This recipe is from Martha's friend Salli LaGrone; she serves it with a simple but flavorful country ham.

Categories     Bread Recipes

Yield Makes 3 dozen 2-inch or 5 dozen 1 1/2-inch biscuits

Number Of Ingredients 11

6 tablespoons chilled unsalted butter, cut into small pieces, plus 2 tablespoons, melted
One 1-by-2-inch strip orange rind
2 cups unbleached all-purpose flour, plus more for patting out
1 tablespoon baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
3 tablespoons light-brown sugar
Generous pinch ground ginger
1 tablespoon freshly grated orange zest
1 cup well-cooked and mashed sweet potato (1 medium)
2/3 cup buttermilk

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with a Silpat. In a small bowl, combine melted butter and strip of orange rind; set aside.
  • In a medium bowl, combine flour, baking powder, baking soda, salt, brown sugar, ginger, and grated zest. Using a pastry cutter or two knives, cut chilled butter into the flour mixture until it resembles coarse meal.
  • Make a well in the center, and add sweet potato. Using a fork, stir in the sweet potato. Add buttermilk, and stir just until the dough comes together. Do not overmix.
  • Lightly dust dough with flour. Turn dough onto a lightly floured surface, and knead gently six to eight times.
  • On a clean work surface, pat out the dough to a 1/2-inch thickness. Using a floured 1 1/2-inch or 2-inch biscuit cutter, cut out the biscuits as close together as possible. Transfer to prepared baking sheet. The scraps may be patted out again once more. Prick the tops of each biscuit a few times. Brush the tops with the reserved orange-flavored butter. Bake until golden brown, 15 to 18 minutes for the small biscuits and 20 to 25 minutes for the large biscuits.

SWEET POTATO BISCUITS

Sweet Potato Biscuits image

These old-fashioned Southern-style Sweet Potato Biscuits are flaky, fluffy and just like Grandma made them!

Provided by Blair Lonergan

Categories     Breakfast     Side Dish

Time 33m

Number Of Ingredients 6

3 cups self-rising flour ((such as White Lily brand))
2 tablespoons granulated sugar
½ cup (1 stick) salted butter, cubed and chilled
1 ½ cups cold mashed cooked sweet potatoes
¾ cup cold whole buttermilk, plus more as needed
1 tablespoon salted butter, melted

Steps:

  • Lightly oil or grease a 10-inch cast iron skillet, or line with parchment paper. Set aside.
  • In a large bowl, whisk together self-rising flour and sugar.
  • Use a pastry blender or two forks to cut in the cold butter until the mixture is crumbly and some pea-size pieces of butter remain.
  • In a small bowl, whisk together mashed sweet potatoes and buttermilk. Stir the potato mixture into the flour mixture just until the dry ingredients are moistened. If the dough is too dry, add a little bit more buttermilk. If the dough is too sticky to work with, add a bit more flour.
  • Turn out the dough onto a lightly floured surface. Gently knead 4-6 times.
  • Press dough to 1-inch thickness.
  • Using a round biscuit cutter dipped in flour, cut out biscuits and arrange in the cast iron skillet. Roll out the scraps once, and cut additional biscuits if necessary. Do not continue rolling and cutting or you may end up with tough biscuits.
  • Place the skillet in the freezer for 10-15 minutes so that the dough can chill while you preheat the oven.
  • Preheat oven to 450°F.
  • Bake biscuits until golden brown and cooked through, about 15-20 minutes. Brush warm biscuits with melted butter and enjoy!

Yield Makes 12

Number Of Ingredients 8

1 pound (about 4) sweet potatoes
2 1/2 cups all-purpose flour, plus more for dusting
4 teaspoons baking powder
2 tablespoons sugar
1 teaspoon salt
1/4 teaspoon cayenne pepper
8 tablespoons (1 stick) unsalted butter, chilled
1/4 cup milk

Steps:

  • Heat oven to 400 degrees. Wash sweet potatoes, and prick all over with a fork. Place on a baking sheet; bake until soft, about 1 hour. (The juices will start to run out.) When cool enough to handle, scoop out flesh and press through a sieve (you should have 1 3/4 cups of puree). Set aside.
  • In a mixing bowl, combine the flour, baking powder, sugar, salt, and cayenne. With a pastry cutter or two knives, cut in butter until mixture resembles coarse meal.
  • In another bowl, whisk together milk and sweet-potato puree. Add to dry ingredients, and mix until well combined.
  • Place dough on a lightly floured surface; knead once or twice, and pat out to 1/2 inch thick. Cut out biscuits with a floured 2-inch-round cutter. Bake on parchment-lined baking sheet until golden brown, about 20 minutes.

These biscuits are slightly sweet and really round out a Thanksgiving feast.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes     Bread Recipes

Yield Makes about 36

Number Of Ingredients 8

1 1/2 pounds sweet potatoes, peeled
1 package active dry yeast
6 tablespoons plus a pinch of sugar
1 cup milk, room temperature
1/2 cup (1 stick), plus 3 tablespoons unsalted butter, melted and cooled, plus more for bowl and plastic wrap
3 large eggs, lightly beaten
1 tablespoon salt
4 1/2 to 5 cups sifted bread flour

Steps:

  • Cut the sweet potatoes into 1 1/2-inch slices. Place the potato slices in a medium saucepan, and cover with water. Bring to a boil, reduce to a simmer, and cook until potatoes are tender. Drain and mash well.
  • In the detached bowl of an electric mixer, whisk yeast, 1/4 cup warm water (105 degrees), and a pinch of sugar. Set the mixture aside until foamy, about 6 minutes. Attach bowl to mixer fitted with the dough-hook attachment. On low speed, add mashed potatoes, milk, 1/2 cup melted butter, eggs, sugar, and salt. Slowly add flour to make a slightly sticky dough. Knead until smooth, about 2 minutes. Brush inside of a mixing bowl with butter. Place dough in bowl; cover with buttered plastic wrap. Set aside to rise until doubled in size, 1 1/2 to 2 hours.
  • Line 3 large baking sheets with parchment. Using a floured rolling pin on a floured work surface, roll dough out to 3/4 inch thickness. Cut rounds of dough as close together as possible with a 2 1/4-inch round cookie cutter. Scraps can be re-rolled once. Place rounds 1 to 2 inches apart on prepared baking sheets. Brush the tops with the remaining butter; cover with plastic wrap. Set aside to rise until light and they do not spring back when pressed with a finger, about 30 minutes.
  • Heat oven to 400 degrees. Bake until biscuits are golden brown, about 14 minutes. Cool on a wire rack for about 5 minutes before serving.
