A popular Indian deep-fried treat, but without the guilt thanks to an air fryer. Don't forget the yogurt dipping sauce!

1 small red onion, thinly sliced
1 small yellow onion, thinly sliced
1 tablespoon salt
1 jalapeno pepper, seeded and minced
1 clove garlic, minced
1 teaspoon coriander
1 teaspoon chili powder
1 teaspoon ground turmeric
½ teaspoon cumin
⅔ cup chickpea flour (besan)
4 tablespoons water, or as needed
cooking spray

Steps:

  • Mix red onion, yellow onion, salt, jalapeno, garlic, coriander, chili powder, turmeric, and cumin in a large bowl. Stir until evenly combined. Add chickpea flour and water. Stir to combine into a thick batter. Add more water if necessary. Let mixture rest for 10 minutes.
  • Preheat air fryer to 350 degrees F (175 degrees C).
  • Spray the air fryer basket with nonstick cooking spray. Spoon 2 tablespoons of batter into the basket and flatten. Repeat as many times as your basket allows without the bhajis touching.
  • Cook in the preheated air fryer for 6 minutes. Mist the tops of each bhaji with cooking spray. Flip and cook 6 additional minutes. Transfer to a paper towel-lined plate. Repeat with remaining batter.

Onion Bhaji or Pakoda (Pakora) are a crispy and flavourful Indian appetizer or snack. Ideal to serve with your favourite Indian mains or even as a snack with different chutneys or sauces.

3 medium size onion (around 400 g)
1 carrot
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon garam masala
1/2 teaspoon turmeric
1 teaspoon salt
10 small curry leaves (sliced)
1-2 green chilis
Handful coriander
130 g gram flour
130 ml water
Squeeze of lemon
Vegetable oil for frying

Steps:

  • Finely slice onion and carrot and add in a big mixing bowl.
  • Add the spices, curry leaves, fresh chilis and coriander finely chopped. Combine all the ingredients.
  • Add the gram flour into the mixture making sure the ingredients are well coated.
  • Pour the water and lemon into the mixture and combine until all ingredients are perfectly incorporated.
  • Heat some vegetable oil in a non-stick pan to medium temperature.
  • Using a spoon, form the bhajis making sure they have a similar size so they cook evenly. Drop them into the pan once the oil is hot. To make sure you have the right consistency, they need to fall off the spoon easily.
  • Cook until golden, turning them halfway to make sure they cook evenly on both sides.
  • When cooked, take them out of the pan, and leave them on a kitchen paper for a couple of minutes to remove the excess of oil.
  • Sprinkle some salt and fresh coriander on the top and serve.

2 white onions slightly larger than tennis balls
1 red onion slightly larger than a tennis ball
1 teaspoon fine sea salt
1 tablespoon garlic paste
1 x 2.5cm (1 inch) ginger - julienned
3 green chillies - pounded to a paste
1 tablespoon panch poran*
1 tsp Kashmiri chilli powder (optional)
2 tbsp rapeseed (canola) oil
1/2 tsp turmeric
4 tbsp rice flour
140g (approx) sifted gram flour
3 tablespoons finely chopped coriander leaves

Steps:

  • Cut the onions in half and then finely slice them. Mix the salt into them and set aside for an hour or up to four hours.
  • After an hour the onions will be limp and moist. Squeeze the onions to release the water into the bowl. Add the remaining ingredients to the onions, being careful not to add to much gram flour. You should easily be able to pick up a ball of the onion mixture.
  • Divide the mixture in to small bhajis.
  • Heat your air fryer to 176c/380f. Spray the basket with oil spray generously.
  • Place the bhajis in the basket. You will need to cook these in batches.
  • After 15 minutes, your first batch will be cooked to perfection.
  • Serve hot or at room temperature.

2 onions, finely sliced
100g gram flour
½ tsp gluten-free baking powder
½ tsp chilli powder
½ tsp turmeric
1 green chilli, deseeded and very finely chopped
vegetable oil for frying
½ cucumber
150g tub Greek-style yogurt
2 tbsp chopped mint

Steps:

  • Soak the onion in cold water while you make the base mix. Sift the flour and baking powder into a bowl, then add the chilli powder, turmeric, chopped chilli and a good sprinkling of salt. Mix in about 100ml of cold water to make a thick batter - add a splash more if it feels too stiff.
  • For the raita, peel the cucumber and grate it into a sieve set over another bowl. Mix the remaining ingredients with some seasoning and the drained cucumber - squeezing out any extra moisture with your hands - then spoon into a small serving bowl.
  • Drain the onion well and mix it into the batter. Heat about 5cm of oil in a wok or deep pan. Do not fill the pan more than a third full. Add a tiny speck of batter. If it rises to the surface surrounded by bubbles and starts to brown, then the oil is hot enough for frying.
  • Lower heaped tbsps of the bhaji mixture into the pan, a few at a time, and cook for a few mins, turning once, until they are evenly browned and crisp, so about 3-4 mins. Drain on kitchen paper, sprinkle with a little salt and keep warm while you cook the rest. Serve with the raita.

4 cups thinly sliced onions
1/4 cup butter
6 cups beef broth
1 garlic clove, minced
1 teaspoon minced fresh thyme
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
2 tablespoons brandy, optional
6 slices French bread (3/4 inch thick), buttered and toasted
6 slices Swiss cheese

Steps:

  • Press saute function on a large multi-cooker; select vegetables setting. Press timer; set to 30 minutes. Start. Melt butter in inner pot. Add onions; cook and stir until tender and golden, 25-30 minutes. Press cancel., Stir in broth, garlic, thyme, Worcestershire sauce and salt. Lock pressure lid. Press pressure function; select vegetables setting. Set to long cook time (12 minutes). Start. , Quick-release pressure. If desired, stir in brandy. Ladle soup into individual serving crocks. Place wire rack into inner pot. Arrange buttered toast on rack. Top with cheese. Cover with air frying lid. Press air fry function; select custom setting. Press timer; set to 2 minutes. Start. Cook until cheese is melted. Serve toasts over soup.
