FRESH GINGER GINGERBREAD
Gingerbread fills your house with the wonderful aroma of spices. It is easy to double this recipe for a festival or bake sale.

Steps:
- Heat oven to 350°F. Grease and flour 2 mini (5 3/4x3-inch) loaf pans.
- Combine flour, cinnamon, allspice, cloves, nutmeg, baking soda and salt in bowl.
- Combine molasses, milk, 1/3 cup sugar, butter, ginger and egg in bowl; beat until well mixed. Add flour mixture; beat at low speed, scraping bowl occasionally, until well mixed.
- Pour batter into prepared pans. Bake 28-33 minutes or until toothpick inserted into center comes out clean. Cool 10 minutes; remove from pans. Cool completely. ,
- Sprinkle with powdered sugar before slicing, if desired.

- Put oven rack in middle position and preheat oven to 350°F. Butter a 9-inch square baking pan.
- Whisk together flour, baking soda, spices, and salt in a bowl.
- Beat together butter, molasses, brown sugar, eggs, and ginger in a large bowl with an electric mixer at medium speed until combined. Reduce speed to low and mix in flour mixture until smooth, then add hot water and mix until combined (batter may appear curdled).
- Pour batter into pan and bake until a wooden pick or skewer inserted in center of cake comes out clean, 35 to 40 minutes. Cool to warm in pan on a rack.
ULTIMATE EASY GINGERBREAD

- Heat the butter, syrup and sugar together in a small pan until melted, stirring occasionally. Set aside to cool slightly.
- Mix together the bicarb, ginger, cinnamon and flour in a large bowl. Pour in the buttery syrup mixture and stir to combine, then use your hands to bring together to form a dough. The dough will be soft at this point, but it'll firm up in the fridge.
- Put the dough on a sheet of baking parchment, shape into a rectangle, and lay another sheet of parchment on top of it. Roll the dough out to a thickness of ½cm. Transfer to a baking sheet to keep it flat, leaving the parchment in place, then chill in the fridge for 1 hr.
- Heat the oven to 190C/170C fan/gas 5 and line a large baking sheet with more baking parchment. Remove the dough from the fridge and cut out shapes using a cookie cutter. We used 9cm stars, but you can choose any shape. We also made some with smaller stars cut out of the centre to thread ribbon through and hang from a Christmas tree.
- Place the shapes, spread apart, on the lined baking sheet, and bake for 10-12 mins. (Depending on the size of the cutters you use, they might need a few minutes more or less cooking in the oven). Leave to cool completely on the baking sheet.
- Meanwhile, mix the icing sugar with 1-2 tbsp water - you want to create a consistency that's thick and pipeable, and not too thin or it will run. Decorate the cooled biscuits with the icing using a piping bag with a thin nozzle. Find out how to make a piping bag.

- Preheat oven to 350°F. Whisk together brown sugar, molasses, boiling water, and cubed butter in a medium bowl until butter melts. Whisk in baking soda and salt. Let stand until lukewarm, about 25 minutes. Whisk in egg.
- Whisk together flour, ginger, cinnamon, nutmeg, allspice, cloves, and black pepper in a small bowl; add to brown sugar mixture, and whisk until smooth. Pour into a generously greased (with butter or cooking spray) and floured 9-inch square pan.
- Bake in preheated oven until a toothpick inserted in center comes out clean, 20 to 25 minutes. Cool in pan 10 minutes. Transfer gingerbread to a wire rack, and cool completely, about 1 hour. (For the best texture, wrap tightly in plastic wrap or place in an airtight container, and let stand at room temperature overnight before serving.) Store in an airtight container up to 3 days.
