Sliced lemons
Margarine

Steps:

  • Lay piece of fish on aluminum foil square Sprinkle fish heavily with paprika (Cover one side) Sprinkle almost as heavy with pepper Sprinkle lightly with salt Lay sliced lemons in a row across each piece of fish (about 1 lemon per 2 pieces of fish) Spoon one dollop of margarine on each side of fish Wrap tightly in aluminum foil Bake at 375 degrees for 30 minutes (OPTIONAL: Place on grill)

4 (6 ounce) fillets catfish fillets
2 tablespoons dried parsley
¾ teaspoon paprika
½ teaspoon dried thyme
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon butter, melted
¼ teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange catfish fillets in a 9x13-inch baking dish. Combine parsley, paprika, thyme, oregano, basil, and black pepper in a small bowl; sprinkle herb mixture over fish. Mix lemon juice, butter, and garlic powder in another bowl; drizzle butter mixture over fish.
  • Bake in preheated oven until fish is easily flaked with a fork, about 20 minutes.

You can use about 1 tablespoon fresh dill in place of the dried if desired. I add in about 3 tablespoons grated Parmesan cheese to the breadcrumb mixture but that is optional. This is also good with other meaty fish fillets too! Double the recipe for more than 4 fillets.

1/2 cup mayonnaise
1/4 cup buttermilk
1 teaspoon grated lemon rind
3 tablespoons fresh lemon juice
1/2 teaspoon dried dill (or to taste)
2 -4 teaspoons fresh minced garlic (or to taste)
4 large catfish fillets
1 1/2 tablespoons seasoning salt (or to taste)
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper (can use more)
1 1/4 cups dry breadcrumbs (use fine breadcrumbs)

Steps:

  • Set oven to 425 degrees.
  • Line a baking sheet with foil then spray foil with nonstick cooking spray.
  • In a bowl mix the fine dry breadcrumbs with seasoned salt black pepper and cayenne.
  • In a bowl combine the mayo, buttermilk, lemon rind, lemon juice, dill and garlic until well combined.
  • Brush the fillets on both sides with the mayo mixture.
  • Coat evenly with the breadcrumb mixture.
  • Place the fillets into prepared baking sheet.
  • Sprinkle with more seasoned salt and black pepper if desired.
  • Bake for about 20-22 minutes or until the fish flakes with a fork.

Two 7- to 8-ounce catfish fillets
4 ounces butter
4 ounces dry white wine
1 tablespoon lemon juice
1 teaspoon finely chopped garlic
1 teaspoon chopped cilantro
Salt to taste
Pepper to taste
Paprika

Steps:

  • Season fish with salt and pepper. Place fish in oval casserole dish. Melt 4 ounces butter in small sauce pan. Add wine and remaining ingredients, except the paprika. Simmer about 2 minutes. Remove from heat and spoon over fish. Now sprinkle paprika over fish. Bake fish in 375 degree oven for 10 to 12 minutes, or until the fish is done.

4 catfish fillets (about 6 ounces each)
1/2 cup mayonnaise
1/4 cup buttermilk
1 teaspoon grated lemon rind
3 tablespoons fresh lemon juice
2 tablespoons chopped fresh dill
1 garlic clove, minced
1 teaspoon salt
1/4 teaspoon pepper
1 cup fine dry breadcrumb

Steps:

  • 1.Stir together mayonnaise, buttermilk, lemon rind, lemon juice, dill, and garlic in a small bowl.
  • 2.Place half of mayonnaise mixture in another small bowl to serve with fish; cover and chill until ready to serve.
  • 3.Rinse fillets, and pat dry with paper towels. Brush the catfish fillets evenly with remaining half of mayonnaise mixture; sprinkle evenly with salt and pepper.
  • 4.Dredge fillets in breadcrumbs. Arrange fillets on a lightly greased rack in an aluminum foil-lined broiler pan.
  • 5.Bake at 425°F (220°C) or until fish flakes with a fork and is opaque throughout,about 15 minutes to 20 minutes,no longer.
  • 6.Serve the baked catfish fillets immediately with chilled mayonnaise mixture.

6 tablespoons lemon juice
1/4 cup butter, melted
2 teaspoons Worcestershire sauce
4 catfish fillets (about 5 ounces each)
1/2 teaspoon salt
1/2 teaspoon lemon-pepper seasoning

Steps:

  • In a large resealable plastic bag, combine the lemon juice, butter and Worcestershire sauce. Add the fish; seal bag and turn to coat. Cover and refrigerate for 30 minutes, turning occasionally., Drain and discard marinade. Sprinkle fish with salt and lemon-pepper. 1/3 cup dry breadcrumbs
2 tablespoons (1/4) butter, melted
2 6-ounce catfish fillets (1/2 inch thick) or other white fish fillets (such as orange roughy)
1/3 cup regular or low-fat mayonnaise
1 tablespoon sweet pickle relish
1 tablespoon chopped fresh dill or 1 teaspoon dried dillweed
1 tablespoon drained capers

Steps:

  • Preheat oven to 450°F.Place breadcrumbs and melted butter in separate shallow dishes. Cut each fish fillet crosswise in half. Season fish with salt and pepper. Dip fish into butter, then into breadcrumbs, coating completely; place fish on baking sheet. Bake fish until crisp, brown and just cooked through, about 12 minutes.
  • Meanwhile, stir mayonnaise, relish, dill and capers in small bowl to blend. Season tartar sauce with salt and pepper.

8 ounces fresh mushrooms, sliced
1 garlic clove, minced
1/2 cup chicken broth or dry white wine
2 tablespoons lemon juice
1/4 to 1/3 cup chopped fresh parsley
1 teaspoon salt
1/2 teaspoon pepper
1-1/2 pounds catfish fillets, cut into bite-size pieces
16 ounces spaghetti, cooked and drained
1/2 cup grated Parmesan cheese
Lemon slices or wedges, optional
Additional parsley, optional

Steps:

  • In a large skillet, melt butter over medium heat. Cook mushrooms and garlic, stirring occasionally, for 5 minutes. Add broth or wine, lemon juice, parsley, salt and pepper; cook 3 minutes, stirring occasionally. Add catfish, simmer, uncovered, for 6 to 8 minutes or until fish flakes easily with a fork. (Butter sauce will be thin.) Serve over spaghetti. Sprinkle with Parmesan cheese. Garnish with lemon and parsley if desired.
