It's a true Kentucky favorite. This pie combines semi-sweet chocolate with walnuts for a truly decadent experience. Accompany with ice cream if desired.

1 cup brown sugar
⅓ cup light corn syrup
⅓ cup unsulfured molasses
3 tablespoons butter
3 tablespoons bourbon
½ teaspoon vanilla extract
½ teaspoon salt
4 eggs
3 tablespoons half-and-half cream
2 cups chopped walnuts
⅓ cup semisweet chocolate chips
1 (9 inch) unbaked pie crust

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large, heavy saucepan, combine brown sugar, corn syrup, molasses, butter, bourbon, vanilla and salt. Heat to boiling, stirring frequently. Boil 1 minute, stirring constantly. Remove pan from heat and let mixture cool.
  • In a small bowl, beat eggs with half-and-half until blended. Mix eggs into cooled syrup mixture until well incorporated. Stir in walnuts and chocolate chips. Pour the filling into pie crust.
  • Bake in preheated oven for 45 to 50 minutes, or until a toothpick inserted in center comes out clean. Serve warm or at room temperature.

Packaged ladyfingers
2 (8-ounce) packages cream cheese, softened
1 cup sugar
1 tablespoon cornstarch, optional
3 large eggs
3 tablespoons lemon juice, freshly squeezed
1/4 teaspoon salt
3 cups sour cream
4 to 5 cups strawberries, hulled
1/4 cup currant jelly
1 tablespoon Chambord or water

Steps:

  • Preheat oven to 350 degrees. Leave the ladyfingers attached and trim rounded bottoms so that you will have a ring of ladyfingers resembling a picket fence. Line the sides of the pan with the ladyfinger ring, rounded sides against the side of the pan. Add or trim if necessary to complete the ring. Line the bottom with more ladyfingers, rounded sides down, trimming as necessary to fill the spaces. Set aside. In a large mixing bowl, beat the cream cheese and sugar until very smooth (about 3 minutes), preferably with a whisk beater. Beat in the cornstarch. Beat in the eggs, beating until smooth and scraping down the sides once or twice. Add the lemon juice and salt and beat until incorporated. Beat in the sour cream just until blended. (This can also be done in a food processor). Pour the batter into the prepared pan. Set the pan in the larger pan and surround it with 1-inch of very hot water. Bake the cake in 350 degree oven for 45 minutes. After 25 minutes, cover loosely with foil to keep ladyfingers from over-browning. Turn off the oven without opening the door and let the cake cool for 1 hour. Remove it to a rack and cool to room temperature (about 1 hour). Cover with greased plastic wrap and refrigerate overnight. To unmold, wipe sides of pan several times with a towel run under hot water and wrung out. Arrange strawberries on top. If you have rinsed them, make sure they are thoroughly dry. In a small saucepan or microwave oven, heat the currant jelly until melted and bubbling. Strain it into a small cup and stir in the Chambord or water. Brush it onto berries.

1 to 2 tablespoons unrefined coconut oil
1/2 pineapple, peeled, cut into long wedges and cored
1 cup tangerine or orange segments, drained of juice (about 3 tangerines)
1 cup sweetened flaked coconut, such as Baker's Angel Flake, toasted lightly (see Cook's Note)
1 cup mini marshmallows, stale (see Cook's Note)
1 cup sour cream
1/4 teaspoon orange extract
Freshly torn mint leaves, for garnish

Steps:

  • Heat 1 tablespoon coconut oil in a cast-iron skillet over medium heat. Add the pineapple and sear until very dark on one side, 5 to 10 minutes; it should look almost burned. Flip and add the remaining coconut oil if the pan looks dry. Cook on the reverse side until darkly seared, 5 to 10 minutes. Remove the pineapple to a cutting board and let cool before cutting into medium dice.
  • Add the pineapple, tangerines, coconut, marshmallows, sour cream and orange extract to a nonreactive bowl. Fold to combine. Cover with plastic wrap and refrigerate for 1 to 3 hours, until completely cold!!! Serve garnished with mint.

2 1/2 ounces bourbon (recommended: Woodford Reserve)
1/2 ounces Rose Syrup, recipe follows
Dash Angostura Bitters
Garnish with organic Primrose
1 cup sugar
1 quart water
1 cup Primrose Petals
1 cup fresh raspberries
4 teaspoons rose water

Steps:

  • In a cocktail shaker mix together bourbon, rose syrup, and bitters, shake well and pour into chilled martini glass. Garnish with Primrose.
  • Make simple syrup by heating 1 cup sugar and 1 quart water until dissolved. While still warm add rose petals and infuse covered for about 30 minutes. Muddle raspberries and add syrup, stirring well. Add rose water and strain to remove raspberry seeds.
