Pasta with creamy tomato sauce is perfect for when you're hungry or if you're feeling blue and in need of comfort. It definitely does the trick.

2 tbsp. olive oil
2 tbsp. butter
1 whole medium onion, finely diced
4 cloves garlic, minced
2 15-ounce cans tomato sauce or marinara sauce
Salt and pepper, to taste
Dash of sugar, to taste
1 c. heavy cream
Grated parmesan or Romano cheese, to taste
Fresh basil, chopped
1 1/2 lb. fettuccine

Steps:

  • Cook pasta according to package directions. Drain, reserving 1 cup of pasta water.Heat butter and oil over medium heat. Add onions and garlic and saute for a minute or so. Pour in tomato sauce and add salt, pepper, and sugar to taste. Stir and cook over low heat for 25 to 30 minutes, stirring occasionally.Remove from heat and stir in cream. Add cheese to taste, then check seasonings. Stir in pasta and chopped basil and serve immediately. (Thin with pasta water before adding basil if needed.)

1 tablespoon vegetable oil, for brushing the grill
Kosher salt
1 1/2 pounds pappardelle
2 tablespoons olive oil
3 cloves garlic, minced
1/2 cup brandy
One 28-ounce can diced tomatoes, drained
1/2 teaspoon sugar
1/4 teaspoon crushed red pepper flakes
Freshly ground black pepper
1 teaspoon seasoning salt
1/2 teaspoon lemon pepper
12 ounces skirt steak
Heaped 1/2 cup grated fontina
3 tablespoons crumbled blue cheese
3/4 cup heavy cream
1 tablespoon prepared horseradish
1/3 cup half-and-half, if needed, for thinning
3 cups baby spinach
Fresh basil leaves, for garnish

Steps:

  • Brush the grill with vegetable oil and preheat to medium high.
  • Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions.
  • Meanwhile, in a large skillet over medium heat, add the olive oil. When hot, add the garlic and cook for 1 minute. Turn the heat off, then add the brandy. Turn the heat back on and cook until the brandy is reduced by half, about 1 minute. Add the diced tomatoes to the skillet with the sugar, crushed red pepper and a pinch of salt and black pepper. Cook for 10 minutes, stirring occasionally.
  • Meanwhile, sprinkle 1/2 teaspoon seasoning salt, 1/4 teaspoon each black pepper and lemon pepper and a pinch of kosher salt over one side of the steak.
  • Put the steak on the hot grill seasoned-side down and cook for 3 to 4 minutes. Sprinkle the remaining 1/2 teaspoon seasoning salt, 1/4 teaspoon lemon pepper, 1/4 teaspoon black pepper and a pinch salt on the top of the steak and then flip it. Cook it for a further 3 to 4 minutes until medium rare. Remove to a board and rest while the sauce is finished.
  • Reduce the heat to low under the sauce. Stir in the fontina and 1 tablespoon of the blue cheese. Stir in the cream and horseradish, then add in a little half-and-half if the sauce is too thick. Cook for a minute or two, tasting and adding more seasonings as needed.
  • Meanwhile, cut the steak into 1/2-inch strips.
  • At the last minute, add the spinach to the sauce and toss to coat. Drain the pasta and add it to the sauce. Mix everything together.
  • Place the steak on top of the pasta. Garnish the dish with basil and the remaining 2 tablespoons blue cheese crumbles. Serve straight from the skillet.

2 whole green bell peppers, seeded and diced
6 cloves garlic, minced
1 cup white wine (or low sodium beef broth if you prefer)
2 (28-ounce) cans crushed tomatoes
1 (14-ounce) can crushed tomatoes
1 (4-ounce) can tomato paste
1 jar Trader Joe's marinara sauce
1 teaspoon ground oregano
1 teaspoon ground thyme
4 whole bay leaves
2 tablespoons sugar
2 teaspoons kosher salt
1/2 teaspoon crushed red pepper (optional)
1/4 cup finely minced fresh parsley (or 3 tablespoons parsley flakes)
1 whole rind from one wedge Parmesan (optional)
1/2 cup grated Parmesan cheese (optional)
1 pinch of cinnamon (optional)
2 pounds spaghetti, cooked al dente and tossed with olive oil
Extra minced parsley, for serving
Extra Parmesan cheese, for serving

Steps:

  • In a large pot over medium-high heat, brown the ground beef until totally browned. Remove meat from pot with a slotted spoon and put into a bowl. Set aside. Discard any grease in pot, but do not clean the pot. Drizzle in olive oil. When it is heated, throw in the diced onion and diced bell pepper. Stir it around for 1 1/2 minutes, then add the garlic. Stir and cook for an additional minute. Pour in the wine and allow it to bubble up and reduce for about 1 1/2 minutes. Add crushed tomatoes, tomato paste, and marinara sauce. One 24-ounce jar good store-bought marinara sauce (you can use another jar if you like the sauce to be more saucy than meaty)
One 15-ounce can crushed tomatoes
One 6-ounce can tomato paste
2 tablespoons sugar
2 teaspoons kosher salt
1 teaspoon ground oregano
1 teaspoon ground thyme
1/4 teaspoon crushed red pepper, optional
4 bay leaves
1/4 cup finely minced fresh parsley or 3 tablespoons parsley flakes, plus more for serving
1 whole rind from 1 wedge Parmesan, optional
1/2 cup grated Parmesan, optional, plus more for serving

SPAGHETTI PIZZA PIE

4 large eggs
1/2 cup grated Parmesan
1 teaspoon garlic powder
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
2 1/4 cups pizza sauce
Kosher salt and freshly ground black pepper
1 1/2 cups grated mozzarella
8 ounces spaghetti, cooked and cooled
1 tablespoon olive oil
1 cup cooked, crumbled sausage
5 thinly sliced green bell pepper rings
1/4 cup sliced red onions
1/4 cup sliced black olives
Basil leaves or arugula, for garnish

Steps:

  • Preheat the oven to 400 degrees F.
  • Whisk together the eggs, Parmesan, garlic powder, oregano, red pepper flakes and 1/4 cup of the pizza sauce in a large bowl. Sprinkle with salt and pepper. Add 1/2 cup of the mozzarella and the spaghetti, then toss well to coat the pasta.
  • Heat the olive oil in a 12-inch ovenproof nonstick skillet over medium heat. When the oil is hot, add the spaghetti mixture and spread it evenly over the bottom of the pan. Turn the heat to low and cook just until the edges are beginning to set, about 3 minutes.
  • Pour the remaining 2 cups pizza sauce evenly over the top and spread evenly.
  • Top with the remaining 1 cup mozzarella, sausage, green peppers, onions and black olives. Transfer to the oven and cook until the spaghetti mixture is fully set and the cheese is bubbly, about 12 minutes.
  • Remove from the oven and let sit for 5 minutes. Using a spatula, slide out of the pan. Top with basil. Cut into wedges and serve.

ITALIAN SAUSAGE PASTA SKILLET

1 pound bow-tie pasta
1 cup whole-milk ricotta
1 lemon, zested and juiced
Freshly ground black pepper
2 tablespoons olive oil
1 pound bulk Italian sausage
1 tablespoon fresh oregano, chopped
2 teaspoons crushed red pepper
3 cloves garlic, minced
1 sweet onion, such as Vidalia, sliced
1 bunch broccolini, cut into 1-inch pieces
1/2 cup jarred roasted red bell pepper strips, drained
1/2 cup yellow cherry tomatoes, halved
1/2 cup freshly grated Parmesan
10 to 12 fresh basil leaves
1 loaf ciabatta or focaccia, warmed, for serving

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  • Mix together the ricotta and lemon zest in a small bowl and season with salt and pepper; set aside.
  • Meanwhile, heat the olive oil in a large cast-iron skillet over medium-high heat. Tear the sausage into 1- to 2-inch chunks and place in the skillet. Cook for 60 to 90 seconds, then flip and cook for an additional minute. Add the oregano, crushed red pepper, garlic and onion and cook, stirring occasionally, until the sausage is cooked through, about 4 minutes. Stir in the broccolini and jarred peppers. Using a ladle, remove 2/3 cup cooking water from the pasta pot and add to the skillet. Cook until the sauce is thickened and the broccolini is softened, about 3 minutes.
  • Drain the pasta once cooked.
  • Remove the skillet from the heat and stir in the pasta, lemon juice, yellow tomatoes and Parmesan. Dollop on the ricotta mixture; tear the basil leaves into large pieces and sprinkle them over the skillet. Serve the bread alongside the pasta, whole or torn into large chunks.

One 6.5-ounce can chopped clams, with juices
2 tablespoons olive oil
1 tablespoon fresh oregano leaves, plus more for garnish
2 teaspoons crushed red pepper flakes, plus more for garnish
4 cloves garlic, sliced
1 small yellow onion, sliced thinly
Kosher salt
2 cups baby spinach
1 1/2 cups grated Parmesan
2 tablespoons salted butter
Freshly ground black pepper

Steps:

  • Place the spaghetti, clams with their juices, olive oil, oregano leaves, crushed red pepper, garlic, onion and a good pinch of salt in a large high-sided skillet. Add 4 1/2 cups of water and bring to a boil.
