My kids and I love having these peanut butter energy balls on hand. They make for an easy and quick protein or bite of energy during the day. My husband also loves having these treats in his lunch box at work.

Steps:
- Combine oats, peanut butter, crushed walnuts, chocolate chips, and honey in the bowl of a stand mixer fitted with the paddle attachment; beat until well combined, adding more honey if the mixture is not holding together.
- Form 24 balls with a cookie scoop and place on a cookie sheet. Refrigerate until firm, 30 to 60 minutes.

Steps:
- Mix the butter and peanut butter in a large bowl.
- Add confectioners sugar gradually, the dough will be stiff.
- Knead small amounts of the dough at a time.
- Roll into balls the size of large marbles.
- Chill for 10 minutes.
- Melt the chocolate bark.
- Dip the balls into the chocolate bark.
- Place on wax paper.
- Let stand until 10 minutes or until firm.
- Chill until serving time.

Steps:
- In a medium bowl knead peanut butter, margarine, vanilla and sugar, with your hands, until smooth dough is formed.
- Shape into half-inch balls, place on tray lined with wax paper and freeze for at least one hour.
- Melt chocolate in the microwave.
- Use 20-second zaps and mix in between each zap until smooth.
- Insert a toothpick into each peanut butter ball and dip ball into melted chocolate.
- Return to wax paper and refreeze.
- Store in airtight container and serve from frozen.

From start to finish, this only takes about 30-45 minutes and the taste is like you spent hours in the kitchen. You might want to make a double batch, because they will be gone before you know it. - Preheat oven to 325 degrees F (165 degrees C).

- Line a large baking tray with baking or parchment paper. In a large mixing bowl, add butter and peanut butter. Mix briefly until smooth and creamy.
- Add icing sugar and mix until a soft dough forms. Scoop small tablespoons of peanut butter mixture and roll into a smooth ball using your hands. Place on prepared tray. Repeat util you have roughly 18 truffles. Place truffles in the fridge for at least 10 minutes.
