DADDY'S FRIED CORN AND ONIONS



Daddy's Fried Corn and Onions image

Combining my two favorites, fried onions and fresh corn, my husband came up with this very simple, delicious side dish.

4 ears fresh corn
2 tablespoons butter
1 small sweet onion, diced
salt and pepper to taste

Steps:

  • Cut corn kernels from cob. Melt butter in a medium skillet over medium heat. Saute corn kernels just until tender, then mix in onion. Continue to saute until onion is just beginning to turn crispy. Season with salt and pepper. Enjoy warm or cold.

4 large ears of corn
1 tablespoon corn, peanut or vegetable oil
1 tablespoon butter
1/2 cup finely chopped onion
1 teaspoon finely minced garlic
1 1/2 cups finely chopped sweet pepper, preferably green
Salt to taste if desired
Freshly ground pepper to taste
1/2 teaspoon ground cumin

Steps:

  • Using a sharp knife, cut and scrape the kernels from the corncobs. There should be about two cups.
  • Heat the oil and butter in a skillet and add the onion, garlic and chopped pepper. Add corn, salt and pepper. Cook, stirring, briefly and sprinkle with cumin.
  • Cover and cook over low heat about three minutes. Remove from the heat and serve.

2 cups fresh corn kernels (cut from 3 medium ears) or one 10-ounce package frozen, thawed, drained
2 tablespoons olive oil
2 red bell peppers, chopped
1/2 cup chopped onion
1 garlic clove, chopped
1/4 cup chopped fresh cilantro
1/2 teaspoon chili powder

Steps:

  • Heat large nonstick skillet over medium-high heat. Add corn; stir until beginning to dry and brown, about 8 minutes. Transfer to small bowl. Add oil to skillet. Heat over medium-high heat. Add bell peppers, onion, and garlic. Sauté until peppers are tender, about 8 minutes. Mix in cilantro and chili powder, then corn. Stir until heated through, about 2 minutes. Season with salt and pepper.

1 package frozen corn kernels (1 pound)
1/2 cup whole milk

Steps:

  • In a large skillet, melt butter over medium heat. Add onion, bell pepper, cayenne, and salt. Cook, stirring occasionally, until onion is soft, about 5 minutes.
  • Add corn and tomatoes; cook, stirring often, until corn is tender and tomatoes have softened, about 10 minutes. Stir in milk; remove from heat. Serve immediately.
