EASY BATTER FRUIT COBBLER



Easy Batter Fruit Cobbler image

Short of serving store-bought ice cream, you won't find a simpler, more delicious dessert than this fruit cobbler. Use any juicy summer fruit: peaches, nectarines, blueberries, blackberries, strawberries, raspberries. And if you use frozen berries, this dessert can be assembled in less than 10 minutes.

4 tablespoons butter
¾ cup all-purpose flour
¾ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
¾ cup milk
2 cups of sliced fresh peaches or nectarines, or whole blueberries, strawberries, raspberries, blackberries or a combination of fruits (or a 12-ounce package of frozen berries)
1 tablespoon sugar

Steps:

  • Adjust oven rack to upper-middle position, and heat oven to 350 degrees.
  • Put butter in an 8-inch square or 9-inch round pan; set in oven to melt. When butter has melted, remove pan from oven.
  • Whisk flour, 3/4 cup of sugar, baking powder and salt in small bowl. Add milk; whisk to form a smooth batter. Pour batter into pan, then scatter fruit over batter. Sprinkle with remaining 1 Tb. of sugar.
  • Bake until batter browns and fruit bubbles, 50 to 60 minutes. Serve warm or at room temperature with a dollop of whipped cream or a small scoop of vanilla ice cream, if desired.

1 cup all-purpose flour
2 teaspoons baking powder
¾ cup white sugar
¾ cup milk
¼ cup butter
2 cups sliced fresh peaches

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Melt butter in a 9 x 9 inch baking dish.
  • Blend together flour, baking powder, sugar, and milk.
  • Pour batter in baking dish over the butter. Sprinkle fruit on top of the batter, do not stir. Bake for 1 hour or until golden brown.

This is the winner for Emerl's "comfort for the coast" contest. I'm posting it so I know where to find it when I decide to try it.

4 cups fruit
1/2 cup sugar
2 tablespoons cornstarch
1/2 cup softened butter
1 cup sugar
1 egg
1 cup self-rising flour

Steps:

  • Directions for Filling:.
  • Prepare fruit. Put prepared fruit into 8" x 8" baking dish. Combine sugar and cornstarch. Sprinkle over fruit.
  • Directions for Crust:.
  • In a medium bowl, mix butter and sugar. In a seperate small bowl, crack the egg into it and beat it slightly. Stir the egg into the butter and sugar mixture. Gradually add flour and mix well. The mixture will have a consistency between that of heavy cake batter and light biscuit dough. Drop spoonfuls on top of fruit. The topping will spread out as it cooks. Bake at 325 degrees until light brown and the topping doesn't shake - usually 45-50 minutes. Test the same as you would a cake. Straw should come out clean. When doubled this recipe works well in a 9x13 baking dish. It will take 1 1/2 to 2 hours to bake. Test at 1 hour and 45 minutes.

This is the recipe my mom uses on both blueberry cobblers and peach cobblers. I am sure it would work with practically any fruit you wanted to try. When using blueberries, adding a little lemon zest/extract brings out the brightness in the flavors. When using peaches, adding some cinnamon pairs nicely. You may find adding a bit more self-rising flour to the sugar mixture in step #3 will help if you have runny cobbler

1 quart fresh fruit or 1 quart frozen fruit
7 tablespoons self-rising flour
7 tablespoons sugar
1 cup self-rising flour
1/2 cup milk
1/2 cup margarine
1 cup sugar
1/2 cup water
vanilla ice cream

Steps:

  • Preheat oven at 350 degrees.
  • Place fruit in large baking dish.
  • Mix 7 tbsp flour & 7 tbsp sugar and sprinkle over fruit.
  • Mix 1 cup flour, milk & margarine together.
  • Spread mixture over fruit.
  • Combine 1 cup sugar & water.
  • Pour over mixture.
  • Bake for 1 hour.
  • serve with vanilla ice cream.

Not sure where it originated and some on here close - but no cigar to this! While I'm told it is good cold, it never lasted long enough to find out...I'm sure you'll have the same issue. It's one-bowl, quick and easy!

1 (16 ounce) can fruit cocktail in heavy syrup
1 egg
1 cup sugar, white
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped nuts
1/2 cup brown sugar

Steps:

  • Drain the fruit, beating the juice with the egg till creamy.
  • Add the flour, sugar, baking soda and salt.
  • Fold in the fruit.
  • Pour into a greased 8 x 8 inch pan. Top with nuts and brown sugar.
  • Bake for 35 minute at 350.
  • Serve with dollops of fresh whipped cream.

  • Whisk the flour, sugar, baking powder, and salt together in a large bowl. Using a pastry cutter or two forks, cut the butter into the mixture until it resembles coarse meal (pea-sized crumbs). A pastry cutter makes this step very easy and quick! You could also use a food processor, too. While slowly stirring, slowly drizzle in 1/2 cup buttermilk. Mix until evenly combined. Take handfuls of dough and gently flatten out. Place dough all over the top of the berry filling. There’s no special trick to this– just flatten the dough in sections and cover most of the berries.
  • Brush the top of the biscuit dough with 1 Tablespoon of buttermilk, then sprinkle with coarse sugar. These two are optional, but both help achieve a shiny, crunchy, golden brown crust.
