This Classic Creamy Pea Salad with Bacon is a delicious combination of sweet peas, bacon, cheddar cheese, red onion and a simple, zesty dressing. This simple side dish is perfect for the summer months and is a welcome addition to potlucks, cookouts, BBQs, and baby showers! Perfect for small or large gatherings, this easy side salad can be pulled together in just minutes and can also be made up to three days in advance.

16 ounces frozen petite peas
4 ounces sharp cheddar cheese (cubed)
1/2 small red onion (diced)
1/4 pound bacon (cooked and finely chopped)
1/2 cup sour cream
1/2 cup mayonnaise
1 tablespoon granulated sugar
1 teaspoon apple cider vinegar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • Remove peas from freezer and place in a colander and allow to slightly thaw while preparing the dressing.
  • In a large bowl, whisk together mayonnaise, sour cream, sugar, apple cider vinegar, salt, and black pepper.
  • Add the peas, bacon, cheddar cheese, and red onion and fold/stir to combine.
  • Chill the salad for at least one hour before serving. The salad can be made up to 3 days in advance.

1/2 pound fresh wax or green beans
1/2 pound fresh sugar snap peas
2 cups water
6 large radishes, thinly sliced
2 tablespoons honey
1 teaspoon dried tarragon
1/4 teaspoon kosher salt
1/4 teaspoon coarsely ground pepper

Steps:

  • Snip ends off beans and sugar snap peas; remove strings from snap peas. In a large saucepan, bring water to a boil over high heat. Add beans and reduce heat; simmer, covered, 4-5 minutes. Add sugar snap peas; simmer, covered, until both beans and peas are crisp-tender, another 2-3 minutes. Drain., Toss beans and peas with radishes. Stir together honey, tarragon, salt and pepper. Drizzle over vegetables.

Pickle relish adds unique flavor to Pickle Pea Salad from Kathryn Fleener of Louisville, Illinois. Cubes of cheddar cheese and hard-cooked eggs help dress up this hearty dish.

Number Of Ingredients 11

7 cans (15-1/4 ounces each) peas, drained
6 hard-boiled large eggs, chopped
1 jar (16 ounces) dill pickle relish
1 pound cheddar cheese, cubed
1 medium onion, chopped
1 jar (32 ounces) mayonnaise
1/4 cup sugar
1/4 cup cider vinegar
2 teaspoons salt
1 can (12 ounces) salted peanuts, coarsely chopped
Sliced hard-boiled large eggs, optional

Steps:

  • In a large bowl, combine the first five ingredients. Combine the mayonnaise, sugar, vinegar and salt; mix well. Pour over pea mixture; toss to coat. Cover and refrigerate for at least 2 hours. Just before serving, stir in peanuts. Garnish with egg slices if desired.

Pea Vegetable Salad (Christmas Relish) image

This was one of my mom's favorite recipes. She got the recipe from a lady with whom she worked many years ago. Growing up, we called it Pea Vegetable Salad (that's the name written on my mother's copy of the recipe.) Some friends of mine, however, said that they too have a similar recipe, yet call it Christmas Relish. I like that name better, but it certainly isn't a dish that is just for Christmas time. I think the name must come from all the red and green veggies. Regardless of the name, it is one tasty little side dish!

Number Of Ingredients 12

1 (15 ounce) can baby green peas, drained
1 (11 ounce) can shoe peg corn, drained
1 (2 ounce) jar pimientos
1 cup finely chopped green pepper
1 cup finely chopped celery
1 cup finely chopped onion
1/2 cup diced cheddar cheese
1 cup sugar
1/4 cup oil
1/2 cup vinegar
1 teaspoon salt
1/2-3/4 teaspoon pepper

Steps:

  • Mix sugar, oil, vinegar, salt and pepper in a saucepan and bring to a boil.
  • Boil for a few minutes and remove from heat.
  • Let cool completely.
  • Combine all vegetables and cheese in a bowl.
  • Pour cooled sauce over veggies and mix.
  • Refrigerate. Best served cold!
  • Note: Sometimes I use half of a green pepper and half of a red pepper. Chop peppers by hand, do not use chopper! And LeSueur peas work just fine.

This salad goes great with barbeque and, of course, New Year's Day.

2 (15.5 ounce) cans black-eyed peas
1 large tomato, chopped
1 medium red bell pepper, chopped
1 medium green bell pepper, chopped
½ red onion, diced
1 stalk celery, chopped
1 tablespoon chopped fresh parsley
3 tablespoons balsamic vinegar
2 tablespoons olive oil
salt and pepper to taste

Steps:

  • In a medium bowl, toss together black-eyed peas, tomato, red bell pepper, green bell pepper, red onion, celery, and parsley.
  • In a small bowl, mix balsamic vinegar and olive oil. Season with salt and pepper. Toss into the vegetables. Cover, and chill in the refrigerator 8 hours, or overnight.

4 cups blanched green peas
½ cup mayonnaise
½ cup sour cream
2 tablespoons prepared horseradish
1 tablespoon Dijon-style prepared mustard
¼ cup chopped fresh dill weed
ground black pepper to taste

Steps:

  • Gently pat peas with a paper towel to absorb any excess moisture. Place peas in a large bowl.
  • In small bowl combine the mayonnaise, sour cream, horseradish, mustard and 3 tablespoons dill weed. Add to peas and toss to coat. Sprinkle remaining dill over top. Cover and chill for at least 2 hours before serving.

8 medium white onions, chopped
6 large green bell peppers, seeded,chopped
6 large red bell peppers, seeded,chopped
5 cups cider vinegar, divided
4 1/2 cups sugar
1 tablespoon coarse salt

Steps:

  • In a large kettle, combine chopped onions and peppers, add 4 cups boiling water and let stand for 5 minutes, stirring once.
  • Drain the vegetables and return to the kettle with 2 cups vinegar and 2 cups water.
  • Bring to a boil and simmer, stirring occasionally, for 5 minutes.
  • Drain again and return vegetables to the kettle.
  • In a saucepan, combine 3 cups vinegar with 4 1/2 cups sugar and the salt.
  • Heat gently, stirring until the sugar is dissolved.
  • Pour this over the vegetables.
  • Bring to a boil and simmer, stirring occasionally, for 15 to 20 minutes until the syrup is slightly thickened and the vegetables are tender but have not lost their crispness.
  • Pour into sterilized canning jars, filling to within 1/4-inch of the tops.
  • Wipe rims with a dampened towel and seal the jars.
  • Process in a boiling-water bath (water 2 inches above the jar tops) for 10 minutes.
  • Remove the jars to cool and store in a cool dry place.

  • In a saucepan over medium heat, combine the sugar, black pepper, salt, oil and vinegar. Bring to a boil and pour over salad; mix well to coat. Refrigerate for 24 hours.
