These salmon patties are delicious for lunch or dinner.

Number Of Ingredients 5

1 (14.75 ounce) can canned salmon
1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

1/2 lb linguine (cooked according to packaged directions)
1 (10 ounce) package frozen peas
1 cup whole milk
1 can cream of celery soup
1/2 cup grated parmesan cheese
1/8 teaspoon crushed dried tarragon
1 (15 ounce) can salmon
1 egg
salt and pepper
1 can French-fried onions

Steps:

  • Preheat oven to 375 degrees F.
  • Place hot pasta in a pan.
  • Add peas, milk, condensed soup, cheese and tarragon.
  • Place in a greased 12 x 8 baking dish.
  • Salmon patties: Mix salmon, egg S& P and 1/2 can onions.
  • Shape into four patties and place on pasta.
  • Cover and bake for 40 minutes.
  • Top with 1/2 can onions and bake uncovered for 3-4 minutes.

  • Boil a salted pot of water for your pasta and cook it al dente according to package directions. Prep your other ingredients while it cooks.
  • When the pasta is close to being ready, add the oil to a small pan over medium heat. Once the oil is hot, add the garlic and cook it for 30 seconds.
  • Stir in the salmon (break it up with your fork/flake it, and if you wish, add in the juices from the can for more flavor), the lemon juice + zest, and parsley. Let it heat through.
  • Once the pasta is done, add some of the pasta water (a couple tablespoons) to the sauce and then drain the pasta and toss with the sauce. Season with salt & pepper as needed. Grate some parmesan on top if you wish.
