A simple but holiday worthy dish that can be made quickly and easily. Perfect for spring time!

2 bunches of fresh asparagus (1 1/2 - 2 lbs.)
4 tablespoons extra virgin olive oil
1 tablespoon mayonnaise
2 teaspoons Dijon mustard
pinch of salt and freshly ground pepper
4 ounces Gruyere cheese grated
1/2 cup Panko (coarse breadcrumbs)

Steps:

  • Preheat oven to 450 degrees. Line a baking sheet with parchment paper for easy cleanup.
  • Wash asparagus, pat dry, and trim woody ends, usually about 2 inches.
  • In a small bowl, whisk together olive oil, mayonnaise, Dijon mustard, salt and pepper.
  • Lay asparagus out on the parchment paper, and pour the dressing over the top, tossing the asparagus around to coat and then arranging into an even layer.
  • Roast the asparagus in the oven for about 5 minutes (this will depend on the thickness of your asparagus) and then top with Gruyere and breadcrumbs. Return to oven for 4-5 more minutes, watching closely for the breadcrumbs to turn golden brown.
  • Remove from oven and serve immediately.

1 lb asparagus
2 tablespoons olive oil
salt and pepper
4 cloves garlic ((minced))
1 cup Gruyere cheese ((or Parmesan), shredded)
5 slices bacon ((cooked and chopped))

Steps:

  • Preheat oven to 400 F.
  • Trim asparagus ends. Place asparagus in a medium-size casserole dish, drizzle with 2 tablespoons of olive oil, season with salt and pepper. Top with minced garlic.
  • Bake, uncovered, in the preheated oven at 400 F for 10 minutes. Remove from the oven.
  • Sprinkle half of shredded Gruyere cheese (or Parmesan) all over asparagus. Then, add chopped cooked bacon. Top with the remaining half of shredded cheese.
  • Bake for 10 more minutes, uncovered at 400 F. Serve immediately while the cheese is nice and melty!

1 sheet frozen puff pastry
5 1/2 ounces (2 cups) Gruyere cheese, shredded
1 1/2 pounds medium or thick asparagus
1 tablespoon olive oil
Salt and pepper

Steps:

  • Preheat oven to 400 degrees. On a floured surface, roll the puff pastry into a 16-by-10-inch rectangle. Trim uneven edges. Place pastry on a baking sheet. With a sharp knife, lightly score pastry dough 1 inch in from the edges to mark a rectangle. Using a fork, pierce dough inside the markings at 1/2-inch intervals. Bake until golden, about 15 minutes.
  • Remove pastry shell from oven, and sprinkle with Gruyere. Trim the bottoms of the asparagus spears to fit crosswise inside the tart shell; arrange in a single layer over Gruyere, alternating ends and tips. Brush with oil, and season with salt and pepper. Bake until spears are tender, 20 to 25 minutes.

600 g asparagus
50 g butter
125 g shallots, chopped
125 g celery, chopped
125 g leeks, chopped
1 1/4 liters chicken stock
50 g plain flour
250 g gruyere, grated
200 ml double cream
1 tablespoon fresh tarragon

Steps:

  • Trim the bottoms of the asparagus stalks, then cut each stalk in two. Slice the asparagus stalks into 1cm sections, and reserve the tip sections in a bowl.
  • Melt the butter in a large pan over gentle heat. Add the shallots, celery and leeks, cover and sweat until soft. Meanwhile, heat up the stock in a separate pan.
  • Stir the flour into the vegetables, then add the stock and asparagus stalks and simmer for 10 minutes. Add the gruyere and blend in a food processor. Return the soup to the pan, add the asparagus tips and simmer for 5 minutes. Pour in the cream, simmer briefly to bring the soup back up to temperature, and serve sprinkled with tarragon.
