My Salmon Patties image

When I couldn't find a recipe that sounded like what I wanted, I set out to make the perfect salmon patty. This is it for me. After a few tries, I learned that when forming the mixture into patties, leaving it loose rather than packing tightly makes for a more tender finished product. Serve with your favorite sauce or eat them on buns with ketchup as my grandkids do.

Number Of Ingredients 10

1 (14 3/4 ounce) can pink salmon
2 beaten eggs
1/2 cup frozen grated hash brown potatoes
1 sliced green onion
1/2 cup crushed Ritz cracker (or other buttery flavored crackers)
1/2 teaspoon baking powder
1/4 teaspoon lemon pepper
1 dash Tabasco sauce
1/2 cup yellow cornmeal
1 tablespoon oil

Steps:

  • Place salmon into a bowl. Gently flake, removing the bones & skin.
  • Toss with eggs, potatoes, onion, crackers, baking powder, lemon pepper and Tabasco.
  • Using your hands, form into 4 loosely packed patties & gently coat both sides & edges with cornmeal.
  • Add oil to frying pan & heat to medium high.
  • Brown patties 2-3 minutes on each side, trying to turn them only once.
  • **Note 1: I use the frozen hash browns for convenience only. (1) small to medium potato, peeled and grated, could be substituted for them.
  • *** Note 2: Sometimes I "raise the spice bar" & add chopped parsley or diced jalapenos or whatever else appeals to my palate at the moment of mixing.

Number Of Ingredients 5

1 (14.75 ounce) can canned salmon
1 egg
¼ cup chopped onion
½ cup seasoned dry bread crumbs
1 tablespoon olive oil

Steps:

  • Drain and reserve liquid from salmon. Mix egg, onion, bread crumbs and salmon together.
  • Make into patties. If mixture is too dry to form into patties, add reserved liquid from salmon.
  • In a frying pan, heat olive oil. Place patties in pan. Brown on each side, turning gently. Drain on paper towels and serve.

1 can (14.7 oz.) salmon, drained, skin and bones discarded
1 pkg. (6 oz.) STOVE TOP Stuffing Mix for Chicken
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
3/4 cup water
2 green onions, sliced
1/3 cup KRAFT Real Mayo Mayonnaise
1 Tbsp. lemon juice

Steps:

  • Mix all ingredients. Shape into 12 patties, using about 1/3 cup stuffing mixture for each patty. Refrigerate 10 min.
  • Heat large nonstick skillet on medium heat. Add patties to skillet in batches.
  • Cook 6 min. or until golden brown on both sides, turning carefully after 3 min.

  • In the bottom of a large mixing bowl, lightly beat the egg. Add the drained salmon to the bowl. Add the bread crumbs, Greek yogurt, Dijon, white vinegar, onion powder, garlic powder, and cayenne. With a fork, lightly mix to combine, breaking apart the salmon further. Gently stir in the parsley.
  • Scoop the mixture by 1/3 cupfuls and shape into 6 patties that are about a 1/2 inch thick. Arrange on a plate.
  • In a large cast-iron or similar sturdy-bottomed skillet, heat 1 tablespoon of the oil over medium. Swirl to coat. Brown the patties on both sides, until the outsides are very deep golden brown and the patties are cooked through, about 5 to 6 minutes total. When flipping the patties, be very gentle and use a long, flexible spatula, such as a fish spatula. Enjoy immediately, topped with Greek yogurt, a squeeze of lemon, and a sprinkle of fresh parsley.
