1 large egg white
1 tablespoon water
1 package (10 ounces) deluxe mixed nuts
1/2 cup sugar
1 teaspoon pumpkin pie spice
3/4 teaspoon grated orange zest
3/4 teaspoon ground ancho chile pepper
1/2 cup bittersweet chocolate baking chips

Steps:

  • Preheat oven to 275°. In a large bowl, beat egg white and water until frothy. Add nuts; stir gently to coat. Combine the sugar, pie spice, orange zest and chili pepper; add to nut mixture and gently stir to coat., Spread into an ungreased 15x10x1-in. baking pan. Bake 35-40 minutes or until lightly browned, stirring once. Sprinkle with chips. Cool completely. Break into pieces. Store in an airtight container.

4 cups unsalted mixed nuts (such as almonds, walnuts, cashews, peanuts)
4 tablespoons (1/2 stick) unsalted butter
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground cinnamon
3 tablespoons brown sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • Spread the nuts out on a large baking sheet. Bake until the nuts are lightly toasted, about 8 to 10 minutes.
  • In the meantime, melt the butter in a small saucepan over low heat. Add the remaining ingredients and stir to combine. Transfer the nuts to a serving bowl. Pour in the butter and toss to coat evenly. Serve warm or room temperature.

4 cups unsalted mixed nuts, such as walnuts, pecans, hazelnuts, and almonds
4 tablespoons unsalted butter
6 tablespoons brown sugar
1 teaspoon salt
Mix spices and reserve.

Steps:

  • Heat the nuts in a dry skillet and cook, stirring frequently, until they begin to toast, about 4 minutes. Add the butter and cook, stirring, until the nuts begin to darken, about 1 minute. Add the spices, the sugar, 1 tablespoon water, and the salt and cook, stirring, until the sauce thickens and the nuts are glazed, about 5 minutes.
  • Remove the nuts from the heat and transfer to a baking sheet lined with aluminum foil, separating them with a fork. Let the nuts stand until cooled and the sugar has hardened, about 10 minutes. Store in an airtight container.

Number Of Ingredients 8

1 large egg white
1/4 cup sugar
1 teaspoon salt
1/2 teaspoon chili powder
1/4 teaspoon ground allspice
1/2 teaspoon ground cumin
1 3/4 teaspoons cayenne pepper
2 1/2 cups pecan halves, or assorted nuts, such as cashews, walnuts, or almonds

Steps:

  • Preheat oven to 300 degrees. Beat egg white until soft and foamy. Combine all remaining ingredients except pecans; whisk into egg white. Stir in pecans until well coated; spread mixture in single layer onto an ungreased baking pan.
  • Bake pecans for 15 minutes, then remove from oven. Using a metal spatula, toss, stir, and separate nuts. Reduce oven to 250 degrees and return nuts to bake until medium brown, about 10 minutes. Remove from oven; toss, and stir again. Place baking pan on wire rack to cool (they will crisp as they cool). Break up any that stick together.

1 large egg white
1/4 cup sugar
1 teaspoon salt
1 teaspoon chili powder
1/4 teaspoon ground allspice
1 teaspoon ground cumin
1 3/4 teaspoons dried, ground ancho pepper, or cayenne
2 1/2 cups pecans, or assorted nuts & seeds (see notes for recommendations)

Steps:

  • Preheat oven to 350⁰F (175C⁰). Line baking sheet with parchment paper and reserve.
  • Add nuts to a large bowl. Mix spices, salt & sugar together in a small bowl or directly in with nuts. Toss nuts with spice blend using a rubber spatula.
  • Separate eggs reserving whites in a small bowl. Lightly whisk egg until white and foamy - not whipped. Toss foamy egg whites with nuts using a spatula, being sure to scrape sugar & spices from the bottom of the bowl to coat completely.
  • Spread coated nut mixture onto the parchment-lined baking sheet, one layer deep.
  • Roast nuts in preheated 350⁰F (175C⁰) oven for 15 minutes then remove and turn nuts to roast the other side. This is a sticky job. Nuts are hot and coated with sugar and egg white, so use caution and rinse your spatula directly following or the candy coating will harden and then... it's a bitch to get off.
  • Return nut mixture to 350⁰F (175C⁰) oven for an additional 20 - 25 minutes. Nuts should smell rich and sweet and look glossy and dark. Remove from oven and cool completely on a wire rack. The candy coating hardens as it cools. (Don't snack, they're scorching hot!)
  • Once cool break apart lightly to separate into bite-sized clumps. (NOW you can snack!) Keep in a sealed jar or zip lock bag. Ancho Spiced nuts have a shelf life of about 30 days if kept dry.

MOLE-SPICED NUTS

1 cup unsalted dry-roasted peanuts
1/2 cup raw pepitas (green pumpkin seeds)
1 cup slivered almonds
1/2 cup corn nuts
2 dried ancho chiles or 2 tablespoons ancho chile powder
2 dried guajillo chiles or 2 tablespoons guajillo chile powder
1/4 teaspoon ground allspice
1 teaspoon ground cumin
2 teaspoons grated orange zest
1/2 teaspoon cayenne pepper
3 tablespoons sugar
2 tablespoons canola oil
Kosher salt

Steps:

  • Preheat the oven to 425 degrees F. Line a baking sheet with foil. Mix the peanuts, pepitas, almonds and corn nuts in a large bowl.
  • If using dried chiles, pull off the stems and scrape out the seeds. Tear the chiles into 2-inch pieces. Put the chiles, allspice, cumin, orange zest and cayenne in a spice grinder and pulse until the chiles are ground. (If using chile powder, mix the ingredients in a bowl.) Add to the nut mixture. Add the sugar, canola oil and 2 tablespoons salt. Stir with a fork to evenly coat.
  • Pour the mixture onto the prepared baking sheet. Bake 4 minutes, then stir with a fork and continue baking until lightly golden, about 4 more minutes. Pour the nuts onto a clean baking sheet to cool. Transfer to a serving dish and enjoy.

2 tbsp honey

Steps:

  • Heat oven to 140C/120C fan/gas 1. Mix the oil with the spices, then stir in the nuts and drizzle over half the honey. Spread over a baking sheet and cook for 10 mins.
  • Remove from the oven and drizzle over the remaining honey, then return to the oven and cook for a further 10 mins. Allow to cool completely.

1 cup untoasted walnut halves
1 cup untoasted pecan halves
1 cup unsalted, dry roasted almonds

¼ cup water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil and lightly coat with cooking spray.
  • Combine walnut halves, pecan halves, almonds, and cashews in a large bowl. Add salt, black pepper, cumin, and cayenne pepper; toss to coat.
  • Heat sugar, water, and butter in a small saucepan over medium heat until the butter is melted. Cook for 1 minute and remove from heat. Slowly pour butter mixture over the bowl of nuts and stir to coat.
  • Transfer nuts to the prepared baking sheet and spread into a single layer.
  • Bake nuts in the preheated oven for 10 minutes. Stir nuts until the warm syrup coats every nut. Spread into a single layer, return to the oven, and bake until nuts are sticky and roasted, about 6 minutes. Allow to cool before serving.

Everybody likes something to munch on for extra energy, or to accompany that glass of wine earned by a day of unpacking! You may think you'll never find ancho-chile powder, but McCormick packages it, and it is readily available at most grocery stores. It's really important to keep the heat on low in this recipe, because the nuts and spices are inclined to get too brown.

Yield makes 2 cups

Number Of Ingredients 9

4 tablespoons unsalted butter
1 cup pecans
1 cup cashews
2 teaspoons light-brown sugar
2 teaspoons ancho-chile powder
1 teaspoon kosher salt
1/2 teaspoon smoked paprika
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper

Steps:

  • Melt the butter in a large skillet over low heat. Stir in the nuts, the sugar, and the spices, and toast them together for about 6 minutes. Transfer to a sheet tray, and cool completely. Put the spiced nuts in a Mason jar, and tie with a bow to give as a gift.

Pasta With a Anchovy, Spinach and Pine Nut Sauce image

This recipe actually originated from a collaboration between my girlfriend (who lives in Italy) and myself one night. She was visiting, and after spending the day at the beach we were starving. Well, other than a few pantry items, a couple of slices of a baguette, 1 fresh tomato and not much else this was the end result. We came up with this amazing angel hair pasta, frozen spinach, pine nuts (yes, I always have them in the freezer), of course some parmesan, and lastly anchovies (yes, I keep those too, I add them to many sauces). Well we made this pasta which was great, grilled the baguette and broiled the tomato slices with nothing more than a little balsamic, olive oil, s/p and fresh basil. Dinner was amazing and so was this pasta. Now this is a light pasta dish, but has so much flavor. I actually like to serve this as a side dish sometimes if you don't want to serve it as a main dish. It is great as a side with grilled fish like, Halibut, Cod, Tilapia or even grilled scallops. I like use a lemon, olive oil, salt and pepper marinade for the seafood to keep it simple which goes well with the pasta. Give it a try, I know you will really enjoy it. I never really liked anchovies until I tried them toasted or sauteed - they get nutty and sweet. This is literally a 20 minute great dish and serves 4 for a pretty good price. As I said, some fresh tomatoes, grilled bread and dinner in a hurry for family or friends.

2 (10 ounce) boxes frozen leaf spinach (thawed and squeezed)
1 (1 lb) box angel hair pasta (you could also use thin spaghetti is you want)
4 teaspoons minced garlic
1 large shallot, thin sliced
8 anchovy fillets, chopped (canned)
5 tablespoons pine nuts, toasted (3 crushed, 2 whole)
1 teaspoon lemon juice
1 teaspoon lemon zest
4 tablespoons olive oil
3 tablespoons butter (no margarine)
grated parmesan cheese

Steps:

  • Spinach -- Just thaw and squeeze dry and set to the side. It will take only a couple of minutes to heat up in the sauce.
  • Pasta -- Again, takes just minutes for Angel Hair pasta to cook so make sure you sauce is done or at least started. This dish only takes minutes.
  • For the pasta cook according to directions - a large pot of salted water. when done, drain and set to the side to keep warm.
  • Sauce -- In a large saute pan, add the oil and and bring to a medium high heat. Add the pine nuts and toast until golden brown. They will only take a minute and stir often. Remove to a paper towel to let them drain. Then add the garlic and shallot and cook two minutes until they start to get golden brown, add the anchovies and cook another minute. Add the spinach breaking it up as you add it to the pan along with the butter and cook 2-3 minutes.
  • Pine Nuts -- I take about 1/2 or a little less and break them up a bit. You can just use the back of a fork or you can put them in a baggie and just hit them with the bottom of a pan or bowl to slightly crush them. You just want to break them up a bit.
  • Finishing -- Pasta should be done and drained. Simply add the pasta to the sauce pan along with the pine nuts, lemon juice and zest and toss well.
  • Garnish with fresh grated parmesan. Literally a 20 minute dish and absolutely delish! And if you think you didn't like anchovies, you will.
