KENTUCKY COLESLAW

We love going to Kentucky Fried Chicken. Although we enjoy the chicken, we actually go for the coleslaw. We buy several pints at a time. I make several versions of cole slaw but we sometime just want this. I tried for several years before getting this recipe right. I think I have figured it out now.If you are in a hurry get a bag of the preshredded slaw mix. It is not quite as good as grating it yourself though. -Donna Gribbins, Shelbyville, Kentucky

Number Of Ingredients 10

1/2 cup buttermilk
1/2 cup mayonnaise
1/3 cup sugar
2 tablespoons lemon juice
4-1/2 teaspoons white vinegar
1 teaspoon salt
1/2 teaspoon pepper
1 pound finely chopped cabbage (about 8 cups)
2 medium carrots, finely chopped (about 2 cups)
3 tablespoons grated onion

Steps:

  • In a large bowl, whisk the first 7 ingredients until combined. Add remaining ingredients; toss to coat. Refrigerate, covered, at least 2 hours and up to 3 days before serving.

3/4 ounce Maker's Mark or other good-quality bourbon
3/4 ounce fresh lemon juice
1/2 ounce fresh orange juice
3/4 ounce simple syrup (see below)
Champagne or other dry sparkling wine, chilled
Lemon twist, for serving

Steps:

  • Combine the bourbon, lemon juice, orange juice and simple syrup in a cocktail shaker with 6 ice cubes. Shake for 10 seconds before straining into a wine glass and topping with champagne and a lemon twist.
  • Bring 1 cup sugar and 1 cup water to a boil in a small saucepan over high heat and cook until the sugar is completely melted, a minute or so. Remove from the heat. Transfer to a container with a tight-fitting lid and refrigerate until cold, about 1 hour.

1 1/2 ounces fresh orange juice
1/2 ounce fresh lime juice
1 teaspoon confectioners' sugar

Steps:

  • In a cocktail shaker, combine the bourbon, orange juice, lime juice and sugar with a handful of ice and shake vigorously.
  • Strain into an old-fashioned glass over ice.
  • Garnish with orange slice and a maraschino cherry and serve.
