WHITE BEAN RAGOUT

White Bean Ragout image

This quick ragout of white beans and sweet tomatoes might just be my favorite recipe of the summer.

Provided by Jennifer Segal

Categories     Vegetables & Sides

Time 30m

Yield 4-6

Number Of Ingredients 11

½ pound dried cannellini beans, soaked and cooked (or two 15-ounce cans, drained and well-rinsed, preferably Goya)
¼ cup extra virgin olive oil
1½ cups chopped yellow onions, from about one large or two small onions
3 large garlic cloves, minced
1 pint cherry or grape tomatoes, halved
1½ cups low sodium chicken or vegetable broth
1½ teaspoons tomato paste
1½ teaspoons balsamic vinegar
Salt and pepper
2 tablespoons fresh chopped basil
2 tablespoons fresh chopped mint

Steps:

  • Heat the olive oil in a large pan over medium heat. Cook the onions, stirring frequently, until soft and translucent, about 8 minutes. Do not brown. Add the garlic and cook one minute more.
  • Add the tomatoes, beans, chicken broth, tomato paste and balsamic vinegar. Season with salt and pepper to taste. (I use about 1 teaspoon salt and ¼ teaspoon pepper, but it depends on what type of beans you use; canned will have some salt already.) Bring to a simmer and cook until tomatoes are slightly softened but still hold their shape, 3-5 minutes. Taste for seasoning. Note that the sauce may have a strong vinegar flavor at first, but it will mellow out. Right before serving, stir in the fresh basil and mint. Transfer to serving dish, garnish with more fresh herbs if desired, and serve hot.
  • Freezer-Friendly Instructions: This dish can be frozen for up to 3 months. Reheat in the microwave or on the stovetop.

QUICK WHITE BEAN RAGÚ

QUICK WHITE BEAN RAGÚ image

This is one of the fastest and easiest meals you will ever make and is a perfect weeknight dinner that is done in 10 minutes! This vegetarian white bean ragù is so versatile, it can also be made vegan, dairy-free, and gluten-free. This recipe can easily be doubled to make a super fast dinner for four.

Provided by Pimp My Recipe

Categories     Main Dishes, Vegetarian, Vegan, Dairy Free, Gluten Free, Quick and Easy, Healthy, Spicy, Make it a Meal

Time 10m

Number Of Ingredients 11

12 ounces Arrabbiata Pasta Sauce (homemade, or store bought - see Note #1)
½ teaspoon dried basil
1 can cannellini beans (14.1 oz. can, preferably S&W brand - See Note #2)
2 cups fresh baby spinach (packed)
⅛ teaspoon kosher salt
pinch of ground black pepper
¼ cup red wine
¼ cup goat cheese, crumbled or manchego cheese, cut into tiny cubes
⅓ cup Parmigiano Reggiano cheese, freshly grated or shredded
1 tablespoon fresh basil leaves, cut into chiffonade
Garnish with extra virgin olive oil

Steps:

  • To a 2.5 quart nonstick saucepan (see Note #3), add arrabbiata pasta sauce and dried basil. If using red wine, add to sauce now, and stir to combine. Bring to a simmer over medium heat, stirring occasionally.
  • While sauce is heating, drain and rinse 1 can cannellini beans (see Note #2).
  • When sauce has reached a simmer, add cannellini beans to the sauce, and stir to combine. Lower heat, cover, and simmer for about 5 minutes, stirring occasionally to prevent sticking.
  • Add spinach, salt, and pepper, to the top of the sauce (do not stir) and let the bottom layer of spinach wilt for about 1 minute. Using tongs, begin incorporating spinach into the sauce to wilt the leaves with the heat of the sauce. Repeat this process until all leaves are wilted and evenly distributed throughout the sauce. Once spinach is wilted, but still vibrant green, remove from heat and serve immediately by ladling into shallow bowls (see Note #4).

QUICK WHITE BEAN AND CELERY RAGOUT

Quick White Bean and Celery Ragout image

Inspired by a Chez Panisse recipe that uses fresh shell beans, this simple ragout is less precious but no less delicious. Sauté celery, zucchini and scallions with a glug of olive oil, then add canned beans and cook until warmed. If you prefer a thicker sauce, add the beans at the beginning of cooking so they break down as they're stirred. Serve with grilled bread, pearl couscous or farro. Soft herbs like basil or parsley, tender greens like arugula or mâche, or pesto or salsa verde would all make for a lovely garnish.

Time 15m

Yield 4 to 6 servings

Number Of Ingredients 10

2/3 cup vegetable stock, plus more as needed
1/3 cup extra-virgin olive oil
4 stalks celery, thinly sliced on an angle, leaves reserved
2 medium zucchini (about 7 ounces each), trimmed, quartered lengthwise then cut into 1/2-inch pieces
2 scallions, thinly sliced on an angle
Kosher salt and black pepper
2 (15-ounce) cans cannellini beans, rinsed and drained
Crème fraîche, mascarpone or sour cream, for serving
Pesto, for serving
Cooked pearl couscous or grilled bread, for serving

Steps:

  • Combine the stock, oil, celery, zucchini and scallions in a large, deep skillet; season generously with salt and pepper. Cook over medium-high, stirring occasionally, until crisp-tender, adding the beans halfway through, about 10 minutes total. If you'd like to make it brothier, add 1/3 cup vegetable stock and warm for 1 minute. Season with salt and pepper.
  • Divide among shallow bowls. Top with a dollop of crème fraîche, drizzle with pesto and top with celery leaves. Serve with couscous or grilled bread.

BEAN RAGU WITH LINGUINI

Bean Ragu with Linguini image

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 1h10m

Yield 4 servings

Number Of Ingredients 16

2 tablespoons olive oil, plus more to drizzle
2 to 3 slices bacon, finely chopped
2 carrots, peeled and chopped
2 to 3 small ribs celery, chopped
2 cloves garlic, chopped
1 bay leaf
1 onion, chopped
2 to 3 cups cooked white or pink beans
2 large Peeled Tomatoes, recipe below, chopped or one 14- to 15-ounce can plum tomatoes, chopped
A few sprigs fresh parsley with stems, chopped
One 12-ounce can beef consomme or beef broth
Salt and pepper
Salt and pepper
1 pound linguini
Grated Pecorino, for passing
4 large ripe tomatoes

Steps:

  • Heat the oil in saucepot over medium-high heat, then add the bacon and render 2 minutes. Add the carrots, celery, garlic, bay leaf and onions. Partially cover and cook to soften the vegetables, 10 minutes. Add the beans, tomatoes, parsley and consomme, and simmer over low heat to combine the flavors and thicken a bit, 15 to 20 minutes. Season the sauce with salt and pepper.
  • Cool and store for a make-ahead meal. Reheat over medium-low heat, adding stock or water to thin the sauce out if too thick.
  • To serve, heat a pot of water to a boil. Salt the water and cook the pasta to al dente. Reserve a cup of the starchy cooking water just before draining pasta and add to the sauce. Drain the pasta and combine with bean ragu. Serve in shallow bowls with a drizzle of olive oil and top with grated cheese.
  • Bring a few inches of water to a boil. Cut an "X" into the bottom of the tomatoes with a sharp pairing knife. Once the water comes to a boil, simmer the tomatoes for 1 minute. Place the tomatoes in an ice bath to cool and peel the skins away using the pairing knife.

Time 50m

Yield 8 serving(s)

Number Of Ingredients 13

1 lb great northern bean, cooked very soft (or one 28 ounce can of large white beans)
2 tablespoons olive oil
2 tablespoons garlic, chopped (about 5 cloves)
2 medium onions, diced
2 teaspoons fresh rosemary, chopped (or 1/4 tsp. dried)
1 dried new mexico chili (or 1/4 tsp. crushed red pepper flakes)
1 head escarole (about 6 cups leaves, or an equal amount of spinach, torn into large pieces)
6 ripe plum tomatoes, seeded and diced (about 1 1/2 cups)
2 ounces unsalted butter
1/4 cup flat-leaf Italian parsley, rough chopped
1/2 cup parmigiano-reggiano cheese, grated (optional)
kosher salt & freshly ground black pepper
3 drops extra virgin olive oil (or a nice flavored oil)

Steps:

  • Strain the cooking liquid from the beans and reserve(you should have about 2 cups of liquid-add water if necessary to reach this amount). Heat the olive oil in a large skillet over medium heat. Add the garlic and cook until it turns white and fragrant, only aobut 30 seconds. Stir in the onions, rosemary, and chili. Cook gently until the onions are very soft, about 10 minutes, stirring occasionally. Add the beans and enough bean cooking liquid to make the mixture brothy; simmer 5 minutes.
  • Stir in the escarole or spinach; simmer until it is all wilted. Add the tomatoes, butter, parsley, and cheese if using. Remove from the heat, and stir until the butter is melted in, adding additional bean liquid as necessary to keep it brothy. Season well with salt and pepper.
  • Serve warm, drizzled with extra virgin olive oil.
  • Note:.
  • This stew can be prepared just up to adding wscarole. Refrigerate for up to 3 days. The flavors will marry and the dish will be even better.

TUSCAN WHITE BEANS IN TOMATO RAGU

Tuscan White Beans in Tomato Ragu image

Make and share this Tuscan White Beans in Tomato Ragu recipe from Food.com.

Provided by DrGaellon

Categories     Stew

Time 1h45m

Yield 8 serving(s)

Number Of Ingredients 13

2 pints grape tomatoes
2 tablespoons extra virgin olive oil
2 tablespoons unsalted butter, divided
1 small onion, finely chopped
1 celery rib, thinly sliced
3 garlic cloves, minced
1 teaspoon salt, divided
1/4 teaspoon ground black pepper
3 fresh thyme sprigs
1 teaspoon sugar
2 cups chicken broth
3 (15 ounce) cans cannellini beans or 3 (15 ounce) cans great northern beans, drained and rinsed
1/2 cup grated parmesan cheese

Steps:

  • Preheat oven to 450°F and place a rack in the middle.
  • Cut 1 cup of tomatoes in half lengthwise and set aside. Pulse remaining tomatoes in a food processor or blender until almost smooth.
  • In a large, heavy skillet, place olive oil and 1 tbsp butter; heat over medium heat until butter is foamy but not browned. Add onion, celery, garlic, 1/4 tsp salt and 1/4 tsp black pepper. Saute until softened and onions are translucent, 3-5 minutes. Add tomato puree, thyme, sugar, remaining 3/4 tsp salt and chicken broth. Bring to a boil, reduce to a simmer and cook until slightly thickened, about 10 minutes. Whisk in remaining 1 tbsp butter, then stir in beans.
  • Transfer to a 3 quart casserole. Sprinkle top evenly with Parmigiano cheese, then scatter halved tomatoes over the top. Cover tightly with foil and bake in preheated oven 25 minutes, until beans are saucy but not soupy. Let stand at room temperature, still covered, 10 minutes, for beans to absorb more liquid.
