MICROWAVE PEANUT BRITTLE
This is a wonderful recipe but you should only make it once a year, because you can't stop eating it.

Steps:
- Butter a cookie sheet. Combine sugar and corn syrup in a 2 quart glass bowl and microwave on high 4 minutes. Stir in peanuts and microwave on high 3 1/2 minutes more, then stir in butter and vanilla and microwave for 1 1/2 minutes.
- Stir in baking soda until light and foamy. Pour onto cookie sheet and spread thin. Cool completely and break into pieces and serve.

BEST EVER MICROWAVE PEANUT BRITTLE
Note your microwave needs to be 750 to 950 watt. If your microwave is higher need to lower your cooking times and if your microwave is less you will need to increase your cooking time. I'm sorry I did not update this sooner.

Steps:
- Mix sugar and corn syrup together and cook on high for 4 minutes.
- Add peanuts mix well and cook on high for 3 minutes.
- Add butter and vanilla and cook on high for 2 minutes.
- Add baking soda and mix well, mixture will foam.
- Spread on well butter foil.
- when completely cooled break in to pieces.
- Store in air tight container.
- NOTE: Any type of nut can be used in place of the peanuts.

- Grease a baking sheet, and set aside. In a glass bowl, combine peanuts, sugar, corn syrup, and salt. Cook in microwave for 6 to 7 minutes on High (700 W); mixture should be bubbly and peanuts browned. Stir in butter and vanilla; cook 2 to 3 minutes longer.
- Quickly stir in baking soda, just until mixture is foamy. Pour immediately onto greased baking sheet. Let cool 15 minutes, or until set. Break into pieces, and store in an airtight container.

- Spray a baking sheet and a wooden spoon with cooking spray.
- Mix sugar and corn syrup together in a microwaveable bowl safe for high temperatures.
- Heat sugar mixture in microwave on high for 5 minutes.
- Stir peanuts and butter into sugar mixture. Heat in microwave until mixture becomes a caramel color, 3 to 4 minutes.
- Mix baking soda and vanilla extract into syrup until smooth and foam has dissipated. Spread candy onto the prepared baking sheet using the sprayed wooden spoon. Work quickly; candy hardens fast. Let stand until cool. Break into pieces to serve.

- Butter large baking sheet. In microwave-proof bowl, combine peanuts, sugar, corn syrup and salt. Microwave on High until mixture bubbles vigorously, about 6 minutes. Remove mixture from microwave and stir in butter and vanilla. Return to microwave and cook on High until candy turns light gold color, about 3 minutes. Remove bowl from microwave. Working quickly, add baking soda to candy mixture and stir briskly (mixture will foam up). Immediately pour out onto prepared baking sheet. Shake baking sheet from side to side to spread brittle as thinly as possible. Let stand until cold and hard, about 2 hours. Break brittle into pieces. Store in airtight container at room temperature for up to 1 month.
MICROWAVE PEANUT BRITTLE
This puts store bought peanut brittle to shame. I prefer to use the skinless peanuts because I think the skins are bitter. The amount listed below for the peanuts is if you're using Virginia peanuts. If you're using Spanish peanuts then reduce the amount of peanuts to 1 1/2 cups. Be sure to watch the candy carefully the first time you make it.

- Combine peanuts, sugar, corn syrup, and brown sugar in a large microwave safe bowl. Mixture will be quite gummy.
- Microwave on high power for 2 minutes and then stir.
- Continue microwaving the peanut brittle a couple minutes at a time until the peanuts are a nice roasted brown color. Be sure you're looking at the peanuts themselves and not the syrup surrounding them. The time this takes will vary according to your microwave. When the syrup starts to get really hot you may want to check every minute or less to prevent it from burning.
- After the peanuts are cooked quickly stir in the butter, vanilla, and baking soda.
- Pour the candy out on to a sheet of aluminum foil and spread it as thin as you can get it.
- Let the candy cool completely before breaking it into pieces.

MICROWAVE PEANUT BRITTLE RECIPE # 99
An easy way to make a delicious Peanut Brittle. After reviewing the other recipes I decided that my recipe is more adaptable to other size microwave ovens - Also by reducing the amount of baking soda you can still get the brittleness without the baking soda taste. I found that you can find uncooked peanuts cheaper in an oriental super market (5 lbs for about $6 makes 12 pattys).

- Warning - Mixture gets very hot! Use Oven Mitts and 1 quart size Pyrex measuring cups and Teflon spatulas for the mixture.
- Notes: I use 3 of the 1 quart measuring cups and pre measure all the ingredients in batches of 4.
- You may have to make a few batches to get the cook times right for your Microwave - Record the times for next Batches.
- Stir together 1 cup sugar and 1/2 cup white corn syrup in 1 quart Pyrex measuring cup.
- Microwave on "HI" 4 minutes (5 min for 600 watt oven). Mixture should be bubbly and sugar dissolved (adjust up in 15 second interals up from 4 minutes if not Bubbly and all sugar dissolved).
- Remove HOT mixture from Microwave and quickly stir in 1 1/4 cup raw peanuts.
- Microwave on "HI" 4 minutes (5 min for 600 watt oven). If peanuts burn or smell burnt adjust this time down in 15 Second intervals.
- Remove HOT mixture and quickly stir in 1/2 Tablespoon Butter and 1 teaspoon vanilla.
- Microwave on "HI" 2 minutes (2 1/2 min for 600 watt oven).
- Remove HOT mixture and quickly stir in 1/2-teaspoon Baking soda.
- Mixture will foaming - Look for consistancy of the mix before pouring on a cookie sheet sprayed with Pam to cool.
- More notes - Running hot water over the cups will dissolve the hardened mixture - Make sure to dry completely before adding new mixture.
