1 cup pecan halves (4 ounces; 115g)
8 ounces (225g) blue cheese, crumbled
1 cup sour cream (8 ounces; 225g)
1/2 cup mayonnaise (4 ounces; 115g)
Juice of 1 lemon
2 medium cloves garlic, minced
1 teaspoon fresh thyme leaves, minced
2 tablespoons chopped flat-leaf parsley leaves and tender stems, plus more to garnish
Kosher salt and freshly ground black pepper
Crackers, pretzels, bread, sliced fruit, and/or sliced raw vegetables, for serving

Steps:

  • Preheat oven to 350°F (180°C). Spread pecans on a baking sheet and bake until fragrant and toasted, about 4 minutes.
  • Meanwhile, in a medium bowl, use a fork to mash blue cheese crumbles with sour cream until only small chunks remain. Stir in mayonnaise, lemon juice, garlic, thyme, and parsley. Set aside.
  • Chop toasted pecans and mix them into the dip, reserving about 1 tablespoon for garnish. Season dip with salt and pepper.
  • Transfer dip to a serving bowl and top with remaining pecans and chopped parsley. Serve dip at room temperature with crackers, pretzels, bread, fruit, and/or vegetables.

1/4 cup toasted pecans
1/2 lb cream cheese, cut into 1-inch cubes
2 tablespoons blue cheese

Steps:

  • Place nuts in food processor and process until finely chopped; it takes about 10 seconds.
  • Add both cheeses.
  • Process until very smooth; again, it should only take about 10 seconds.
  • Pack into a bowl and refrigerate until serving; this is best if allowed to chill for a few hours.
  • A dribble of brandy or port added when you add the cheeses doesn't hurt.

  • Mix reduced-fat cream cheese and sour cream in medium bowl until blended.
  • Add remaining ingredients; mix well.
  • Refrigerate 2 hours.

1 cup chopped pecans
2 tablespoons butter
2 (8 ounce) packages cream cheese, softened
2 (4 ounce) packages blue cheese
1 cup breadcrumbs
1/4 cup chopped fresh parsley
1 tablespoon butter, melted

Steps:

  • Toast pecans in 2 T butter in a skillet over medium heat, stirring constantly. Remove pecans from heat; cool.
  • Position knife blade in food processor bowl; add cheeses. Process until smooth; stopping once to scrape down side.
  • Stir in pecans. Spoon mixture into a greased 1 1/2 quart baking dish.
  • Combine breadcrumbs, parsley and 1 T melted butter; sprinkle crumb mixture over cheese mixture. Bake, uncovered at 350°F for 20 minutes. Serve warm.

12 ounces salad greens (spring mix)
1/2 cup dried cherries
1/2 cup pecan halves
6 ounces blue cheese chunks
2 whole apples, cored and sliced very thin
1/4 cup olive oil
1 tablespoon (heaping) Dijon
1 tablespoon maple syrup
1 teaspoon apple cider vinegar (or more to taste)
Salt and freshly ground black pepper

Steps:

  • Add the greens, cherries, pecans, cheese and apples into a large salad bowl.
  • Mix the olive oil, Dijon, maple syrup and vinegar in a small jar and sprinkle with and salt and pepper. Put the lid on the jar and shake well to mix.
  • Pour a little of the salad dressing over the top of the salad and toss to combine. Taste the salad and add more dressing to taste.

4 bacon slices
3/4 cup pecan pieces
2 cups firmly packed grated cheddar
4 ounces cream cheese, room temperature
2 tablespoons mayonnaise
1/8 teaspoon hot pepper sauce (such as Tabasco)
1/8 teaspoon Worcestershire sauce
3 green onions, sliced
Crackers

Steps:

  • Fry bacon in heavy large skillet over medium heat until crisp. Transfer to paper towel to cool. Add pecans to drippings and cook until golden brown, stirring occasionally, about 5 minutes. Transfer to paper towel to cool. Season with salt.
  • Blend cheddar, cream cheese, mayonnaise, hot pepper sauce and Worcestershire sauce in processor until smooth. Transfer to bowl and stir in green onions. Crumble bacon and add to mixture. Line cookie sheet with plastic, forming 8-inch strip. Freeze 20 minutes to firm slightly. Using plastic as aid, form log shape. Remove plastic; roll log in pecans to coat. Wrap and refrigerate until firm. (Can be prepared 1 week ahead.) Serve with crackers.

1 8-ounce package cream cheese, room temperature
2 cups purchased refrigerated blue cheese dressing
1 1/3 cups chopped pecans, toasted
1/2 cup crumbled blue cheese (about 4 ounces)
Assorted cut-up fresh vegetables and fruits (such as carrots, bell peppers, celery, broccoli, apples and small clusters of grapes)

Steps:

  • Beat cream cheese in medium bowl until smooth. Beat in dressing. Stir in 1 cup pecans and crumbled blue cheese. Season to taste with salt and pepper. Transfer dip to decorative bowl. Sprinkle remaining pecans around edges of dip. (Can be made 1 day ahead. Cover and chill.)
  • Set dip in center of platter. Surround with cut-up vegetables and fruits; serve.

1/4 teaspoon white pepper
1/2 cup chopped walnuts, toasted
Assorted crackers

Steps:

  • In a small skillet, saute shallots in butter until tender. Remove from the heat; cool. , Meanwhile, in a large bowl, combine the cheeses, sour cream, Cognac, salt and pepper. Add shallots and mix well. Line a 3-cup bowl with plastic wrap. Spread cheese mixture into prepared bowl. Cover and refrigerate for at least 1 hour., Unmold onto a serving plate; garnish with walnuts. Serve with crackers.
