PHYLLO WRAPPED HUEVOS RANCHEROS

2 tablespoons butter
8 eggs, lightly scrambled
6 sheets phyllo dough
Bread crumbs
1/2 stick melted butter
1 (14-ounce) can black beans, drained and divided
1 cup crumbled queso fresco or Monterey Jack cheese
3 tablespoons olive oil
1/2 onion, diced
2 tablespoons minced garlic
1 (15-ounce) can diced fire roasted tomatoes
1 (4-ounce) can diced green Anaheim chiles
1 chipotle in adobo sauce, minced
1 teaspoon adobo sauce
1 teaspoon ground cumin
1 teaspoon salt
1 teaspoon freshly ground black pepper
1/2 bunch cilantro, leaves chopped, for garnish
2 ripe avocados, halved, pitted and flesh diced
1 lime, zested
2 limes, juiced
2 tablespoons chopped cilantro leaves
1 teaspoon salt
1 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • Add 2 tablespoons of butter to a large skillet over medium heat. Add the eggs and stir with a rubber spatula until halfway cooked. Remove from the heat. Cook's Note: Eggs will cook more later in the oven.
  • Lay the phyllo dough out on a parchment lined sheet pan and cover with a slightly damp towel.
  • Sprinkle a large cutting board lightly with bread crumbs (this will help prevent phyllo from sticking and also give it an extra crunch in the finished product). Take 1 sheet of phyllo and lay it out on the board. Brush the phyllo sheet with melted butter. Put another piece on top and brush with butter. Repeat with remaining phyllo sheets.
  • Working lengthwise, spread eggs onto the phyllo leaving 2-inches on each edge. Top with 1/2 can of black beans and 1 cup of crumbled queso fresco. Roll the phyllo into a pinwheel and glue the final edge with melted butter. Brush the entire log with melted butter. Put on a parchment lined quarter sheet pan and bake until nicely browned, about 10 to 12 minutes. Remove from the oven and allow to cool slightly.
  • In a medium saucepan over medium-high heat, add the oil. Stir in the onion and garlic and cook until softened. Add tomatoes, chiles, chipotle and adobe sauce and cook for 2 minutes. Stir in the spices and cook until well incorporated and slightly reduced, about 3 to 4 minutes. Garnish with cilantro and keep warm.
  • Guacamole:
  • Mix all the ingredients together in a small bowl.
  • To assemble dish:
  • Slice the baked phyllo into disks and arrange on a serving platter. Top with the sauce and lime guacamole. Sprinkle the remaining black beans on top and around the rolls before serving.

15 small corn tortillas, each cut into 6 wedges
3 tablespoons vegetable oil
1 1/2 teaspoons ground cumin
1/2 teaspoon chili powder
Kosher salt and freshly ground pepper
1 dried ancho chile pepper, stemmed
1 14.5-ounce can tomato sauce
1 scallion, roughly chopped
1 jalapeño pepper, thinly sliced
1/2 cup packed fresh cilantro, plus more for topping
1 16-ounce can chili beans in sauce
12 large eggs
1 ripe avocado, chopped
1/2 cup crumbled Cotija cheese
Lime wedges, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with foil. Add the tortilla wedges, drizzle with the vegetable oil and sprinkle with 1/2 teaspoon cumin, the chili powder, 1/2 teaspoon salt and a few grinds of pepper; toss until well coated. Spread on the baking sheet in a single layer and bake, stirring occasionally, until crisp, 20 to 30 minutes.
  • Meanwhile, combine the ancho chile and 1/4 cup hot water in a blender. Let stand until the chile is softened, about 5 minutes. Add the tomato sauce, scallion, half the jalapeño slices, the cilantro, remaining 1 teaspoon cumin, ½ teaspoon salt and a few grinds of pepper; puree until smooth. Lightly mash the chili beans in their sauce in a medium bowl until chunky.
  • Remove the tortillas from the oven. Drizzle with about 1/2 cup of the ancho sauce and top evenly with the mashed beans. Crack the eggs on top, spacing them out; season with salt and pepper. Gently run a rubber spatula through any thick egg whites to break them up and help the eggs cook more evenly. Bake until the egg whites are opaque, 15 to 20 minutes.
  • Drizzle with 1 cup more ancho sauce. Top with the avocado, cheese, remaining jalapeño slices and more cilantro; serve with lime wedges and the remaining ancho sauce.

Steps:

  • Fry corn tortillas in 1-inch of hot oil until crispy. Set aside on paper towels to drain excess oil. Warm the black beans in a saucepan over medium heat. Add tomatoes, onion, cilantro and salt and pepper to saucepan. Reduce sauce over medium heat until flavors meld and ingredients come together. Fry eggs over-easy or over-hard in fry pan.
  • To assemble: Plate corn tortillas. Top with black beans. Place eggs over black beans. Add rancheros sauce on top of eggs. Garnish top with avocado, sprig of cilantro and a side of sour cream.

5 pounds organic pinto beans
1 whole onion, quartered
1 1/2 tablespoons sea salt
10 pounds tomatillos
4 ounces extra-virgin olive oil
2 pounds sweet yellow onions, medium diced
1 ounce garlic, finely diced
3 pounds Roma tomatoes, chopped
1 1/2 pounds jalapenos, finely diced
1 pound salted butter, preferably Challenge
4 ounces fresh cilantro, finely chopped, plus additional for sprinkling
1 tablespoon coarse ground black pepper
2 corn tortillas
2 eggs, preferably cage-free
1/2 ounce crumbled Cotija
Serving suggestions: home fries or hash browns

Steps:

  • Rinse pinto beans well and remove any beans that don't appear fresh or cleaned. Soak the beans in hot water for at least 2 hours and up to 4 hours.
  • Place beans with their soaking liquid, quartered onion and 1/2 tablespoon sea salt in a stockpot. Bring to boil, then reduce heat and simmer, checking occasionally to make sure they are fully covered with water, until beans are soft, about 2 hours. Remove to hotel pans or wide, shallow containers and chill until fully cooled, then cover with plastic and chill overnight.
  • Preheat the oven to 350 degrees F.
  • Remove husks from tomatillos and rinse well, then pat dry. Put in a large stainless steel bowl and lightly coat with 2 ounces olive oil. Spread on a baking sheet and roast until skins appear blistered, about 30 minutes. Let cool completely in the refrigerator, then puree finely (but do not let the seeds break down) in a robot coupe or food processor.
  • Put remaining 2 ounces olive oil, diced onions and garlic in a stockpot and sautee until translucent, being sure not to let the garlic burn. Add tomatoes and jalapenos and cook, stirring occasionally, until cooked down somewhat. Add pureed tomatillos and 4 cups water and let cook until it starts to simmer. Add butter and cook, stirring, until it melts and is fully incorporated, about 10 minutes. Add cilantro, pepper and 1/2 tablespoon salt and turn off heat.
  • Reheat pinto beans in a stockpot, then lightly mash. Add remaining 1/2 tablespoon salt. Remove from heat.
  • Grill corn tortillas on a hot flat top or griddle until they start to mark. Cook eggs over medium and place on top of the grilled tortillas on a dinner plate. Scoop 4 ounces ranchero sauce over eggs. Serve with a 4-ounce portion pinto beans in a ramekin. Sprinkle Cotija on top and garnish ranchero with a pinch of cilantro. Serve with home fries or hash browns.

8 jumbo eggs
1 tablespoon olive oil
1/2 pound Mexican chorizo, casings removed
1/2 cup chopped Vidalia onions
Kosher salt
Pinch of cumin
1 clove garlic, minced
One 16-ounce can refried beans
6 to 8 pickled jalapeno slices, finely chopped
Pickled jalapeno juice, optional
Eight 6-inch corn tortillas
Shredded Monterey Jack, for serving
Pico de gallo, for serving
Kosher salt and freshly cracked coarse black pepper
Chopped fresh cilantro, for serving
Lime wedges, for serving
Hot sauce, for serving

Steps:

  • Make the eggs: In a large nonstick pan or two medium nonstick pans, add the butter (do the division if using 2 pans). Turn the pan on low and allow the butter to gently melt without browning. Once it is melted, tilt and swirl the pan to coat the bottom and the sides (this will help you slide the eggs out later).
  • Ok, pay close attention: We are going to Frankenyolk these eggs. That means you'll make one egg have two yolks. (If you get lucky and get a double-yolk jumbo egg, go buy a lottery ticket.) Crack one egg into the pan. Then separate the second egg over a bowl, leaving just the yolk in one side of the shell and the whites in the bowl. Take the yolk in the shell and, using the edge of the shell, gently break the thick clear albumen (egg white) of the egg already in the pan and pour the separated yolk right next to the other yolk. Keep the yolks next to each other so they cook at the same time. Repeat this process with the rest of the eggs so you have 4 eggs with 2 yolks each. What to do with the whites? Make an egg white omelet the next day if you feel guilty. If not, how about a meringue pie for dessert tonight? Haaaiii!!
  • Cook the eggs on medium-low heat until the whites are cooked through and the yolks are still runny. This takes a good 8 to 10 minutes, so be patient and work on the other steps. Brown edges on a fried egg are just wrong in my book. If the eggs finish before the other steps, just remove the pan(s) from the heat.
  • Cook the refried beans: In a medium pot, add the oil and chorizo and cook on medium heat, using a wavy potato masher or wooden spoon to break the chorizo into bits to create crumbles like ground beef. Once the orange fat is rendered, add the onions, a tiny pinch of salt and cumin and the garlic and cook, stirring them into the chorizo. When the onions are tender and stained with the fat of the chorizo, add the refried beans and chopped pickled jalapenos. Cook until the beans are softened and loose. If they dry up a bit, add a splash of water or, if you are feeling slightly dangerous, add a bit of the pickling juice from the jalapenos. Keep warm.
  • Char the tortillas: In a large dry pan (cast-iron, please) or griddle over high heat, add the stack of tortillas. Cook and flip in a way that once the bottom tortilla is charred, it moves to the top of the stack, flipped. Continue to flip and alternate sides until each tortilla has had a date with the bottom of the pan. Time to build your plate!
  • Build your plate: Place equal amount of the refried beans on each plate. Slightly level them out with the back of your spoon. Sprinkle each with an equal amount of cheese and then slide a double-yolk sunny-side up egg on top. Sprinkle some pico de gallo around the edges so you don't mess with the yolks. Season each yolk with salt and a crack of black pepper. Sprinkle the entire plate with cilantro and spritz with lime juice and a shake of hot sauce. Serve each plate with 2 folded charred tortillas.

¼ cup chopped green bell pepper
1 medium tomato, chopped

4 eggs
1 (14 ounce) can refried beans, heated
¾ cup shredded Mexican cheese blend
1 jalapeno pepper, chopped

½ avocado, sliced

Steps:

  • Heat 1/2 of the oil in a pan over medium heat. Add onion and bell pepper; cook and stir until softened, about 5 minutes. Add tomato, garlic, cayenne pepper, salt, and pepper. Cook for 2 minutes more. Set salsa aside.
  • Heat about 1 teaspoon oil in a pan. Add tortillas one at a time; cook until heated through, about 20 seconds each. Keep warm.
  • Heat remaining oil in the same pan over medium-high heat. Pour in eggs. Cook until set to your desired consistency, 4 to 6 minutes.
  • Spread a thin layer of refried beans onto each tortilla. Add a spoonful of salsa. Sprinkle with shredded cheese. Add a fried egg and sprinkle some more cheese, chopped jalapeno, and cilantro on top. Serve immediately with avocado and remaining refried beans and cheese on the side.

3/4 cup chopped sweet red pepper

2 halibut fillets (4 ounces each)

1 medium jalapeno pepper, chopped
2 cloves garlic; 1 chopped, 1 smashed
1/2 teaspoon hot sauce

2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 15 .5-ounce can black beans, drained and rinsed
4 large eggs
4 6 -inch corn tortillas, warmed
1/2 cup crumbled feta cheese
1/4 cup chopped fresh cilantro

Steps:

  • Prepare the salsa: Set a grater in a large bowl; grate the tomatoes and onion into the bowl.
  • Add the jalapeno, chopped garlic, hot sauce, cumin and salt and pepper to taste. Heat a medium skillet over low heat and add 2 teaspoons olive oil. Fry the salsa in the oil until it thickens slightly, 3 minutes. Remove to a bowl and set aside. Add the beans to the same pan along with the smashed garlic, 1/2 cup warm water and a pinch of salt; cook over low heat until warmed through, smashing slightly with a fork.
  • Meanwhile, heat the remaining 2 tablespoons oil in another skillet. Fry the eggs sunny-side up; season with pepper.

12 eggs
Refried beans
8 ounces ground beef
Corn oil
1 1/2 pints (3 cups) water
2 medium tomatoes, chopped
1 large roasted green chile, chopped
1/2 onion, finely chopped
1 clove garlic, crushed
Dash Worcestershire sauce
Salt
Black pepper, freshly ground
2 tablespoons corn flour
6 corn tortillas

Steps:

  • To make the chili sauce, brown the beef in a little oil over medium heat. Add water, tomatoes, green chile, onion, garlic, Worcestershire, and salt and pepper to taste; stir. Bring to the boil, then simmer for 10 to 15 minutes. Add the cornflour (mixed with a little water), stir well and cook for 10 minutes more. ( The sauce keeps in the fridge and can be frozen. It may need more liquid if too thick after thawing). Keep the sauce hot.
  • Heat about 2 inches of corn oil in a large frying pan and cook the tortillas, one at a time, for a few seconds on each side (do not let them become crisp). Drain on a paper towel.
  • Pour off most of the oil, then return the pan to a low heat. Fry the eggs 2 or 3 at a time. Top each tortilla with 2 eggs and pour a ladle of green chili sauce over each portion. Serve with refried beans.

2 tablespoons coarsely chopped onion

1 cup shredded Manchego cheese
8 tostada shells, warmed

This is a delicious brunch dish where eggs are poached in salsa, served on corn tortillas, and topped with cheese, sour cream, and black olives. This recipe would also be good with fresh avocado or guacamole. If you use gluten-free tortillas, which are easy to find, it would be gluten free. Hold the cheese and sour cream and it is dairy free!
