1 pound dried spaghetti
3 cloves garlic, (minced)
1 teaspoon coconut oil
4 1/4 cup water
1 pound raw jumbo shrimp, (peeled and deviened)
3/4 cup light mayonnaise
3/4 cup Thai sweet chili sauce
1/4 cup lime juice
1 tablespoon Sriracha sauce, (more as needed)
1/2 cup chopped scallions
Salt (and pepper)

Steps:

  • Break the spaghetti noodles in half and place in the Instant Pot. Add the garlic, coconut oil, 1 teaspoon salt, and water. Cover and lock the lid into place.
  • Set the Instant Pot on "Pressure Cook High" for 4 minutes. Once it is finished cooking, turn the Instant Pot "Off", then press the button to "Quick Release" the steam, until the valve button drops.
  • Meanwhile, in a medium bowl mix the mayonnaise, Thai sweet chili sauce, lime juice, and Sriracha together.
  • Unlock the lid and stir the sauce into the pasta. Let the sauce simmer and thicken 2-3 minutes if needed. Pour in the shrimp and scallions, then mix to combine. Set the Instant Pot on "Sauté" and cook for 2-3 minutes, toss and simmer until the shrimp are pink. Taste, then salt and pepper as needed. Add more Sriracha if desired. Serve warm.

The genius of this recipe is that all of the ingredients--wine, garlic, shrimp -- even the pasta -- cook together in one pot. Just make sure to use shrimp that's still frozen or they will overcook. You don't have to serve garlic bread with the dish, but there's nothing better for sopping up all that delicious buttery sauce.

6 tablespoons unsalted butter
2 tablespoons olive oil
6 cloves garlic, chopped
3/4 cup dry white wine
Juice and zest of 1 lemon
1/4 teaspoon crushed red pepper flakes
Kosher salt and freshly ground black pepper
6 scallions, sliced
12 ounces thin spaghetti, broken in half
1 1/2 pounds frozen peeled and deveined shrimp
Garlic bread, for serving, optional
Green salad, for serving, optional

Steps:

  • Add the butter, olive oil and garlic to a 6- or 8-quart Instant Pot® multi-cooker and set to high saute (see Cook's Note). Cook, stirring often, until the garlic is softened but not browned, about 3 minutes. Add the wine, lemon juice and zest, red pepper flakes, 2 teaspoons salt and several grinds of pepper. Bring to a boil and let simmer 1 minute. Add 2 cups water, then add half of the pasta all in one direction and then the other half of the pasta in a criss-cross fashion. Top with the shrimp and half of the scallions.
  • Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 1 minute. After the pressure-cook cycle is complete, follow the manufacturer's guide for natural release. After 5 minutes, being careful of any remaining steam, unlock and remove the lid.
  • Using tongs, toss the pasta to evenly coat with the sauce and break up any clumps. Top with the remaining scallions and serve with salad and garlic bread if using.

  • Meanwhile, whisk mayonnaise, chili sauce, lime juice, and Sriracha together in a bowl.
  • Melt butter in a large soup pot over medium-high heat. Add shrimp and cook for 5 minutes. Add garlic and cook until fragrant, 1 more minute. Add cooked spaghetti and mayonnaise-chili sauce; toss to combine. Cook until sauce is hot, about 2 minutes. Turn heat off and let sit for 5 minutes to thicken.
  • Divide among serving plates and garnish with chopped scallion.

1 pound spaghetti pasta
1 Pound Shrimp
1 tbs lime juice
For the Sauce:
2 cloves garlic minced
1/2 cup mayo
1/2 cup Thia sweet chili sauce
2 tbs sriracha
1/4 Tsp crushed red pepper flakes
1/4 Tsp onion powder

Steps:

  • Place Pot on Saute,
  • Add garlic, paprika, and olive oil. cook for about 1 minute.
  • Break pasta in half and place in the pot.
  • Pour 3 cups water over the top.
  • Take a piece of foil and place your shrimp on the foil sprinkle with more paprika and 1 tbs lime juice.
  • Place on top of your pasta right in the pot.
  • Place on manual High pressure for 4 minutes.
  • Do a Quick Release.
  • While pasta is cooking prepare the sauce by mixing together all ingredients for the sauce.
  • Mix together shrimp, pasta, and sauce. Stir and serve. Enjoy!

  • Break spaghetti noodles in half and place into the inner pot that comes with your Instant Pot. Try to spread the noodles out as much as possible across the bottom of the pot, so that they are not stuck together and are not stacked too high. Pour water over noodles.
  • Seal your Instant Pot and set to manual mode, 4 minutes, high pressure. When Instant Pot is done, perform a quick release.
  • When it is safe to do so, remove the lid from your Instant Pot. Initially, there will still be some water in your pot. This is normal. Keeping the pot in warm mode, stir your noodles to make sure noodles at the surface are mixed in and fully cooked (sometimes some of the noodles in the top layer are still slightly under-cooked, but they can continue to cook if you quickly mix them in with the other noodles). You should also stir to break up any noodles that may have gotten stuck together during cooking. As you stir, you should notice that the water is evaporating. Continue to stir until all the water is gone from the bottom of the pot and your noodles are mostly dry. (This took me about 2-3 minutes).
  • Add the cooked shrimp into your noodles and stir a few times until shrimp are warmed and evenly mixed in.
