1 cup shredded reduced-fat sharp Cheddar cheese (4 oz)
1 cup cut-up cooked chicken breast
1 medium onion, chopped (1/2 cup)
1/2 cup Bisquick Heart Smart® mix
1 cup fat-free (skim) milk
1/4 teaspoon salt
1/4 teaspoon pepper
2 eggs or 1/3 cup fat-free egg product

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. Layer broccoli, 1/2 cup of the cheese, the chicken and onion in pie plate.
  • In medium bowl, stir Bisquick mix, milk, salt, peper and eggs with wire whisk or fork until blended. Pour into pie plate.
  • Bake 20 to 25 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese. Bake 3 to 4 minutes longer or just until cheese is melted. Cool 5 minutes.

1 cup cut-up cooked chicken
1 medium onion, chopped (1/2 cup)
1/2 cup original Bisquick baking mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400ºF.
  • Grease 9-inch pie plate.
  • Sprinkle broccoli, 1 cup of the cheese, the chicken and onion in pie plate.

3 cups shredded Cheddar cheese (12 ounces)
2 cups cut-up cooked chicken
1 large onion, chopped (1 cup)
1 cup Original Bisquick™ mix
2 cups milk
1 teaspoon salt
1/2 teaspoon pepper
4 eggs

Steps:

  • Heat oven to 400°. Grease bottom and sides of rectangular baking dish, 13x9x2 inches, with shortening. Sprinkle broccoli, 2 cups of the cheese, the chicken and onion in baking dish.
  • Stir remaining ingredients until blended. Pour over chicken mixture.
  • Bake uncovered 40 to 45 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1 cup cheese. Bake 1 to 2 minutes or until cheese is melted. Let stand 5 minutes before cutting.

This is another recipe that makes its own crust. I'm sure I got these recipes off the box of a baking mix like Bisquick. I can't remember when I got them, but have used them several times when I have people over for lunch.

1 package(s) (10 ounce) frozen chopped broccoli
3 cup(s) shredded cheddar cheese (12ounces)
1 1/2 cup(s) cut up fully cooked chicken
2/3 cup(s) chopped onion
1 1/3 cup(s) milk
3 - eggs
3/4 cup(s) baking mix (bisquick)
3/4 teaspoon(s) salt
1/4 teaspoon(s) fresh ground pepper

Steps:

  • Preheat oven to 400 Degrees. Grease a 10" pie plate. Rinse broccoli under running cold water to thaw, drain thoroughly. Mix broccoli, 2 cups of the cheese, the chicken and onion in the pie plate. Beat milk, eggs, baking mix, salt and pepper in blender (15 seconds) until smooth. 1 minute in mixer or hand beater. Pour into pie plate over other ingredients. Bake until knife inserted in center comes out clean. Usually 25 to 35 minutes. Top with remaining cheese, and bake until cheese melts. (1 to 2 minutes) Cool 5 minutes before serving.

1 lb boneless skinless chicken breasts, cut into bite-size pieces

1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick™ mix
1/2 cup milk
2 eggs

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • In 10-inch nonstick skillet, heat oil over medium-high heat. Cook chicken in oil 5 to 7 minutes, stirring occasionally, until chicken is no longer pink in center. Add onion; cook 2 to 3 minutes. Add broccoli, salt and pepper, stirring occasionally, until mixture is heated through. Cool 5 minutes; stir in cheese.
  • In medium bowl, stir baking mixture ingredients with whisk or fork until blended. Spoon 1 scant tablespoon baking mixture into each muffin cup. Top with about 1/4 cup chicken-broccoli mixture. Spoon 1 tablespoon baking mixture onto chicken-broccoli mixture in each muffin cup.
  • Bake about 30 minutes or until toothpick inserted in center comes out clean and tops are golden brown. Cool 5 minutes. With thin knife, loosen sides of pies from pan; remove from pan and place top sides up on cooling rack. Cool 10 minutes longer, and serve.
