SOUR CHERRY OAT CRISP

Sour Cherry Oat Crisp image

This was out of inspiration for something to do with my fresh sour cherries. Only got a few this year so wanted to make something really tasty! I think this did it. Very simple and can be adjusted to your needs if fresh sour cherries are not available, but I do not recommend using Bing or sweet red cherries for this. Use sour cherries in the can if you can find them. Enjoy! Refrigerate when completely cooled.

Time 6h25m

Yield 10

Number Of Ingredients 13

1 (9 inch) prepared pastry for a single-crust pie
4 cups fresh sour cherries, pitted
1 cup white sugar
4 tablespoons cornstarch, or more as needed
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 teaspoon almond extract
1 cup packed light brown sugar
⅔ cup all-purpose flour
⅔ cup rolled oats, or more to taste
1 tablespoon ground cinnamon
½ teaspoon salt
½ cup butter, cut into small cubes

Steps:

  • Line the bottom of an oven with aluminum foil to catch spills. Preheat the oven to 400 degrees F (200 degrees C). Line a 9-inch square baking dish with the pie crust.
  • Place cherries in a bowl. Let sit in the refrigerator for about 4 hours until juices start to come out. Gently press down on top of the cherries to release juice. Pour off 3/4 cup juice, reserving cherries in the bowl.
  • Pour juice into a small saucepan over medium heat. Mix sugar, cornstarch, and cinnamon together. Stir mixture into the juice before it starts to steam. Bring mixture to a boil, stirring constantly. Remove from heat and keep stirring until mixture starts to thicken, 3 to 5 minutes. Stir in vanilla and almond extracts.
  • Pour juice mixture into the bowl with the cherries; stir until combined. Pour mixture into the prepared crust.
  • Bake in the preheated oven for 40 minutes while preparing the crumb topping.
  • Mix brown sugar, flour, oats, cinnamon, and salt together in a large bowl. Cut in butter pieces with a fork until they're the size of small peas.
  • Remove cherry pie from the oven. Top with the crumb topping and bake for an additional 20 minutes. Remove from oven and cut a small hole in the center to help vent. Let cool, at least 1 hour. Serve warm.

PEAR CRISPS WITH DRIED SOUR CHERRIES

Pear Crisps with Dried Sour Cherries image

Yield Makes 8 servings

Number Of Ingredients 10

1 cup dried sour cherries
Water or fruity red wine, such as a Zinfandel, to cover
8 ripe pears, (about 2 1/4 pounds), peeled, cored, and sliced (5 cups)
1/2 cup granulated sugar
1 1/4 cups all-purpose flour
1/3 cup plus 1 tablespoon coarsely ground almonds, toasted
1/4 cup firmly packed dark brown sugar
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/2 cup (1 stick) unsalted butter, melted and cooled to room temperature

Steps:

  • 1. In a small saucepan, combine the cherries with enough water or wine (or a combination) to cover them by 2 inches. Bring the mixture to a simmer over medium heat, then turn off the heat and let cool. Let the cherries soak overnight in the refrigerator, or for at least 8 hours, until they are plump and soft. Drain the cherries, reserving the juices.
  • 2. In a large bowl, combine the pears, drained cherries, and 1/4 cup of the granulated sugar and toss well. Mix in 1/2 of the cherry soaking liquid, or whatever cherry soaking liquid is left plus enough water to make 1/2 cup. Let the mixture stand for 30 minutes.
  • 3. Meanwhile, preheat oven to 375°F. In a large bowl, whisk together the remaining 1/4 cup of granulated sugar, the flour, almonds, brown sugar, cinnamon, and nutmeg. Slowly drizzle in the butter and stir with a fork until the mixture is crumbly and all the flour is incorporated. Do not allow the mixture to come together in a ball. Break up any large crumbs with your fingers. The crumbs should be smaller than 1 inch in size (otherwise they won't cook all the way through).
  • 4. Spoon the fruit into eight 8-ounce ramekins and place them on a baking sheet. Evenly sprinkle the crumbs on top of the fruit. Bake the crisps until the filling is bubbling and the topping is browned, about 40 minutes. Serve hot or warm.

  • Preheat the oven to 375 degrees and generously butter a 1-1/2 or 2-quart baking dish (I use a small 1-1/2 quart ceramic oval dish, but an 8 x 8 square baking dish will also work).
  • Make the streusel: Whisk together the flour, sugar, nutmeg, cinnamon and salt in a medium bowl. Add the butter and rub it in with your fingertips until the mixture begins to clump together. Stir in the walnuts. Cover and refrigerate.
  • Make the Filling: Combine the sugar, butter, orange juice, orange zest, vanilla and salt in a medium pan. Stir over medium-high heat until the mixture comes to a boil. Add the dried cherries, then reduce the heat to medium and simmer until the cherries begin to soften and the liquid is caramel colored and thickened, 2-3 minutes. Remove from the heat, then add the pears (it's important to do this right away, as the pears cool the mixture and prevent it from over-caramelizing); stir until the pears are evenly coated with caramel sauce.
  • Transfer the fruit mixture to the prepared baking dish and sprinkle the streusel mixture evenly over top. Bake for 45-50 minutes, until the pears are tender and the top is crisp and golden. Serve warm or room temperature with lightly sweetened whipped cream or vanilla ice cream.
