2 sweet onions, finely chopped
2 smoked ham hocks
4 cloves garlic, finely chopped
3 (32 ounce) containers chicken broth
3 (1 pound) packages collard greens, trimmed
⅓ cup apple cider vinegar
2 tablespoons white sugar
1 ½ teaspoons salt, or to taste
¾ teaspoon ground black pepper, or to taste

Steps:

  • Combine onions, ham hocks, and garlic in a stockpot; add chicken broth. Cook mixture over medium heat until meat is falling off the bone, about 2 hours.
  • Stir collard greens, vinegar, sugar, salt, and pepper into the broth mixture; cook until greens have reached desired tenderness, about 2 more hours.

Corn bread, black eyed peas, and collards are a New Year's Day tradition in the South - the corn bread represents gold, black-eyed peas coins, and collards match the green of US paper currency. Since leaving the South, where I grew up, for the Pacific NW, I've begun a tradition of hosting an open house-style brunch on New Year's day and this is my go-to recipe for this fun occasion.

1 tablespoon olive oil
1 tablespoon butter
1 large onion, halved and thinly sliced
4 cloves garlic, thinly sliced
2 sprigs fresh thyme, leaves stripped
2 bay leaves
2 (14 ounce) cans chopped tomatoes
1 cup vegetable broth
1 tablespoon brown sugar
1 tablespoon molasses
1 tablespoon liquid smoke flavoring
2 pounds collard greens, chopped
1 ½ cups cooked white beans

Steps:

  • Heat olive oil and butter in a large pot over medium heat until butter melts and starts to brown, 1 to 2 minutes. Add onion and garlic; cook and stir until onion turns translucent, about 5 minutes. Stir in thyme and bay leaves.
  • Pour chopped tomatoes, vegetable broth, brown sugar, molasses, and liquid smoke into the pot; bring to a simmer. Stir in collard greens gently. Reduce heat to low and simmer, covered, until tender, about 30 minutes.

made this from a combination of recipes I found. It was my first attempt at making these for our annual "good luck" New Years Day meal. It was a complete thumbs up. Serve with hot or sweet "chow-chow" and you will be in Heaven, Southern Style!!

2 bunches collard greens, washed and cut into pieces, discard middle stems of each green
1/4 cup white distilled vinegar
1/3 cup white sugar
1 teaspoon salt
1 teaspoon pepper
3 -4 tablespoons bacon fat
2 -3 large ham hocks (also you could use a ham bone,pork jowl, 1 pound bacon slices or any other smoked pork product)
3 cups water
1 large onion, chopped small

Steps:

  • Saute your onion in a oversized pot with just bacon fat. Add your smoked pork product and let some of the juices start to flow from it (about 5 minutes worth of cooking).
  • Meanwhile mix water, vinegar, sugar, salt, pepper. Pour into pot and stir.
  • Add the greens. Mix up after each handful. Reduce heat as the cooking wilts them.
  • Continue to stir until wilted; then turn to low, cover and let cook for about 1 1/2-2 hours stirring once in a while and tasting to see if you need more salt and pepper.

This is a tradition at our house on New Year's Day--- it is said to bring you prosperity in the New Year.

1 bunch fresh collard greens (1 large bunch or 2 small bunches)
3 slice salt pork or thick bacon slices cut into pieces
half onion, diced
1 can(s) 14 oz. chicken or vegetable stock
2 Tbsp red wine or cider vinegar
1 Tbsp sugar
1 pinch salt & pepper to taste

Steps:

  • 1. Wash & remove thick stems from greens and cut into strips.
  • 2. Brown bacon or salt pork in large pot and add onions and saute until translucent.
  • 3. Add broth, vinegar, sugar, and greens to pot.
  • 4. Reduce heat and simmer until tender (about 1 hour).
