2 tablespoons olive oil
Kosher salt and freshly ground black pepper
1/2 lemon, juiced

Steps:

  • Preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
  • Halve the radishes lengthwise and place them in a bowl. Toss with the olive oil and season with salt and pepper.
  • Transfer the radishes to the prepared baking sheet and bake until tender and a little golden, about 20 minutes. Sprinkle the lemon juice on top and serve immediately.

2 bunches medium radishes (tops trimmed (1 lb. trimmed))
2 tablespoons melted butter
1 teaspoon Diamond Crystal kosher salt (or 1/2 teaspoon sea salt)
1/4 teaspoon black pepper
1 teaspoon garlic powder

Steps:

  • Preheat your oven to 425 degrees F.
  • Cut the radishes in half lengthwise.
  • Arrange them in one layer in a baking dish.
  • Add the butter, salt, pepper and garlic powder. Toss to coat.
  • Roast until the radishes are fork-tender, about 20 minutes.

I saw a recipe for baked radishes in a magazine long, long ago and the thought so intrigued me I just had to give it a try. This is my personalized version of the original. I often switch out the thyme with either rosemary, basil, or crushed garlic, depending on my mood and what main dish these will be served with.

2 bunches radishes, trimmed
2 tablespoons extra-virgin olive oil
1 teaspoon ground thyme
salt to taste
½ lemon, juiced

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil.
  • Cut radishes into halves; cut any large radishes into quarters. Stir olive oil and thyme together in a bowl and toss radishes in mixture to coat. Spread radishes onto prepared baking sheet; sprinkle with salt.
  • Roast in the preheated oven until tender but firm in the centers, tossing every 5 minutes, 15 to 20 minutes. Drizzle with lemon juice.

2 bunches radishes (about 8 ounces)
4 tablespoons extra virgin olive oil
1 teaspoon kosher salt
4 fresh lemon wedges
2 tablespoons flat leaf parsley (torn)

Steps:

  • Gather your ingredients. Preheat the oven to 350 F. Gently wash the radishes under cold, running water. Dry carefully and thoroughly.
  • Snip or cut off and green top leaving a tiny piece of stalk, you do not have to remove the root unless it is very long. If the radishes are large, cut them in two or even four; smaller radishes can be cooked whole.
  • Place the radishes into a roasting tin ovenproof grill pan (using this pan can give the radish tiny marks which can be attractive). Drizzle over the olive oil, sprinkle with the salt are roll the radishes around to coat well. Finally, add the lemon wedges.
  • Roast the radishes in the center of the preheated oven until soft, about 20 minutes.

1 tbsp rapeseed oil

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Tip the radishes and bashed garlic cloves into a roasting tin, season well and drizzle with the oil. Toss to coat the radishes and garlic.

I was struggling for side dishes while in the "strict" phase of low carbing it....figured most veggies seem to mellow with roasting why not radishes.....only problem was DS kept eating them so I had to hide them in a container labeled "squash" (he would NEVER open that! LOL). I also put them out as part of an appitizer buffett on a platter with cauliflower that I cooked the same way....they disappeared!

  • Preheat oven to 400 degrees. Separate greens from radishes; wash both well. Slice radishes in half; toss with 1 tablespoon each oil and vinegar. Season with salt and pepper. Arrange in a single layer on a rimmed baking sheet, cut-side down. Roast until tender and golden, 25 to 30 minutes.

  • Heat oven to 180C/160C fan/gas 4. Remove the leaves from the radishes and if they are nice and fresh, set aside. Halve the radishes and tip into a roasting tin with the olive oil.
  • Roast for 20 mins until shrivelled and softened, then remove from the oven. Season with salt, toss with some of the leaves to wilt and serve.
