ROASTED POBLANO QUESADILLAS

This Roasted Poblano Quesadilla recipe is a great example of the rich, otherworldly flavor that Mexican cuisine can generate by using just a few simple ingredients. And it's served with Avocado Salsa Verde!

2 poblano peppers
1/2 onion
3-4 flour tortillas
1 cup refried beans
2 cups shredded Monterey Jack cheese
1/2 cup chopped cilantro (approx 1/2 a bunch)
salt
freshly ground pepper
4-5 tomatillos
1 serrano (or jalapeno)
1/2 onion
1 garlic clove
10-12 sprigs cilantro
1 avocado
salt to taste

Steps:

  • Start by rinsing 2 poblano peppers. Roast the poblanos in the oven for 25-30 minutes at 400F.
  • If you are building the Avocado Salsa Verde, you can also roast 4 tomatillos in the same pan as the poblanos. But remember that the tomatillos will need less time roasting. Take them out when they start to turn army green, approx 10-15 minutes.
  • Add the roasted tomatillos to a blender along with 1/2 onion, 1 garlic clove, 10-12 sprigs cilantro, and 1/2 of a serrano pepper (or 1/2 of a jalapeno pepper). Pulse blend and taste for heat, adding the additional 1/2 of the serrano (or jalapeno) if you want more heat. Add the avocado to the blender and combine well. Salt to taste.
  • Once the poblanos have roasted, let them cool and then pull off any loose bits of skin, but don't worry about getting rid of every last piece.
  • De-stem and de-seed the poblanos, cutting them into thin, bite-sized strips.
  • Saute 1/2 an onion in a dollop of oil over medium heat. When the onion is tender (4-6 minutes) add the poblano strips along with a generous pinch of salt and some freshly ground pepper. Let this mixture saute for a few minutes.
  • Heat up a wide skillet over medium heat. Warm up the tortillas before building the quesadillas (I usually give them 30-60 seconds in the skillet right before building).
  • Each quesadilla gets a layer of refried beans, cheese, poblano-onion mixture, cilantro, and cheese. Fill only half of the tortilla so you can fold it onto itself.
  • Cook the quesadillas for 2-3 minutes per side or until the cheese is melted and they start to turn golden brown.
  • Serve immediately.

4 teaspoons extra-virgin olive oil
4 large flour tortillas
2 cups shredded Monterey Jack cheese

Steps:

  • Heat the broiler to high.
  • Char the poblanos under the broiler to blacken their skins on all sides, 7 to 8 minutes. Place in a bowl, cover with plastic wrap, and let stand 10 minutes.
  • Peel and seed the peppers, then slice. Heat a skillet over medium-high heat. Add a drizzle of extra-virgin olive oil and add a tortilla, cover the tortilla with 1/2 cup cheese and 1/4 of the peppers. Fold the tortilla in half and cook 2 minutes to crisp and char the tortilla evenly and melt cheese. Remove and cut into wedges; repeat.

ASPARAGUS, BELL PEPPER AND MOZZARELLA QUESADILLAS

1 bunch medium asparagus woody stems trimmed and bottom 1/3 of the stalk peeled (about 1 pound),
2 tablespoons olive oil
Kosher salt and freshly ground black pepper
2 red bell peppers, cut into 1/4-inch thick strips
Four 10-inch (burrito size) flour tortillas
2 cups shredded Mozzarella
2 tablespoons unsalted butter
[For Serving:] Guacamole, salsa, chopped scallions and sour cream for serving

Steps:

  • Arrange the asparagus in a microwave-safe dish, cover and microwave on high until crisp-tender, about 2 minutes. (If you don?t have a microwave, you can steam the asparagus instead.) Brush asparagus with 1 tablespoon of the oil.
  • Heat a grill pan over medium heat. Grill the asparagus, flipping occasionally, until tender and lightly charred, about 5 minutes. Cut asparagus in half crosswise and then slice on the bias into 1-inch pieces. Sprinkle with salt and pepper.
  • Heat the remaining 1 tablespoon of oil in a large skillet over medium-high heat. Add the peppers and cook, stirring frequently, until tender and slightly charred, 8 to 10 minutes. Transfer to a bowl and stir in 1/2 teaspoon salt and a few grinds of pepper.
  • Lay a tortilla on a work surface and top evenly with 1/2 cup shredded cheese. Add 1/4 of the asparagus and 1/4 of the peppers. Fold tortilla in half to enclose fillings. Repeat with remaining tortillas and ingredients.
  • Melt 1/2 tablespoon of the butter in a large non-stick or cast-iron skillet over medium heat. Cook the quesadilla, flipping once, until the cheese is melted and it is golden brown on both sides, about 3 minutes per side. Remove to a cutting board and repeat with the remaining quesadillas.
  • Cut into triangles and serve topped with guacamole, salsa, chopped scallions and sour cream.

8 flour tortillas
1 lb asparagus, peeled, and chopped into 2 inch chunks
2 poblano chiles, charred, peeled, deseeded, and chopped (use Anaheims or hot wax peppers if you wish)
1 onion, thinly sliced
1 cup monterey jack cheese, shredded (or to taste)
1/2 cup chicken broth
1 teaspoon cumin
1/2 lime, juice of

Steps:

  • Preheat oven to 325°F.
  • Add the onions into a skillet over medium high heat with a bit of oil for two minutes, then add the white asparagus(I haven't tried green).
  • Cook for five more minutes, stirring often, and then add the chiles, cook for 3 minutes or until the chiles are just soft and giving off their aroma. Squeeze the lime juice over the pan and scrape the bottom of the skillet, to get all the brown bits up(if any).
  • Add the chicken broth, and cumin.
  • Stir, reduce heat and simmer for 5 minutes, or until the asparagus is cooked through.
  • Fill the tortillas with equal parts filling, and cheese, and bake in the oven, flipping once, until browned on both sides, about 5 minutes per side.
  • Serve with pico de gallo, sour cream, and guacamole, with shredded iceberg salad.
  • You can also do it in a pan, but for a family, I find the oven the fastest way to do it.

3 tablespoons olive oil
1 large red onion, cut crosswise into 1/4-inch-thick slices and separated into rings
eight 6- to 7-inch flour tortillas
1/2 pound pepper Jack cheese, coarsely shredded
1/4 cup finely chopped fresh coriander
Cumin Lime Cream
1/2 cup sour cream
1 teaspoon ground cumin
1 teaspoon fresh lime juice

Steps:

  • For Quesadillas:
  • Preheat oven to 500°F.
  • In a large shallow baking pan, toss asparagus with 1 1/2 teaspoons oil and salt and pepper to taste until coated well. In another large shallow baking pan, toss onion with 1 1/2 teaspoons oil until coated well. Roast vegetables in upper and lower thirds of oven, shaking pans occasionally and switching position of pans in oven halfway through baking, until tender and lightly browned, about 10 minutes. Cool vegetables and cut asparagus into 1/2-inch-thick slices.
  • Preheat broiler.
  • Grease a large baking sheet. On sheet, arrange 4 tortillas in one layer and divide vegetables, pepper Jack, and coriander among them. Cover quesadillas with remaining 4 tortillas.
  • Brush top tortillas with remaining 2 tablespoons oil and broil quesadillas about 3 inches from heat until golden brown, about 2 minutes. With a metal spatula, turn quesadillas over and broil until golden brown, about 2 minutes.
  • Make cumin lime cream while quesadillas broil.
  • For Cumin Lime Cream:
  • In a small bowl, whisk together well cream ingredients.
  • Cut quesadillas into wedges and serve with cumin lime cream.

CHICKEN AND ROASTED POBLANO QUESADILLA WITH AVOCADO CREAM

Charred poblano chiles and chicken are sandwiched between warm tortillas loaded with cheese--perfect for dipping in a refreshing avocado-and-lime cream.

2 boneless, skinless chicken thighs
3/4 teaspoon ground cumin
Kosher salt
1/2 cup sour cream
Finely grated zest and juice of 1 lime, plus lime wedges, for serving
1/2 firm, ripe avocado, pitted and peeled
1 small poblano chile, halved lengthwise, stemmed and seeded
4 scallions, thinly sliced
2 cups shredded Mexican cheese blend (8 ounces)
1 small clove garlic, finely grated
8 small corn tortillas
4 tablespoons vegetable oil
Salsa, for serving

Steps:

  • Prick the chicken all over with a fork and put in a medium bowl. Rub the cumin and 3/4 teaspoon salt into the chicken. Add 1/4 cup of the sour cream and half the lime zest and juice and mix until the chicken is coated. Let sit at room temperature for 15 minutes.
  • Blend the avocado, remaining 1/4 cup sour cream, remaining lime zest and juice, 3 tablespoons water and 1/2 teaspoon salt in a blender until very smooth; refrigerate until ready to use.
  • Meanwhile, preheat the broiler. Line a rimmed baking sheet with foil.
  • Put the poblanos skin-side up on the prepared baking sheet and broil until the skin is wrinkled and charred in spots, 2 to 3 minutes. Transfer the poblanos to a medium bowl, cover with plastic wrap and let steam for 5 minutes. Run the poblanos under cold water and remove and discard the skin. Cut the poblanos into small bite-size pieces and return them to the bowl.
  • Transfer the chicken to the baking sheet and broil, turning once, until browned in spots and cooked through, 4 to 5 minutes per side. Let cool for a few minutes. Cut it into small bite-size pieces. Add the chicken and half of the scallions to the bowl with the poblanos and toss to combine. Combine the cheese and garlic in a small bowl.
  • Top 4 tortillas with 1/4 cup of the cheese mixture, one-quarter of the chicken-poblano mixture then 1/4 cup more cheese mixture. Top each with 1 of the remaining 4 tortillas and press lightly.
  • Heat 1 tablespoon of the oil in a large nonstick skillet over medium heat. Add 1 quesadilla to the skillet and cook, turning once, until it is golden and the cheese is melted, 2 to 3 minutes per side. Transfer to a baking sheet or large plate and repeat with the remaining oil and quesadillas. Cut each quesadilla into quarters and sprinkle with the remaining scallions. Serve with a dollop of the avocado cream, lime wedges and salsa on the side.

4 tablespoons grated part skim milk mozzarella
1/2 teaspoon olive oil
1 onion, diced
2 cloves fresh garlic, minced
1 potato, peeled, diced, and cooked until tender
1 poblano pepper, seeded and toasted
1 scallion, sliced
1/2 zucchini, cubed
1 teaspoon chopped fresh oregano leaves

6 (10-inch) flour tortillas, heated
1 cup Ancho Chile Salsa, recipe follows
6 ancho chiles, washed and seeded
1 chile de arbol, toasted
1 onion, chopped
4 tomatoes, chopped

2 cups water
2 cloves garlic, chopped
2 tablespoons chopped fresh cilantro leaves

Steps:

  • In a medium size bowl mix the cheeses together and set aside, covered, in the refrigerator until ready to use. In a hot saute pan over medium heat 1/2 teaspoon of the olive oil. When the oil is hot, add the onion, garlic, potato, pepper, scallion, and zucchini and saute for 3 minutes, stirring. Fold in the herbs. Set aside. Place the tortillas in a hot dry saute pan over medium heat or on a hot grill and spoon 2 tablespoons of the veggie saute 2 tablespoons of the mixed cheeses on to each tortilla. Fold the tortillas in half and toast each side for 1 to 2 minutes until the cheese starts to melt. Cut each tortilla in thirds and arrange on a serving plate garnished with Ancho Chile Salsa and cilantro. Serve warm.
  • Begin by rinsing and seeding the chiles. Add the chiles, onion, tomatoes and oregano in a saucepan with the water. Bring to a boil reduce heat to a simmer. Simmer 20 minutes or until the tomatoes are soft. Strain cooked ingredients from the cooking liquid. Toss liquids and place the cooked ingredients plus the garlic into a blender and puree until smooth. Add cilantro if desired, season with salt, to taste, and set aside until ready to use. Serve hot or cold.

  • Remove half to a med. bowl and add shrimp (except reserve 3-4 for each tortilla), cilantro and lime juice. Toss together.
  • Heat a flat griddle.
  • On a cutting board or plate, put the other quarter of the cheese mixture from the pan divided, onto half of the two tortillas.
  • Place a layer of roasted pablanos over the cheese mixture.
  • Put half of the shrimp mixture on each of the tortillas and add the remaining cheese.
  • Fold over the blank half of the tortilla over the stuffing.
  • Place onto heated, oiled griddle for 3-4 minutes until crisp.
  • Turn over and another 3-4 minutes on the other side.
  • Serve on a plate with a little of the remaining cheese sauce and 3-4 whole shrimp on the top.

2 teaspoons oil (such as olive, grapeseed or sunflower oil)
1 (8-inch) flour tortilla

Steps:

  • Place a medium nonstick skillet over medium heat, then add the oil. Let oil heat up for 20 seconds, swirling the pan around so the oil coats the bottom.

2 pre-cooked andouille sausages (can be chicken or pork)
1 medium sized poblano pepper
1/2 red bell pepper
1/2 large red onion
1/2 cup corn
4 large flour tortillas
2 tablespoons canola oil
2 cups colby cheese, shredded
sour cream (optional)
salsa (optional)

Steps:

  • Finely chop first 4 ingredients to a uniform size (no bigger than 1/4 inch pieces).
  • Heat 1 tablespoon of the oil in a skillet over medium heat.
  • Add sausage, onion, peppers and corn. Saute about 15 minutes, stirring frequently.
  • Once sausage mixture is done, remove from the heat. Now its time to fill your tortillas.
  • Spread a quarter of the sausage mixture onto half of a tortilla. Top with 1/2 cup cheese. Fold over the tortilla, making a half moon shape.
  • Repeat with the other 3 tortillas.
  • Heat the remaining oil in a large skillet over medium high heat. When hot carefully place two quesadillas in the pan. They can brown quickly so make sure to keep an eye on them so they don't burn! After about 5 min carefully flip the quesadillas. Once crisp on both sides remove to a plate and continue with the remaining 2.
  • To serve, slice each quesadilla into 4 wedges and top with sour cream and/or salsa if desired.
