preheat the oven to 180°C/350°F.
  • Wash and dry the spinach then roughly chop. Heat a splash of oil in a large pan then fry the garlic for a few seconds.
  • Add all of the spinach and allow to wilt and cook for a few minutes. Season with salt, pepper and a squeeze of lemon juice.
  • On a lightly floured surface, roll out the puff pastry.
  • Place the pastry on a parchment-line baking sheet. Season the salmon with salt and pepper then place on top of the pastry.
  • Add the spinach to the top of the salmon then cover with the pastry. Crimp the edges and gently score the top. Brush with beaten egg then place in the oven.
  • Bake for 25-30 minutes until the pastry is golden brown and crisp.
  • Remove from the oven, slice and serve.
  • While the salmon is baking, make the sauce. Melt the butter in a small saucepan then add the garlic and cook for a few seconds. Pour in the cream and add the dill. Bring to a simmer and cook for 5 minutes. Season with salt, pepper and lemon juice and remove from the heat. Serve the sauce with the baked salmon en croute.

2 tablespoons olive oil, divided
½ onion, chopped
1 cup chopped fresh mushrooms
2 teaspoons minced garlic, divided
salt and ground black pepper to taste
1 cup baby spinach
1 tablespoon all-purpose flour, or as needed
2 sheets frozen puff pastry (such as Pepperidge Farm®), thawed
1 (1 1/2-pound) boned, skinned salmon fillet
½ teaspoon smoked paprika, or more to taste
1 egg, beaten
½ cup mayonnaise
2 tablespoons fresh lemon juice
2 teaspoons Dijon mustard
½ teaspoon dried dill

Steps:

  • Heat 1 tablespoon oil in a large skillet over medium heat. Add onion; cook and stir until translucent, about 5 minutes. Add mushrooms and 1 teaspoon garlic; cook and stir until mushrooms are soft, about 5 minutes. Season with salt and black pepper. Transfer onion and mushroom mixture to a small bowl.
  • Heat remaining 1 tablespoon oil in the same skillet. Add remaining 1 teaspoon garlic; cook and stir until fragrant, about 30 seconds. Add spinach; cook and stir until wilted, 3 to 5 minutes. Season with salt and black pepper. Transfer to another bowl.
  • Preheat oven to 350 degrees F (175 degrees C). Line a glass baking dish with parchment paper.
  • Dust work surface with flour. Lay 1 puff pastry sheet out on work surface. Spread onion and mushroom mixture evenly across pastry, leaving a 1/2-inch border. Center salmon on top. Sprinkle paprika over salmon and top with wilted spinach. Cover with second puff pastry sheet. Fold over and crimp edges to seal. Brush top with beaten egg. Transfer to baking dish.
  • Bake in the preheated oven until pastry is golden, 40 to 45 minutes. Remove and let stand for 5 minutes. Slice into 4 portions.
  • Whisk mayonnaise, lemon juice, Dijon mustard, and dill together in a small bowl. Spoon sauce onto 4 plates and place a piece of salmon on each.

1/2 package puff pastry, defrosted
1 (5 ounce) package Baby Spinach
2 skinless salmon fillet
1/2 lb sauted mushroom, sliced
1 cup bearnaise sauce (Bearnaise Sauce)
1 beaten egg
salt and pepper

Steps:

  • Pre-heat oven to 375 degrees.
  • Line baking sheet with parchment paper.
  • Roll pastry on floured surface to 1/8 inch.
  • Place 1/2 the spinach on pastry lenght wise and top with salmon, mushrooms and 1/4 cup bernaise sauce then top with remaining baby spinach.
  • Roll up like a cinnamon roll, folding in the sides to seal completely.
  • Brush with egg.
  • Bake 25 minutes.
  • Serve with warm bernaise sauce.

50g flaky sea salt
25g demerara sugar
2 x 500g skinless, boneless salmon fillets
75g watercress, chopped
200g cream cheese
2 tbsp fresh dill sprigs, chopped
1 lemon, zested and juiced
pinch smoked salt (optional)
500g block all-butter puff pastry
flour, for dusting
2 eggs, yolks only, beaten
1 cucumber, peeled, halved, deseeded and sliced
1 red onion, finely sliced
100ml cider vinegar
1 tbsp sugar

Steps:

  • The day before you want to assemble the en croûte, mix the salt and sugar in a bowl. Scatter half of the mix over a tray, then lay one of the salmon fillets on top, skinned-side down, and scatter with more of the salt mix. Lay the second fillet on top, skinned-side up, and sprinkle over the rest of the salt mix. Cover, then place another tray on top. Weigh the tray down with a couple of tins and put in the fridge for up to 48 hrs, or for at least 12 hrs (the longer you leave it, the firmer the salmon will be).
  • When you're ready to assemble the en croûte, unwrap the salmon fillets, rinse them in cold water and dry with kitchen paper, then set aside. Put the watercress, cream cheese, dill, lemon zest and juice, smoked salt (if using) and a generous grinding of pepper into a bowl and mix well, then set aside.
  • Line a baking tray with parchment. Roll out half of the pastry on a lightly floured surface so it's 2.5cm larger in diameter than the salmon fillet, then drape it over the lined baking tray. Place one of the fillets on the pastry, skinned-side down, and spread with the cream cheese mix, then lay the second fillet on top, skinned-side up. Brush the edge of the pastry with a little of the beaten yolk. Roll out the rest of the pastry to fit, then drape it over the salmon and tuck it in at the sides. Trim the edges and crimp or press with a fork to seal. Brush with more beaten yolk, then put the en croûte in the fridge for 30 mins before using a spoon to create a scale-like effect along the top of the pastry. Chill for up to 24 hrs or for at least another 30 mins.
  • Heat oven to 220C/200C fan/gas 7. Bake for 20 mins, then glaze with the remaining yolk. Lower the heat to 180C/160C fan/gas 4 and bake for 20 mins more, then remove and leave to stand for 10 mins.
  • To make the pickle, put the cucumber and onion in a bowl. Tip the vinegar, sugar and a pinch of salt into a pan and bring to the boil. Once the sugar has dissolved, pour over the veg, toss well and set aside. Can be made up to two days ahead and kept in the fridge. Slice the en croûte into six portions and serve with the pickled veg on the side.

1 1/2 cups low sodium chicken broth
1 small onion, quartered
2 small carrots, cut into large pieces
2 celery ribs, cut into large pieces
8 1/2 ounces puff pastry, thawed
3 tablespoons unsalted butter, divided
3/4 cup diced carrot
1/2 cup diced onion
1 small shallot, minced
1/4 cup dry white wine
1 cup mushroom, sliced
2 teaspoons finely chopped tarragon (optional) or 2 teaspoons finely chopped chervil (optional)
1 1/2 lbs skinless salmon fillet, sliced crosswise 1/2-inch thick then cut into 1-inch pieces
1 cup milk
1/4 cup cornstarch
3/4 cup frozen peas
kosher salt
fresh ground white pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Bring chicken broth to a boil over high heat with onions, carrot chunks and celery, and simmer until reduced by half. Remove vegetables and discard.
  • On a lightly floured work surface with a floured rolling pin, roll out puff pastry to 1/8-inch thickness.
  • Using an inverted two-cup ramekin or individual casserole, trace four circles from puff pastry dough with a sharp knife, creating a one-inch overhang.
  • Place circles on a parchment-lined baking sheet, cover them with plastic wrap and chill.
  • In a heavy skillet, melt butter on medium-high and add carrots, onions, shallot and white wine. Cook, stirring, for two minutes, then reduce heat and continue cooking, stirring occasionally, about seven minutes, until onions are soft and translucent.
  • Add sliced mushrooms and continue cooking and stirring until mushrooms are tender, about two minutes.
  • Add herbs (if using) and salmon pieces, stir to combine and reserve.
  • Mix cornstarch and milk together until cornstarch is dissolved.
  • Whisk milk mixture into simmering broth and continue whisking until liquids are incorporated and mixture thickens into gravy.
  • Continue cooking, stirring constantly, an additional two minutes to cook starch.
  • Season with salt and pepper to taste. Stir one and a half cups gravy into salmon mixture. Add frozen peas.
  • Butter four individual two-cup ramekins.
  • Distribute salmon mixture evenly in the ramekins, but do not over-fill. Spoon in some additional gravy and put a pat of remaining butter in each ramekin.
  • Top each with a pastry circle, curling the edges of the overhang upward and pressing gently just inside the lip of the ramekin to adhere pastry.
  • Place ramekins on a baking sheet in preheated oven and bake until golden brown and bubbly, about 15 minutes.

2 lbs salmon fillets
4 ounces blue cheese (I like Stilton but use any creamy blue cheese)
2 ounces soft butter
1/2 lemon, juice of
1 head white chicory or 1 head fresh spinach
2 sheets puff pastry

Steps:

  • Cut the fillet into 2 equal portions (make sure it's skinned and deboned). Mix the cheese, butter and lemon juice together, then spread over one fillet. Place the other fillet on top so the cheese mix is sandwiched between them.
  • Roll out the pastry to about a quarter inch thickness, making sure it's big enough to wrap the fillets with some overlap. Separate all the chicory leaves and lay a single layer on the pastry where the salmon will go. Sprinkle with salt and pepper and lay the salmon on the chicory. Cover the fillets with the rest of the chicory leaves and the wrap with the pastry.
  • Glaze the pastry with egg wash and bake for 40 minutes in a preheated oven at 220 degrees Centigrade.
  • Serve with new potatoes, brocolli and Hollandaise sauce.

1 large egg
1 tablespoon water
a 17 1/4-ounce package frozen puff pastry sheets (thawed according to package instructions)

Steps:

  • Cut white and pale-green parts of leeks crosswise into 1/2-inch-thick slices. In a bowl of cold water wash leeks well and lift from water into a colander to drain. Pat leeks dry. In a large skillet cook leeks in butter over moderate heat, stirring, until tender, about 12 minutes, and cool. Cut salmon into roughly 3/4-inch pieces and in a bowl toss with leeks, dill, zest, salt, and pepper until combined well.
  • In a small bowl whisk together egg and water to make an egg wash. On a lightly floured surface with a lightly floured rolling pin roll 1 puff pastry sheet into a 10-inch square and the other into a 12-inch square. Transfer 10-inch pastry square to a floured large baking sheet and mound salmon filling in center, forming a round 8 inches in diameter. Brush edges of pastry evenly with some egg wash. Carefully drape remaining pastry square over salmon and gently press edges together to seal. With a sharp knife trim edges of pastry to form a 10-inch round. Crimp edges and cut 4 steam vents on top of crust. Brush crust evenly with some remaining egg wash. Chill pie, loosely covered, at least 1 hour and up to 3.
  • Preheat oven to 400°F.
  • Bake pie in middle of oven until pastry is golden brown, about 30 minutes.
  • Serve pie warm or at room temperature with sauce.
