KEY LIME PIE COCKTAIL RECIPE BY TASTY
Tangy Key lime, refreshing pineapple juice, and rich coconut cream paired with vanilla vodka and dark rum make this Key lime pie cocktail something to dream about. The rim of the glass is coated with crushed graham crackers and toasted coconut for pie-crust vibes, and the drink is topped off with a freshly grated nutmeg for a spiced finish. - In a small, shallow dish wide enough to fit the rim of a martini glass, mix the crushed graham crackers with the toasted coconut flakes. Wet the rim of 2 martini glasses with the Key lime wedge. Dip the rims of the glasses in the graham cracker mixture.
- Fill a cocktail shaker halfway with ice, then add the rum, vodka, coconut cream, pineapple juice, Key lime juice, and simple syrup. Shake well, then strain the cocktail evenly between the prepared glasses. Garnish with freshly grated nutmeg

Steps:
- Cut the lime into wedges and add to a cocktail shaker.
- Add sugar and muddle well to extract the lime juice.
- Strain into a glass and add vodka and stir well.
- Add ice and top off with Sprite or 7-Up.

Steps:
- Pour the graham cracker crumbs in a shallow dish. Rub a lime wedge around the edge of a martini glass and roll the edge in the graham cracker crumbs. Chill the glass for 30 minutes or until ready to serve.
- Combine the vanilla vodka, key lime liqueur, pineapple juice, and cream in a shaker. Fill the shaker half full with ice and shake until well blended. Pour into prepared martini glass, garnish with a lime wedge and serve immediately.

- Gather the ingredients.
- Rim a chilled cocktail glass with finely crushed graham crackers (wet the rim with a citrus wedge or quick dunk in a dish of lime cordial).
- In a cocktail shaker, pour the vodka, triple sec, pineapple juice, and lime cordial. Fill with ice.

- Preheat the oven to 350 degrees F.
- For the crust: Combine the graham crumbs, butter, honey, and brown sugar in a bowl. Do not over mix as it will make the crust tough.
- Evenly spread the mixture on the bottom and up the sides of an ungreased 9-inch pie tin or glass pie dish. Bake for 8 to 10 minutes. Remove from the oven, place on a cooling rack, and let rest.
- For the filling: Combine the cold whipping cream, confectioners' sugar, and vanilla and whip, using a hand mixer or stand mixer, until peaks form.
- Combine the sweetened condensed milk, diced pineapple, shredded coconut, and 4 ounces of the whipped cream mixture in a 6-quart mixing bowl and whisk well. (Place the balance of the whipped cream mixture in the fridge to keep it stiff.) Once well incorporated, slowly add the Key lime juice in intervals, do not add all at once. The juice will have a chemical reaction with the cream, causing it to thicken. Do not over mix as it will break down the mixture, causing it to become runny. The mixture will begin to thicken (you want it thick).
- Once the crust has cooled, spoon the pie filling into the center of the crust and spread evenly towards the edges with a pastry knife or the spoon. Place into the fridge for 2 hours to completely set up.
- Fill a pastry bag 1/2 way and squeeze dollops of the remaining whipped cream around the border of the cooled pie. Sprinkle coconut chips on top of the whipped cream border. Make a pot of coffee, cut the pie into your desired portion size, and sit down and enjoy!
