A delicious combination of leeks, mushrooms and potatoes topped with cheese and baked until crusty on top yet creamy underneath.

Steps:

  • Melt 2 tablespoons butter (or 1 tablespoon olive oil, 1 tablespoon butter) in heavy large skillet over medium-high heat. Stir in mushrooms and sauté until almost tender, 4 to 6 minutes. Stir in garlic and sauté until mushrooms are tender and golden, about 3 minutes longer. Transfer mushroom mixture to bowl. Melt remaining 2 tablespoons butter (or half olive oil, half butter) in same skillet over medium-high heat. Stir in leeks and thyme and sauté until leeks are tender and beginning to brown, 7 to 9 minutes. Add leek mixture to bowl with mushrooms. (Can be made 1 day ahead. Cover and refrigerate.) Preheat oven to 400°F. Butter 13 x 9 x 2-inch baking dish . Combine broth, cream, wine, 1 teaspoon salt and ½ teaspoon pepper in large bowl, whisk to blend. Layer ⅓ of potatoes on bottom of prepared dish. Top with half of mushroom-leek mixture, then ¾ cup cheese. Top with half of remaining potatoes. Pour half of cream mixture over. Top with remaining mushroom-leek mixture and ¾ cup cheese. Cover with remaining potatoes. Pour remaining cream mixture over, sprinkle with remaining cheese. Bake gratin uncovered until potatoes are tender and sauce bubbles thickly, about 1 hour 20 minutes. Let gratin stand 30 minutes before serving.

2 tablespoons. butter, divided
8 ounces. crimini mushrooms, cleaned and sliced - 1/4-inch thick
2 garlic cloves, minced
2 cups thinly sliced leeks, white and pale green parts
leaves from 2 sprigs fresh thyme, minced (about 1 teaspoon.)
3/4 cup chicken broth
1 cup cream
3 tablespoons. dry white wine
1/2 teaspoon. kosher salt
1/4 teaspoon. black pepper
1 1/2 pounds russet potatoes, peeled and thinly sliced
1 cup grated Swiss cheese
1/4 cup freshly grated parmesan cheese
1 tablespoons. plain breadcrumbs

Steps:

  • Melt 1 tablespoon. butter in a saute pan over medium-high heat. Add mushrooms and saute until almost tender, about 5 minutes.
  • Add garlic and saute until mushrooms are tender and golden and their liquid has evaporated. Transfer mushroom mixture to a bowl.
  • In the same pan, melt 1 tablespoon. butter. Add the leeks and thyme. Saute until leeks are tender and starting to brown, about 8 minutes. Transfer to the bowl with the mushrooms and stir to combine.
  • Preheat oven to 400F. Butter a baking dish (about 9-inch square). Whisk broth, cream, wine, salt and pepper in a bowl to blend. Arrange 1/3 of potatoes in the bottom of the dish. Top with 1/2 the mushroom leek mixture and 1/2 the Swiss cheese.
  • Create another layer of potatoes on top, then pour half the cream mixture over it. Add the remaining leek and mushroom mixture, then the remaining Swiss cheese.
  • Top with the rest of the potatoes and then push the whole thing down with the back of a spatula. Pour the rest of the cream mixture over the top, then sprinkle with the Parmesan cheese and breadcrumbs.
  • Bake uncovered until potatoes are tender and sauce is bubbling thickly, about 1 hour 20 minutes. Let stand a few minutes before serving.

2 1/2 cups grated Gruyère cheese (about 10 ounces)

Potato Leek & Mushroom Soup image

An earthy, delicious soup that's very easy to make. This is a recipe that originally came from The Enchanted Broccoli Forest that I modified to include mushrooms and less milk. For the stock, I prefer to use Basic Light Vegetable Stock, recipe #56479. Enjoy!!

4 medium potatoes, diced
2 cups leeks, chopped
1 stalk celery, chopped
1 large carrot, chopped
8 ounces button mushrooms, sliced
4 tablespoons butter
3/4 teaspoon salt
2 cups vegetable stock (or water)
2 cups milk
1 teaspoon thyme (optional)
ground black pepper, to taste

Steps:

  • 1. Place potatoes, leeks, celery, carrots, mushrooms, butter, and salt in a pot, and cook over medium heat, stirring until the butter is melted and the vegetables are coated.
  • 2. Add vegetable stock, bring to a boil, cover, and reduce heat to a simmer. Cook until the potaotes are tender (20-30 minutes).
  • 3. When the potatoes are tender, remove the pan from the heat and puree it's contents with the milk, using an immersion blender, or food processor. Make sure the mixture is absolutely smooth.
  • 4. Return to pot, add thyme, if using, and pepper. Check if you need more salt. Heat soup gently, until just hot, and serve.

2 pounds mushrooms (such as button or cremini), sliced

2 leeks, sliced crosswise, rinsed well
1 tablespoon chopped fresh tarragon

Steps:

  • Put oil in a large skillet over medium heat. Add mushrooms, sprinkle with 1/2 teaspoon salt, and cook, stirring occasionally, until they release their water and the pan begins to dry out again, 10-15 minutes. Add leeks and cook, stirring, until they soften a bit, 2-3 minutes. Add tarragon and stir until fragrant, about 30 seconds.

2 cups chicken stock or canned broth
2 ounces dried porcini or shiitake mushrooms
6 tablespoons (3/4 stick) butter
2 medium onions, chopped
3 leeks (white and pale green parts only), chopped
2 cups dry white wine
1 teaspoon dried rosemary, crumbled
4 pounds russet potatoes, peeled, thinly sliced (1/8 inch thick)
2 tablespoons goose fat, or 2 tablespoons (1/4 stick) unsalted butter, melted
Minced fresh chives

Steps:

  • Bring stock to simmer in medium saucepan. Add mushrooms; remove from heat. Let mushrooms soak 30 minutes to soften. Squeeze mushrooms, reserving stock. Strain stock. Chop mushrooms, discarding hard stems.
  • Preheat oven to 350°F. Butter 9 x 13-inch baking dish. Melt butter in heavy large skillet over medium heat. Add onions and leeks and sauté until tender but not brown, about 20 minutes. Add mushroom soaking liquid, mushrooms, wine and rosemary and bring to boil. Season with salt and pepper.
  • Arrange half of potatoes in prepared dish. Using slotted spoon, top potatoes with onions, leeks and mushrooms. Pour half of liquid over. Top with remaining potatoes, overlapping slices. Pour remaining liquid over. Cover with foil. Bake until potatoes are almost tender, about 1 hour 15 minutes. Uncover and bake until potatoes are tender, most of liquid is absorbed and top is beginning to brown, about 45 minutes.
  • Preheat broiler. Brush potatoes with 2 tablespoons goose fat or butter. Broil until golden. Sprinkle with chives.
