We live in Texas and love the Southwest style of cooking. This taco meat loaf recipe spices up plain ol' meat loaf! -Susan Garoutte, Georgetown, Texas

Number Of Ingredients 13

3 large eggs, lightly beaten
2 cups picante sauce, divided
1 can (16 ounces) kidney beans, rinsed and drained
1 can (11 ounces) Mexicorn, drained
1 medium onion, chopped
2 cans (2-1/4 ounces each) sliced ripe olives, drained
3/4 cup dry bread crumbs
1 envelope taco seasoning
1 teaspoon ground cumin
1 teaspoon chili powder
2 pounds ground beef
2 cups shredded cheddar cheese
Additional picante sauce, optional

Steps:

  • In a large bowl, combine the eggs, 1/2 cup picante sauce, beans, corn, onion, olives, bread crumbs, taco seasoning, cumin and chili powder. Crumble beef over mixture and mix well. , Pat into two ungreased 9x5-in. loaf pans. Bake, uncovered, at 350° for 50-55 minutes or until no pink remains and a thermometer reads 160°. , Spoon remaining picante sauce over each meat loaf; sprinkle with cheese. Bake 10-15 minutes longer or until cheese is melted. Let stand for 10 minutes before slicing. Serve with additional picante sauce if desired.

1 cup crushed saltines (about 30 crackers)
1 envelope taco seasoning
1/2 cup ketchup
1 can (4 ounces) mushroom stems and pieces, drained
1 can (2-1/4 ounces) sliced ripe olives, drained
1 small onion, chopped
2 eggs, lightly beaten
2 tablespoons Worcestershire sauce
2 pounds lean ground beef (90% lean)
Salsa, sour cream, shredded cheddar cheese and additional olives, optional

Steps:

  • In a large bowl, combine the first eight ingredients. Crumble beef over mixture and mix well. Press into a greased 9x5-in. loaf pan. , Bake, uncovered, at 350° for 1-1/2 hours or until no pink remains and a thermometer reads 160°. Serve with salsa, sour cream, cheese and olives if desired.

1/2 cup sour cream
1/3 cup salsa
2 to 4 tablespoons taco seasoning
1 cup crushed tortilla chips
1/2 cup shredded cheddar cheese
2 pounds lean ground beef (90% lean)
Optional toppings: sour cream, salsa, shredded cheddar cheese, shredded lettuce, sliced ripe olives

Steps:

  • In a large bowl, combine the first six ingredients. Crumble beef over mixture and mix well. Pat into a 3-qt. slow cooker. , Cover and cook on low for 8 hours or until no pink remains and a thermometer reads 160°. Top with sour cream, salsa, cheese, lettuce and olives if desired.

1 ½ pounds lean ground beef
1 cup crushed tortilla chips
¾ cup shredded pepper Jack cheese
1 small onion, chopped
1 (1 ounce) packet taco seasoning mix
2 eggs, beaten
½ cup milk
¼ cup mild red taco sauce, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Thoroughly combine beef, tortilla chips, pepper Jack cheese, onion, and taco seasoning in a bowl.

1 (14.5 ounce) can Mexican stewed tomatoes, chopped
1 (4 ounce) packet saltine crackers, crushed
½ large onion, chopped
½ green bell pepper, chopped
1 egg
1 package taco seasoning mix
6 slices pepper Jack cheese
¼ cup BBQ sauce, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Mix beef, stewed tomatoes, saltine crackers, onion, bell pepper, egg, and taco seasoning together in a bowl until thoroughly combined. Transfer 1/2 the mixture to a 9x13-inch pan. Place pepper Jack cheese slices down the middle. Top with remaining meat mixture to seal cheese in between. Top with BBQ sauce.

1 1/2 lbs ground beef
1 cup breadcrumbs
1 cup mild enchilada sauce, divided
1 ounce taco seasoning mix
1 small bell pepper, finely diced
1 jalapeno, seeded and finely diced
1/2 yellow onion, finely diced
1 egg, beaten
3/4 cup shredded mexican cheese
sliced jalapeno, for garnish
chopped cilantro, for garnish

Steps:

  • Preheat oven to 350 F and line a baking sheet with parchment paper.
  • Add the beef, bread crumbs, 1/2 cup enchilada sauce, taco seasoning, bell pepper, jalapeño, onion, and egg to a large bowl. Mix to combine.
  • Transfer the mixture to the prepared baking sheet and shape into an 8x4 inch loaf. Bake for 1 hour.
  • Remove the meatloaf from the oven. Brush all over with remaining 1/4 cup enchilada sauce. Top with the shredded cheese.
  • Bake for 15 minutes, or until cheese is melted.

I found this recipe in the "Cooking with Paula Deen" magazine and prepared it for my family. It is the hands down the best meatloaf I've ever had and my family was very pleased. Give this one a try and I think you'll agree. When you do, share your thoughts. One thing I learned about preparing meatloaf; when mixing and forming it, don't manhandle it. Over handling and squeezing the ingredients into the meat to blend cause the meatloaf to be tough; handle with care and you'll be rewarded with a wonderful meal.

1 1/4 lbs lean ground beef
1/2 cup tortilla chips, crushed, whole-grain
1/2 cup zucchini, shredded
1/4 cup onion, finely chopped
1/4 cup canned black beans, drained and rinsed
1 large egg
1 teaspoon fajita seasoning mix
3/4 teaspoon salt
1/4 cup salsa, mild
1/4 cup cheese, Mexican blend, reduced fat, shredded

Steps:

  • Preheat oven to 350 degrees.
  • Place a wire rack on a foil-covered bakiing sheet.
  • In a large bowl, gently combine beef, crushed chips, zucchine, onion, beans, egg, fajita seasoning and salt.
  • Form mixture into a loaf and place on a prepared wired-rack.
  • Bake 40 minutes.
  • Top with cheese and salsa.
  • Bake for an additional 20 minutes or until a meat thermometer inserted in meatloaf registers 165 degrees.
  • Note: Meatloaf can also be baked on the rack of an aluminum foil-lined broiler pan. I covered my wire rack with foil and cut slits in it randomly so fat could drain off onto the baking sheet preventing the meatloaf from soaking in fat as it cooks.

I like meatloaf, my DH likes tacos. We both LOVED this recipe! Found in TOH "Comfort Foods Book **Updated to add -- I have done a few revisions on this recipe to include a different pan size for the "boil over" issue. I have also found that if turkey and beef are combined it is a bit drier, you can use all turkey or all beef it is really up to you.

  • Bake, uncovered, at 350 degrees for 1 1/2 hours or until a meat thermometer reads 160 degrees. Serve with salsa, sour cream, cheese and olives.
