MONTE CRISTO SANDWICH
A quick and easy sandwich with ham, turkey and swiss slices, dipped in an egg/milk mixture and fried to a golden brown. A hot alternative to the usual lunch or snack. Try it with berry jam on the side.

Steps:
- Spread bread with mayonnaise and mustard. Alternate ham, Swiss and turkey slices on bread.
- Beat egg and milk in a small bowl. Coat the sandwich with the egg and milk mixture. Heat a greased skillet over medium heat, brown the sandwich on both sides. Serve hot.

LIGHT AND EASY MONTE CRISTO SANDWICHES
Some recipes make you go HHMMM!?? Luckily I tried this and it made us go YUM! This isn't the normal combo you'd see on a sandwich, but very tasty! They are quick, easy, and lo cal. Another delight from Cooking Light.

Steps:
- Assemble sandwiches: Spread 1 tsp mustard over each bread slice.
- Place 1 slice of cheese over 4 slices of bread.
- Divide ham among sandwiches.
- Cover with remaining bread slices.
- Mix egg whites and milk together in a shallow bowl.
- Spray a cooking skillet with cooking spray and heat over medium heat or you may use an electric skillet.
- Dip both sides of sandwiches into milk & egg mixture.
- Cook sandwiches in skillet until lightly browned on each side, about 3 minutes on each side.
- Transfer to a serving platter and sprinkle top of sandwiches with powdered sugar and top each one with jam.

- Whisk together first 4 ingredients in a shallow dish.
- Dip both sides of bread slices in egg mixture.
- Melt butter in a large skillet; add bread slices, and cook 2 to 3 minutes on each side or until golden brown.
- Spread 1 tablespoon strawberry jam on 1 side of each bread slice; top evenly with turkey, ham, and cheese.
- Place on baking sheet.
- Broil 5 inches from heat 2-3 minutes or until cheese is melted.
- Sprinkle powdered sugar, if desired.
- Serve immediately.

- Spread 1 tablespoons peanut butter on each of 4 bread slices.
- Spread 1 tablespoons jelly on each of remaining 4 bread slices.
- Place peanut butter coated and jelly coated sides of bread together to form 4 sandwiches.
- In a small bowl, whisk together cream and eggs.
- In a nonstick skillet over medium-high heat on stovetop, melt 1 tablespoons butter.
- Dip sandwich in egg mixture, and cook in skillet for 1 to 2 minutes per side, or until golden brown.
- Repeat with remaining sandwiches.
- Sprinkle with confectioner's sugar, if desired.

- Whisk together eggs, milk, salt, and pepper in a shallow dish.
- Dip both side of each slice of bread into batter mixture.
- Melt butter in large skillet over medium heat; add battered bread slices and cook 2-3 minutes on each side or until golden brown.
- Spread 1 tbsp strawberry jam on each bread slice.
- Add turkey, ham and cheese on top of 2 bread slices and then top with remaining slice to make a sandwich.
- Place sandwiches on baking sheet and broil on middle oven rack 3-5 minutes or just until cheese melts making sure to flip them half way through and checking constantly not to burn them.
- Sprinkle with powdered sugar and enjoy!

- Position oven rack in the upper-middle position; preheat to 450°.
- In a shallow dish (pie plate), whisk the eggs, cream, sugar, salt, dry mustard and cayenne together until combined.
- Stir the jam and dijon mustard together in a small bowl.
- Spread 1 teaspoon of the jam mixture on one side of each slice of toast.
- Layer the slices of cheese, ham, and turkey on 6 slices of toast; repeat with a second layer of cheese, ham, and turkey.
- Add a final layer of cheese and top with the remaining toast, with the jam side facing the cheese.
- Using your hands, lightly press down on the sandwiches.
- Pour the oil onto a rimmed baking sheet and heat in the oven until just smoking, about 7 minutes.
