A little spot of honey sweetens this "beary" good fruit dip.

3 cups vanilla yogurt
1 cup chopped unblanched whole almonds
1 tablespoon honey
1/2 teaspoon almond extract
Fresh fruit, if desired

Steps:

  • Mix all ingredients except fruit. Cover and refrigerate at least l hour but no longer than 24 hours.
  • Serve dip with fruit.

HONEY NUT CRUNCH PEARS



Honey nut crunch pears image

This simple idea makes a quick mid-week treat for all the family

4 ripe pears
knob of butter
½ tsp mixed spice
2 tbsp clear honey
50g cornflake
25g toasted flaked almond

Steps:

  • Heat oven to 200C/fan 180/gas 6. Cut the pears in half lengthways, take out the core (see tip, left), then top with a small knob of butter and a sprinkling of the mixed spice. Sit the pears in a shallow baking dish, then roast for 5 mins until starting to soften. Meanwhile, heat the honey and another knob of butter in a large bowl in the microwave for 30 secs. Toss with the cornflakes and nuts.
  • Take the pears out of the oven, then top with the cornflake mix. Cook for another 5 mins or until the cornflakes take on a rich golden colour. Allow to cool for a few mins (the cornflakes crisp up again as they cool), then serve warm with ice cream.

Herbed Cheese with Pears, Pine Nuts, and Honey image

8 ounces part-skim ricotta cheese
3 tablespoons pine nuts
6 ounces fresh goat cheese, room temperature
1 teaspoon fresh thyme leaves, finely chopped
2 teaspoons fresh flat-leaf parsley, finely chopped
1/2 teaspoon finely grated lemon zest
2 ripe but firm Bartlett pears
2 tablespoons plus 2 teaspoons flavorful honey, such as buckwheat, chestnut, or leatherwood

Steps:

  • Preheat the oven to 350°F. Place the ricotta in a fine sieve set over a bowl; let the excess liquid drain, about 30 minutes. Meanwhile, spread the nuts in a single layer on a rimmed baking sheet. Toast in the oven until lightly browned, tossing occasionally, about 7 minutes. Transfer to a plate; let cool.
  • In a food processor or medium bowl, mix together the goat cheese and drained ricotta until creamy and thoroughly combined. Stir in the thyme, parsley, and lemon zest; set aside.
  • Slice each pear into 6 wedges. Divide the herbed cheese among 4 serving plates, spooning it into mounds. Arrange 3 pear wedges next to the cheese on each plate. Sprinkle with nuts; drizzle about 2 teaspoons honey over each portion of cheese and pears. Serve immediately.

Steps:

  • In a medium bowl, mix together the honey, peanut butter, cinnamon and cream cheese until well blended. Cover and refrigerate for 24 hours. Serve on toast, or as a dip for fruit.
