MINTED TOMATO, RHUBARB AND LIME COOLER
I thought I was through entering beverages till I ran across this tempting combo in the *Tomato Cookbook* of the Australian Womens Weekly cookbook series ... another great way to use the wealth of rhubarb when in season or from your frozen reserves. This must be served immediately & makes 5 cups, but is easily halved for a smaller amt. *Enjoy* !

- Combine rhubarb, sugar & water in a med pan. Cover, simmer about 10 min or till rhubarb is tender & allow to cool.
- Just b4 serving, blend or process rhubarb w/remaining ingredients till smooth & serve immediately.

MINTY LIME COOLER

- Combine the lime juice, sugar and mint in a blender. Puree until smooth. Fill two tall glasses halffull with ice cubes. Pour half of the lime juice concentrate in each. Top with sparkling water, garnish with lime and mint and serve.

Steps:
- Add the mint leaves, sugar, and water to a saucepan; bring to a boil.
- Lower the heat, simmer for 5 minutes; take off the burner and cool.
- Strain mixture into a big pitcher; throw away mint leaves.
- Add the orange juice, lemon juice, and apple juice to the pitcher; stir to mix.
- May chill for a couple hours or serve immediately over ice.

A tall cool one for a hot day which is good with Mexican and Southwest foods. To make a Mojito, just add rum. Recipe served at the Border Grill in Santa Monica, California.

- Combine the lime juice, sugar and mint in a blender, and puree until smooth.
- Fill 2 tall glasses halfway with ice cubes, then pour half the juice concentrate in each. For the mojito option, add one ounce of rum to each glass.
- Top with sparkling water, garnish with lime and mint, and serve.

RHUBARB MINT COOLERS
Steps:
- Cut rhubarb into 1/4-inch pieces and, in a saucepan, bring to a boil with water, sugar, and mint leaves. Simmer mixture, stirring occasionally, 15 minutes (rhubarb will disintegrate) and cool 15 minutes. Pour mixture through a fine sieve into a pitcher, pressing hard on solids. Chill mixture, covered, until cold, about 3 hours, and up to 2 days.
- Serve coolers over ice in glasses, garnished with mint sprigs.
ANCHOVY CROSTINI
This recipe was in the Australian Womens Weekly Italian cookbook. This crostini recipe is really good. My friends love them. I usually keep some toast rounds on hand so I can make them up in a hurry. Serve them at a cocktail party or as an appetizer before dinner. I make up a batch of the anchovie mix split it into four place each in small plastic bag & freeze for future use - , I have also frozen the toasts with the anchovie spread on them then just decorate before popping into the oven.. I prefer freezing the spread separately.

Steps:
- Cut 2" circles from the bread (or use the 1/4" baguette slices).
- Brush both sides of the bread with the olive oil.
- Place on a cookie sheet and bake in moderate oven for 10 min or until golden brown (You can make up a whole lot of these toasts for future use as they store well in a closed tin).
- Melt butter in a frypan.
- Add flour, mixing well and cook for 1 minute.
- Add milk and stir over moderate heat until it boils& thickens, remove from heat.
- Add 3 tbsp parmesan,Salt& pepper& mushrooms.
- Mix well.
- Add anchovy paste and stir through. The mixture looks a bit loose but it will bake perfectly
- Spread 2 teasp on each toast and generously sprinkle with the extra parmesan. I do this just before I am ready to bake them. however it can be done and then freeze them for future use
- Slice the olives and put a slice of olive on some of the crostinis.
- Put a rolled anchovy on some.
- Put a thin slice on red pepper on the remaining crostinis.
- Bake in a hot oven (400F degrees) for 10 minutes or until they are bubbly and brown on top.
- Serve and wait for the rave revues.
