To Die For Fettuccine Alfredo image

This is a recipe that I created by modifying my mother's recipe. My boyfriend is a fettuccine Alfredo connoisseur and he scrapes the pan every time! I get nothing but rave reviews when I make this dish. I must warn you, this recipe is not for the health conscious. Enjoy!

24 ounces dry fettuccini pasta
1 cup butter
¾ pint heavy cream
salt and pepper to taste
1 dash garlic salt
¾ cup grated Romano cheese
½ cup grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Add fettuccini and cook for 8 to 10 minutes or until al dente; drain.
  • In a large saucepan, melt butter into cream over low heat. Add salt, pepper and garlic salt. Stir in cheese over medium heat until melted; this will thicken the sauce.
  • Add pasta to sauce. Use enough of the pasta so that all of the sauce is used and the pasta is thoroughly coated. Serve immediately.

1/8 teaspoon ground nutmeg

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a saucepan, melt butter over medium-low heat. Stir in cream, 1/2 cup Parmesan cheese, Romano cheese, egg yolks, salt, pepper and nutmeg. Cook and stir over medium-low heat until a thermometer reads 160° (do not boil). , Drain fettuccine; serve with Alfredo sauce and remaining 1/4 cup Parmesan cheese.

1 3/4 cups heavy cream
1/2 teaspoon garlic
1 teaspoon white pepper (use black for substitute)
1/2 teaspoon basil
1 teaspoon minced red onion
6 ounces parmesan cheese
2 ounces crumbled blue cheese
1 lb fettuccine
1 dash lime juice (optional)

Steps:

  • Heat butter in saucepan on low. When melted, add basil, onion, pepper, and garlic.
  • SLOWLY add the heavy cream. when mixed, turn heat to medium. Stir occasionally for five minutes. Add a dash of lime.
  • Add small amount of bleu cheese and parmesan. Stir until melted and mixed. Repeat every 3 minutes until no cheese is left.
  • Let sauce thicken. Serve over fettuccine.
