SALMON PATTIES A LA JANE
This is my spin on salmon patties. Just about everyone here at JP makes them, and they are all done differently.

Steps:
- Drain salmon and pick off the skin and the round crunchy bones. Crumble with your hands.
- Put salmon, 1/2 cup bread crumbs, egg, onion, mayo, lemon juice, horseradish, and seasonings in a large bowl and mix well. The hot sauce is optional, but we like it.
- Form 4 patties with your hands.
- Put the 2/3 cup breadcrumbs on a shallow dish and roll patties in them. Cover and refrigerate for an hour.
- Heat oil in a heavy skillet, and fry salmon patties until browned, turn and brown on the other side.
- Make tartar sauce by mixing up all sauce ingredients, cover and chill until serving time.
SALMON PATTIES A LA JANE #2
I make salmon patties all the time out of canned salmon. This time I had some salmon that I grilled and there was just the 2 of us, so had some left over. You could add more or less of whatever you like, I seasoned the salmon in the first place, so didn't add tons of seasonings. You might want to add more mayo if you find the mix too dry. With this I usually make some home made tartar sauce.

Steps:
- Put all ingredients in a large bowl except the 3/4 cup bread crumbs.
- Make 5 to 6 salmon patties.
- Put the 3/4 cup bread crumbs in a shallow plate, and press the salmon patties on both sides in the crumbs.
- Scatter some of the crumbs on a platter and place the patties on top of them,
- Cover and chill for at least one hour.
- Either heat 1 inch of oil in a fry pan or use a deep fat fryer heated to 350°.
- Cook til both sides are golden brown.
- Serve with home made tartar sauce.

Steps:
- Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
- Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
- In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

- In a small bowl, combine the potatoes, salmon, onion, cracker crumbs, parsley, salt, pepper and egg yolk; mix well. Beat egg white until stiff peaks form; fold into salmon mixture. , Shape into six patties. Heat oil in a large skillet; fry the patties over medium heat for 3-4 minutes per side or until lightly browned. Garnish with lemon if desired.

- Drain salmon and shred it with a fork. In a medium bowl, mix it with the parsley, capers, Old Bay, onion powder, kosher salt, panko, Dijon mustard and mayonnaise.
- Form the dough into 8 patties that are about 1/2 inch thick. Refrigerate 15 minutes to firm up the texture (or up to 24 hours).
- When ready to cook, heat the olive oil in skillet over medium high heat. Add the patties and cook for 3 to 5 minutes until lightly browned, then gently flip them with a spatula and cook about 3 to 5 minutes more until lightly browned on the other side. Serve with the sauce.
