OATMEAL PEAR CHOCOLATE CHIP COOKIES

Number Of Ingredients 12

2 c all purpose flour
2 tsp baking powder
2 tsp cinnamon (i use 1 tbl)
1 tsp salt
1 tsp nutmeg
1 c shortening, butter flavor
1 1/2 c sugar
4 eggs
2 c oats, quick cooking
2 c pears without skin (chopped)
1 c chocolate chips
1 c walnut pieces

Steps:

  • 1. Preheat oven to 350 degrees F.
  • 2. In a large bowl, cream together the shortening and sugar. Beat in the eggs until well blended. Combine the flour, baking powder, cinnamon, nutmeg, and salt; stir into the sugar mixture until well blended. Fold in the walnuts, oats, pears and chocolate chips. Drop dough by spoonfuls about 2 inches onto ungreased cookie sheets.
  • 3. Bake for 12 to 15 minutes (or until lightly browned) in the preheated oven. Let cool on wire rack

2 1/2 cups Gold Medal™ all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup butter, softened
1 1/2 cups packed brown sugar
1/2 cup granulated sugar
2 eggs
2 teaspoons vanilla
2 cups old-fashioned oats (do not use quick-cooking)
1 cup chopped walnuts, toasted
1 cup chopped dried pear

Steps:

  • Heat oven to 350°F. Line cookie sheets with cooking parchment paper.
  • In medium bowl, mix flour, baking soda and salt; set aside. In large bowl, beat butter, brown sugar and granulated sugar with electric mixer until creamy. Add eggs and vanilla, beating well. Beat in flour mixture until blended. Stir in oats. Fold in walnuts and dried pear. Onto cookie sheets, drop dough by rounded tablespoonfuls 2 inches apart.
  • Bake 12 minutes or until brown around edges. Cool 2 minutes; remove from cookie sheets to cooling racks.

4 to 5 ripe Bartlett or Anjou pears
1/4 cup cranberries, fresh or dried
2 tablespoons sugar
1/3 cup all-purpose flour
1/3 cup rolled oats, uncooked
1/4 cup dark brown sugar
1 tablespoon granulated sugar
1/4 teaspoon cinnamon
Pinch nutmeg and salt
1/2 cup or 1 stick unsalted butter, melted
Heavy whipping cream or ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F.
  • Peel, core, and thickly slice the pears. Toss them with the 2 tablespoons sugar and the cranberries and turn them into a deep, buttered 2-quart baking dish. The fruit should be at least 2 1/2-inches deep in the pan; add more fruit, if necessary.
  • For the topping, in a bowl, stir together the flour, oats, sugars, cinnamon, nutmeg, and salt. Drizzle in the melted butter tossing the ingredients with a fork to blend. Be careful not to over mix because you want a loose crumbly mixture, not a bound-together ball of topping. Sprinkle the topping over the pears.
  • Bake for 30 minutes, until pears are tender and topping is browned. Serve warm with heavy cream or ice cream.

1/2 cup cold butter, cut into small pieces
1 egg
2 cups finely chopped peeled pears (2 medium)
1 cup semisweet chocolate chips (6 oz)

Steps:

  • Heat oven to 350°F. Line 11x7-inch pan with foil, leaving 1 inch of foil overhanging at 2 opposite sides of pan; spray foil with cooking spray.
  • In large bowl, place cookie mix. Cut in butter, using pastry blender (or pulling 2 table knives through mixture in opposite directions), until mixture looks like coarse crumbs. Stir in egg until mixture is moistened.
  • Reserve 1 1/2 cups cookie mixture. Use slightly damp fingers to press remaining cookie mixture in bottom of baking pan (mixture will be sticky). Bake 20 minutes. Sprinkle pears over partially baked crust. Top with chocolate chips and reserved cookie mixture.
  • Bake 20 to 25 minutes or until golden brown. Cool completely in pan on cooling rack, about 2 hours. Use foil to lift from pan. Cut into 4 rows by 4 rows.

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
