TERIYAKI CHICKEN AND BROCCOLI WITH BUTTERNUT SQUASH "RICE"

Teriyaki Chicken and Broccoli with Butternut Squash

Provided by Ali Maffucci

Number Of Ingredients 10

6 chicken breast tenderloins
1/4 cup teriyaki sauce + 2 tbsp (Annie Chunn's)
2 tbsp virgin coconut oil
1 tbsp minced garlic
1 butternut squash (peeled, Blade C)
3/4 cup chicken broth (low-sodium)
1 tsp soy sauce
1.5 cups broccoli florets
1/3 cup chopped scallions to garnish
1/4 tsp sesame seeds to garnish

Steps:

  • Preheat the oven to 350 degrees. Place the chicken breast tenderloins on a baking tray and smother in teriyaki sauce. With your hands, massage the sauce into the chicken. Let rest until the oven is preheated and then bake for 15-17 minutes or until chicken is white on the inside, no longer pink. Set aside when done.
  • Place your butternut squash noodles in a food processor and pulse until the squash is made into rice-like bits. Set aside.
  • Place a large skillet over medium heat. Add in 1 tbsp of coconut oil. Then, add in the garlic. Let garlic cook for 30 seconds and then add in the butternut squash rice. Stir and cook for about 2 minutes and then add in the chicken broth. Stir and let reduce. Once the broth reduces, taste. If the rice is still crunchy, add in another 1/4 cup and let reduce. Taste and repeat with more chicken broth, if needed. When done, add in the soy sauce.
  • While you start to cook the rice, place a medium skillet over medium heat, add in 1 tbsp of coconut oil and add in the broccoli. Cook, tossing occasionally for 5-7 minutes or until broccoli begins to brown on sides.
  • When the rice and chicken are done, add the chicken to the broccoli skillet and turn the heat back on. Add in the remaining teriyaki sauce and mix together for 2 minutes to heat up the broccoli.
  • Portion the rice out into 4 bowls and top with broccoli and chicken. Garnish with scallions and sesame seeds!

Time 40m

Number Of Ingredients 15

1 cup low sodium soy sauce
4-5 tablespoons honey (depending on how sweet you like it)
3 1/2 tablespoons rice wine vinegar
1 1/2 teaspoons sesame oil (plus more for drizzling on vegetables)
3 garlic cloves (minced)

Additional vegetables (optional)
1/4 cup edamame beans (1/4 cup pineapple chunks)
Green onions and sesame seeds for garnish

Return to the oven and bake for another 15-20 minutes, or until the chicken is cooked through and juices run clear.**
  • Remove pan from oven, slice chicken into strips and drizzle with remaining sauce. Serve over rice or quinoa and garnish with green onions and sesame seeds, if desired.

SWEET-AND-SPICY ROASTED TOFU AND SQUASH

Sweet-and-Spicy Roasted Tofu and Squash image

This is a meal with complex flavors and a variety of textures: velvety from the honey-roasted squash, tender and juicy from the tofu, with the occasional crunch from the sesame-seed garnish and a slight chew from the squash peel. I like to serve this dish with more hot sauce on the side, preferably over brown rice or lightly dressed baby spinach, though it's also good served all alone. As long as the squash and the tofu have each other, that's all they really need.

Provided by Melissa Clark

Categories     dinner, main course

Time 1h

Yield 2 to 4 servings

Number Of Ingredients 9

1 (14-ounce) package extra-firm tofu, drained
2 pounds dumpling, delicata or acorn squash, halved and seeded
1 1/2 tablespoons soy sauce, more to taste
1/2 teaspoon sriracha or other hot sauce
Kosher salt, and black pepper
1/4 cup peanut oil
1 tablespoon honey
1 tablespoon toasted sesame seeds
2 tablespoons chopped celery leaves or cilantro

Steps:

  • Drain tofu and slice into 1/2-inch-thick slabs. Cut each slab in half. Arrange tofu on a large baking sheet or several plates lined with several layers of paper towels. Place another layer of paper towels on top and weigh down tofu with another baking sheet or more plates topped with a heavy cookbook or cans. Let stand for 20 minutes. Pat tofu dry.
  • While tofu drains, heat oven to 425 degrees. Cut squash into 1/2-inch-thick half-moons. Cut each slice in half again.
  • In a small bowl, whisk together soy sauce, sriracha and a pinch of salt. Whisk in peanut oil. Spoon 3 tablespoons of the mixture into a separate bowl and reserve. Whisk honey into the original mixture. Spread squash out on a large baking sheet and pour honey-soy mixture over it. Sprinkle squash lightly with salt and pepper and toss well. Roast until bottoms are golden brown, about 20 minutes. Flip and roast until uniformly golden and soft, about 10 minutes more. Transfer squash to a large bowl.
  • Adjust the heat to broil and position a rack just below the heating element. Toss tofu with reserved soy mixture and arrange in a single layer on a baking sheet (you can use the same one you used for the squash). Cook until crispy and golden, about 2 minutes per side. Toss hot tofu with squash, sesame seeds and celery leaves, adding more soy sauce if you like.

ROASTED CHICKEN THIGHS WITH WINTER SQUASH

Roasted Chicken Thighs With Winter Squash image

Roasted chicken thighs can be the juicy, meaty center of many weeknight meals. Add delicata squash, quickly tossed in a maple syrup-butter glaze, along with slices of lemon and sage, and you have a something more unusual, an interplay of flavors that don't generally meet on the same sheet pan. This recipe is a little too fussy to count as a fast weeknight dish, but there is nothing difficult about any of the steps. And it's a fine introduction to delicata squash, if you haven't cooked with them yet. Unlike many other winter squash varieties, they have a thin skin and don't need to be peeled (just cut them in half and remove the seeds), making them as easy to prepare as they are sweet.
