Ingredients

5 pounds potatoes, peeled and cubed
1 cup sour cream
1 package (8 ounces) cream cheese, softened
3 tablespoons butter, divided
1 teaspoon salt
1 teaspoon onion salt
1/4 teaspoon pepper

Steps:

Place potatoes in a Dutch oven; cover with water. Cover and bring to a boil. Cook until very tender, 20-25 minutes; drain well., In a large bowl, mash potatoes. Add the sour cream, cream cheese, 2 tablespoons butter, salt, onion salt and pepper; beat until fluffy. , Transfer to a greased 2-qt. baking dish. Dot with the remaining butter. Bake, uncovered, at 350° until heated through, 20-25 minutes.

These potatoes are great for when you are having company over as they are a real comfort food. They can also be prepared in advance.

Ingredients

5 lbs potatoes, peeled and cubed
1 cup sour cream
6 ounces cream cheese, softened
4 tablespoons butter, divided
1 teaspoon onion salt
1/2 teaspoon pepper
1 cup frenches fried onions

Steps:

Place potatoes in a Dutch oven and cover with water.
Cover and bring to a boil.
Reduce heat and simmer 20-25 minutes until potatoes are very tender.
Drain well.
In a large mixing bowl, mash potatoes.
Add sour cream, cream cheese, 3 tablespoons butter, onion salt and pepper; beat until nice and fluffy.
Transfer to a greased 2-qt. baking dish.
Dot with remaining butter and bake uncovered in a 350 degree oven for 15 minutes.
Remove from oven; sprinkle with the Frenches fried onion then return to oven.
Bake an additional 5 minutes.

Place potatoes in a colander and rinse under cold water about 20 seconds. Transfer to a pot (6 quart or larger).
Season with water with salt (I add 1 Tbsp) and let boil until potatoes are tender all the way through when pierced with a fork, about 10 - 15 minutes.
Near the end of potatoes cooking heat half and half and butter together in a microwave safe dish (I just use the glass liquid measuring cup it was measured in), or in a small saucepan on the stovetop, until very warm.
