¼ cup rice vinegar
2 tablespoons honey
2 tablespoons sesame oil
2 teaspoons minced garlic
1 tablespoon grated fresh ginger root
1 tablespoon chopped green onion or shallot
1 tablespoon raw sesame seeds
½ teaspoon ground pepper

Steps:

  • Whisk together soy sauce, rice vinegar, honey, sesame oil, garlic, ginger, green onion, sesame seeds, and pepper until the honey has dissolved.

2 tablespoons toasted sesame oil
2 tablespoons olive oil
2 tablespoons reduced sodium soy sauce (or sub coconut aminos)
2-3 tablespoons rice vinegar
1 ½ tablespoons pure maple syrup
2 cloves garlic, finely minced
1 tablespoon freshly minced ginger
Optional if you want a creamy dressing: add 1 tablespoon tahini or cashew butter

Steps:

  • Make the dressing by whisking together the following in a medium bowl or shaking in a mason jar: sesame oil, olive oil, soy sauce, rice vinegar, maple syrup, garlic and fresh ginger. If you want a creamier dressing, add in a tablespoon of tahini or cashew butter.

1 tbsp fresh (frozen, or powdered ginger)
1/4 cup of low sodium soy sauce.
2 tbsp of rice wine vinegar.
3 or 4 cloves of garlic (minced. We used jarred minced garlic (don't throw things at us!).)
1 package chicken breast (around 1 and 1/4 pounds)
1 gallon plastic zipper bag
2-3 tbsp toasted sesame oil.

Steps:

  • Add all ingredients to plastic zipper bag and mix.
  • Add chicken breast (we cut ours into strips) and let chicken marinate for around 20 minutes (or longer if you have the time).
  • Broil chicken or cook on grill to taste.

2 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
6 tablespoons sesame oil
2 1/2 tablespoons sugar
2 tablespoons soy sauce
1 teaspoon cracked black pepper
1 cup plus 2 tablespoons cornstarch
Vegetable or peanut oil
2 tablespoons minced garlic
1 tablespoon minced ginger
4 tablespoons Chinese Shoaxing rice wine
2 tablespoons hoisin sauce
2 tablespoons oyster sauce
2 tablespoons low-sodium soy sauce
1 1/2 tablespoons honey
1 tablespoon sambal chili sauce
1 tablespoon Thai chili sauce
1 lemon, zest and juice
Toasted sesame seeds, for garnish
Scallions, thinly sliced on an angle, for garnish
Rice, for serving

Steps:

  • For the chicken marinade: In a mixing bowl, combine the chicken with the sesame oil, sugar, soy sauce and pepper. Toss to coat, cover, place in the refrigerator and let sit 1 hour. For the stir-fry: Remove the chicken from the fridge. Add 1 cup cornstarch to a shallow baking dish and dredge each piece of chicken, shaking off any excess. Fill a Dutch oven or high-sided saute pan with enough oil to completely submerge the chicken pieces. Heat over high heat until glossy and the temperature reaches 375 degrees F. Deep fry the chicken until golden brown, about 3 minutes, adding your chicken in batches to avoid overcrowding and to keep your oil from dropping in temp too much. Remove to a paper towel-lined plate. In a large saute pan, heat 1 tablespoon oil over medium heat. Add the garlic and ginger and cook until golden brown and fragrant, about 30 seconds. Next, add the rice wine, hoisin, oyster sauce, soy sauce, honey and the chili sauces; bring to a simmer. In a glass measuring cup, mix the remaining 2 tablespoons cornstarch with 1/4 cup very cold water (make sure you water is cold to avoid lumps!), whisking until combined. Add the mixture to the sauce and simmer for an additional minute, until the sauce thickens. Adjust seasoning to taste. Add in the fried chicken and toss to coat with the sauce. Add the lemon zest and juice. Garnish with toasted sesame seeds and scallions. Serve warm over rice.

GINGER AND SESAME MARINADE

5 in fresh gingerroot, peeled and grated
4 tablespoons lime juice or 4 tablespoons rice vinegar
3 tablespoons fish sauce or 3 tablespoons soy sauce
1 1/2 tablespoons toasted sesame seeds
1 tablespoon toasted sesame oil
1 tablespoon soft brown sugar

Steps:

  • The marinade- Put the ginger in a fine sieve, or a sieve lined with muslin, and press the juice into a bowl.
  • You need to extract 7 tbs ginger juice - add a little water to the ginger pulp and squeeze again if necessary. Add the remaining ingredients, except the sugar, and stir to mix.
  • Put the meat or seafood in a non-metallic shallow dish and rub the marinade all over. For meat, cover and leave in the fridge for at least 4 hours or overnight. Fish and shrimp only need marinating for up to 30 minutes in the refrigerator.
  • Remember to give the marinated food at least 20 minutes to return to room temperature before cooking.
  • To cook- While cooking the food, season and baste it with the marinade. Before brushing the final few strokes on, add the sugar and stir to dissolve; this helps glaze the food, but if the sugar is added too soon, it will burn and stick.

  • In a sauce pan combine sugar, vinegar, garlic and ginger.
  • Cook on low. heat for eight minutes or until caramelized.
  • Add all the other items, bring to a boil then reduce heat and let simmer for 10 minutes.
  • Note: I had to add about 1 tblspn corn starch to thicken sauce for my liking.
