SIMPLE ROASTED RABBIT



Simple Roasted Rabbit image

A simple roasted rabbit recipe flavored with white wine, garlic, and herbs. Tender, white meat baked in an incredibly delicious little sauce.

1 rabbit (about 1.5 kg/ 3.3 lbs (Note 1))
30 ml/ 1 fl. oz/ 2 tablespoons olive oil
75 ml/ 2.5 fl. oz/ 1/3 cup white wine
8 medium garlic cloves (divided)
4-5 rosemary sprigs (depending on size, divided)
125 ml/ 4.2 fl. oz/ ½ cup water
fine sea salt and ground black pepper

Steps:

  • Defrost and cut the rabbit.
  • You will need six parts for roasting: 2 hind legs, 2 front legs, and the backstrap (loin) cut into 2 pieces (Note 2).
  • Place the rabbit on a large cutting board lying on its back and open it up. Cut the belly flaps. Go under the armpit and cut the front legs with the whole shoulder.
  • Grab the back legs with your hands and break that part open. Find where the tailbone is and cut along there.
  • Cut the backbone and the ribs. Find the last rib with your fingers and cut right along that last rib. Repeat on the other side. The whole cut will be like a V. Grab the piece with your hands and break it apart so that you can see the joint between the bones and cut right there.
  • Divide the backstrap or the loin in the middle. Find where the vertebra is and cut right there. Press with the knife or use a cleaver.
  • Place the pieces in a roasting tin.
  • In a small bowl mix olive oil, white wine, 4 grated garlic cloves, 2-3 sprigs chopped rosemary, salt, and pepper. Pour over the meat and turn the meat a few times in the marinade to coat it all over. Cover with plastic wrap/cling film and marinate for at least one hour, preferably 3-4. Remove from the fridge about 30 minutes before cooking.
  • Preheat the oven to 200 degrees Celsius/ 400 degrees Fahrenheit.
  • Add 3-4 whole garlic cloves and the remaining rosemary sprigs to the roasting pan. Pour in the water.
  • Bake for about 30 to 40 minutes, flipping the meat pieces about every 10 minutes. If you'd like the meat to get more color, turn on the grill during the last 5 minutes of the cooking time.
  • The front legs and back strap pieces are smaller than the hind legs. I usually remove them after 30 minutes already, but I always check to see if the internal temperature is right, it should be 71 degrees Celsius/ 160 degrees Fahrenheit. Checking with a thermometer is the best way to ensure that the rabbit is safe to eat but not overcooked. If you overcook it, it will become dry.

1 1/2 pound rabbit, cut up
ground red pepper
ground black pepper
1 c flour
4 oz fresh mushrooms,sliced
1 small onion, chopped
1/4 c green bell pepper , chopped
2 clove garlic, minced
1 c chicken broth
1 tsp worcestershire sauce
1/2 tsp dry mustard

Steps:

  • 1. IN A SKILLET COOK BACON UNTIL CRISP,DRAIN ON A PAPER TOWEL,RESERVING THE DRIPPINGS IN THE THE SKILLET.CRUMBLE THE COOKED BACON AND SET ASIDE.
  • 2. SEASON RABBIT WITH RED AND BLACK PEPPER.COAT WITH FLOUR.NOW BROWN RABBIT IN BACON DRIPPINGS IN SKILLET OVER MED. HEAT, REMOVE RABBIT FROM SKILLET.
  • 3. RESERVE 4 TABLESPOONS DRIPPINGS IN SKILLET,ADD MUSHROOMS,ONIONS,GREEN PEPPER,AND GARLIC TO RESERVED DRIPPINGS.COOK ABOUT 5 MIN OR UNTIL TENDER,STIRRING OCCASIONALLY.
  • 4. STIR CHICKEN BROTH,WORCESTERSHIRE SAUCE,AND DRY MUSTARD INTO VEGETABLES IN SKILLET. NOW ADD RABBIT TO THE SKILLET.BRING MIXTURE TO A BOIL. COVER AND SIMMER ABOUT 55 MIN OR UNTIL RABIT IS TENDER.
  • 5. PUT RABBIT IN A SERVING PLATTER.SPOON FAT OFF MIXTURE IN SKILLET.SPOON MIXTURE OVER RABBIT.SPRINKLE WITH CRUMBLED BACON.

Roast Rabbit With Green Garlic Sauce image

This recipe came to The Times in a 2007 article by Marian Burros about the then newly burgeoning locavore scene. This dish, adapted from Melissa Kelly, the chef at Primo Restaurant in Rockland, Me., makes the most of spring onions and green garlic, two verdant savories that are abundant before summer.

4 slices bacon
8 spring onions including 2 inches of green tops
1 3- to 3 1/2-pound rabbit, quartered
Salt and ground dried hot pepper
2 cups white wine
2 cloves garlic, peeled and chopped
2 tablespoons butter
2 spring onions, peeled and sliced
1 bunch green garlic, bulbs and green tops separated and sliced
1 medium Yukon Gold potato, peeled and thinly sliced
1 clove garlic, peeled and chopped
2 cups vegetable stock
Sea salt and ground dried hot pepper.

Steps:

  • For rabbit: Heat oven to 375 degrees. Brown bacon in large pan over medium heat until it releases all of its fat. Remove bacon and reserve for other use. Add onions, brown well, and transfer to a plate. Season rabbit with salt and pepper and brown well on all sides. Add wine, garlic, and water to barely cover. Cover and bake until rabbit is tender, about 1 hour.
  • For sauce: Melt butter in saucepan over medium-low heat and add onions and green garlic bulbs. Sauté until tender. Add potato, garlic and stock. Simmer until potato is tender. Add green garlic tops. Let cool. Purée in blender until smooth. Season with salt and pepper to taste, and set aside.
  • Transfer rabbit and onions to a platter. Return pan to high heat and reduce broth to about 1 cup. Add butter and green garlic sauce, and adjust salt and pepper to taste. Return rabbit to sauce, turning to coat and allowing to reheat. To serve, place a portion of rabbit on each of four plates. Top with a spoonful or two of sauce.

Saddle of Rabbit Roasted in Tobacco Leaf with a Subtle Garlic Sauce image

2 tablespoons olive oil
8 rabbit shoulders, bone-in
1 carrot, diced
1 white onion, diced
1 rib celery, diced
6 cloves garlic, cut in 1/2
1 juniper berry
1 sprig thyme
1 piece rosemary
1/2 stick cinnamon
Water
4 tablespoons unsalted butter
6 shallots, sliced thinly
1/2 cup white wine
1/2 bunch flat-leaf parsley, chopped
1/2 bunch tarragon leaves, chopped
3/4 pound chanterelle mushrooms, cut in 1/2
4 rabbit loins, butterflied (cut down the center but not split totally)
4 leaves blond tobacco
Salt and ground black pepper

Steps:

  • Heat a stockpot with 2 tablespoons of olive oil over medium-high heat, sear the rabbit shoulders until they are a dark golden brown. Add the carrot, onion, celery, and garlic. Sweat vegetables for 2 to 3 minutes. Add the juniper berry, thyme, rosemary, and cinnamon stick. Add water to cover the ingredients and simmer for 30 minutes.
  • Heat a saute pan with 2 tablespoons of butter over medium heat, add the shallots and sweat until they are translucent. Add the wine and reduce by 1/2. Stir in the parsley and tarragon.
  • Remove the rabbit shoulders from the stockpot. Remove the meat from the bone and chop fine. Strain the liquid in the stockpot through a fine sieve. Return sauce to stockpot. Simmer for 10 minutes and season with salt and black pepper.
  • Heat a saute pan with 2 tablespoons of butter over medium heat, add the chanterelle mushrooms and saute until golden brown. Reserve warm on back of stovetop.
  • Preheat oven to 350 degrees F.
  • In a mixing bowl, combine the chopped meat and shallot mixture to form the filling. Season the rabbit loins with salt and black pepper. Fill the center of the loin with the filling. Roll the loin into a log shape. Wrap a tobacco leaf around each rabbit. Tie the rabbit with butcher's twine to keep its shape.
  • Place rabbit onto a baking rack with a drip pan underneath. Roast in oven for 10 to 12 minutes or until internal temperature is 160 degrees F. Remove rabbit from oven. Let rest for 5 minutes. Remove tobacco leaves and slice. Serve with sauteed chanterelle mushrooms.

1 whole farmed rabbit (about 1.2kg)
2 tbsp thyme leaves
4-6 tbsp olive oil
12 small onions or shallots, peeled
16 garlic cloves , peeled

Steps:

  • Ask your butcher to joint the rabbit, cutting the legs into two pieces, the saddle into three and the shoulders and front into two. Heat oven to 220C/200C fan/gas 7.
  • Put the rabbit in a large roasting tin, season and add 1 tbsp of the thyme leaves. Add the oil and toss until the rabbit is well coated. Roast for 20 mins.
  • Add the onions or shallots and the garlic, then stir well and roast for another 15 mins, stirring again halfway through. Sprinkle over the remaining thyme before serving.

1 cup white wine
2 cups heavy cream

Steps:

  • To roast garlic Preheat oven to 350°F.
  • Rub individual garlic cloves with olive oil, place in a small oven proof pan, and season with salt and pepper.
  • Cover the pan with aluminum foil and roast for 45 minutes, or until garlic is soft and lightly browned.
  • Peel garlic.
  • Method for Sauce-----------.
  • In a medium saucepan over high heat, combine the garlic, onion, and white wine, bring to a boil, and reduce by three-fourths.
  • Reduce the heat to medium, add cream, and let simmer for 15 to 20 minutes.
  • Season to taste with salt and pepper.
  • Transfer to food processor and puree.
  • May be prepared up to two days ahead, covered, and refrigerated.
  • Bring to room temperature before serving.

This recipe is from my cookbook from The Stinking Rose restaurant in San Francisco. As the name implies, garlic is their featured ingredient. DH and I made this recipe a few nights ago. We really enjoyed it. I am guessing on the prep time because my rabbit already came in pieces and I did not have to cut it myself.

1/2 cup all-purpose flour
1 teaspoon salt
1 teaspoon fresh ground black pepper
2 rabbits, cleaned, cut into pieces
5 tablespoons extra virgin olive oil
1/2 cup garlic clove
1/2 cup pitted green olives (such as picholine or Spanish)
3 sprigs thyme leaves, chopped

Steps:

  • Preheat oven to 350 degrees F.
  • In a shallow bowl, stir flour, salt, and pepper together. Dredge rabbit pieces in flour mixture, completely coating meat on all sides.
  • In a large cast-iron skillet, heat 3 Tb olive oil over medium heat. Put rabbit in the skillet and cook for 4-5 minutes on each side, until nicely browned.
  • In a small bowl, toss the garlic with 1 Tb olive oil to coat completely.
  • Transfer rabbit to a baking dish and sprinkle with garlic, olives, and thyme. Bake, uncovered, for about an hour, or until the garlic cloves are golden brown and the rabbit is browned on the outside and opaque throughout.
  • Drizzle the remaining 1 Tb olive oil in an abstract pattern on a serving platter and arrange rabbit on top. Scoop the garlic cloves and olives from the baking dish and sprinkle over the rabbit. Serve immediately.
