It can turn any dish from ordinary to extraordinary with its perfectly balanced, intense flavor of sweet and tangy. It adds a beautiful, deep pop of color to any dish to create a perfect, professional presentation. I make a large batch and have it on hand in the fridge at all times. 2 cups balsamic vinegar
½ cup brown sugar

Steps:

  • Mix balsamic vinegar with brown sugar in a saucepan over medium heat, stirring constantly until sugar has dissolved. Bring to a boil, reduce heat to low, and simmer until glaze is reduced by half, about 20 minutes. Glaze should coat the back of a spoon. Let cool and pour into a jar with a lid; store in refrigerator.

2 (4 ounce) filet mignon steaks
½ teaspoon freshly ground black pepper to taste
salt to taste
¼ cup balsamic vinegar
¼ cup dry red wine

Steps:

  • Sprinkle freshly ground pepper over both sides of each steak, and sprinkle with salt to taste.
  • Heat a nonstick skillet over medium-high heat. Place steaks in hot pan, and cook for 1 minute on each side, or until browned. Reduce heat to medium-low, and add balsamic vinegar and red wine. Cover, and cook for 4 minutes on each side, basting with sauce when you turn the meat over.
  • Remove steaks to two warmed plates, spoon one tablespoon of glaze over each, and serve immediately.

1/2 cup reduced-sodium chicken broth
1/2 cup balsamic vinegar
2 teaspoons honey
1 tablespoon butter
1 tablespoon olive oil
4 (5 ounce) boneless skinless chicken breast halves
1/4 teaspoon salt (optional)
1/4 teaspoon fresh ground black pepper
1/4 cup flour
2 tablespoons shallots, minced
chopped fresh parsley (recommended) (optional)

Steps:

  • Combine broth, vinegar, and honey in a small bowl.
  • Melt butter and heat oil in a large nonstick pan over low heat.
  • Place flour in a shallow pan or dish.
  • Dredge chicken in flour and shake off excess.
  • Sprinkle chicken with salt and pepper.
  • Increase heat to medium-high; heat for 2 minutes or until butter browns.
  • Add chicken to the pan and cook for 4 minutes per side or until golden.
  • Remove chicken from pan and keep warm.
  • Add shallots and saute 30 seconds.
  • Add broth mixture and bring to a boil; cook for 3 minutes or until the liquid is reduced to 1/2 a cup.
  • Serve sauce over chicken and garnish with parsley.

6 tablespoons olive oil
1 1/2 tablespoons freshly ground black pepper
1 tablespoon salt
2 teaspoons freshly grated orange zest
2 teaspoons minced fresh rosemary leaves
2 1/2 pounds pork tenderloins (about 2 large), trimmed
1 large shallot, minced
1/2 cup red wine
1/2 cup low-sodium chicken broth or stock
3 tablespoons cold unsalted butter, cut into small pieces
1 tablespoon balsamic vinegar
1 teaspoon minced fresh rosemary leaves
1 teaspoon freshly grated orange zest
Salt and freshly ground black pepper
2 to 3 tablespoons minced shallot or onion
1/2 cup wine
1/2 cup low-sodium broth or stock
3 tablespoons cold unsalted butter or heavy cream
Vinegar or lemon juice, to taste
Fresh herbs or other aromatics
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix 3 tablespoons olive oil, freshly ground black pepper, salt, orange zest, and minced rosemary in a small bowl. Rub the oil mixture all over the trimmed pork tenderloins and place them in a large baking dish. Cover and let the pork marinate 20 minutes.
  • Heat the remaining 3 tablespoons oil in a large skillet over medium-high heat. Add the pork and sear, cooking until browned on all sides. Remove the pork tenderloins from the skillet and place into an oven-safe dish; cover. Roast the pork until a meat thermometer inserted into the thickest part of the meat reads about 145 degrees F, about 15 minutes.
  • For the pan sauce: Pour off the majority of the cooking fat leaving any browned bits in the pan. Heat the pan over medium-high heat and add the shallot and the wine. Continue cooking until most of the wine has cooked off, scraping the browned bits off the bottom of the pan.
  • Add the broth and continue cooking until the sauce has reduced by half. Remove from the heat. Stir in the butter, one piece at a time, until fully incorporated.
  • Stir in the balsamic vinegar, rosemary, orange zest, salt, and pepper, to taste. Let the pork rest for 10 minutes before slicing. Drizzle the pork with the balsamic pan sauce.
  • After searing the pork tenderloins, pour off the majority of the cooking fat leaving any browned bits. Heat the pan over medium-high heat and add the shallots and wine. Continue cooking until most of the wine has cooked off, scraping the bits off the bottom of the pan.
  • Add the broth or stock and continue cooking until the sauce has reduced by half. Remove the pan from the heat. Stir in the butter, 1 tablespoon at a time, until fully incorporated.
  • Add the vinegar, fresh herbs, salt, and pepper, to taste. Spoon the sauce over the pork or meat and serve.

Okay-this was one of those "out of necessity" ideas that turned out okay.Problem arose when I ran out of something to top burgers (seasoned turkey burgers in our house)-No ketchup,no mustard...But balsamic vinegar,honey.onions and olive oil on hand-Prob would go great on steak also.

1/2-3/4 cup balsamic vinegar
2 tablespoons olive oil
1 -2 tablespoon honey
1 tablespoon soy sauce
1 dash salt
1 dash pepper
1 dash garlic powder
2 medium onions, sliced

Steps:

  • Pan fry your burgers or steak.
  • Keep warm (let steak rest).
  • Add onions to pan and brown to caramelize.
  • Remove onions.
  • To brown bits in pan over medium heat add 1/2 to 3/4 cup balsamic vinegar (inexpensive balsamic is fine-you're gonna cook it down),honey,olive oil,soy sauce,dash of salt,pepper and garlic powder.
  • Whisk together,bring up to a rolling boil for a few minutes,then bring back down to a simmer (bout 5 minutes total) whisking ingredients to thicken.
  • Return onions to pan,coat with sauce and bring to temp (bout a minute).
  • Serve over burgers or steak.
  • Note-has sweeter taste-you may omit honey if too sweet,since you are cooking down the balsamic and condensing the sweetness).

1 1/2 lbs chicken breasts, boneless, skinless
1 white onion, sliced into thin rings and separated
1 lb mushroom, small Bella Mushrooms, halved
1/2 cup chicken broth
1 cup heavy cream
3 tablespoons extra virgin olive oil
3 tablespoons butter
1/2 cup parmesan cheese, shaved
3 tablespoons balsamic vinegar
salt & pepper
1 pinch red pepper flakes (optional)
1/4 cup fresh parsley, chopped

Steps:

  • Season the chicken with salt and pepper and let rest.
  • In a small skillet, saute onions in the butter until they are golden brown (carmelized).
  • In a larger skillet with tall sides, heat olive oil and brown the chicken on both sides, but do not cook through. Remove chicken from the pan and set aside.
  • While the pan is still hot, deglaze with the chicken broth, and use a whisk or spatula to loosen all the browned bits.
  • Add the heavy cream and the balsamic vinegar to the chicken broth. Add salt and pepper to taste and red pepper flakes (if desired) Whisk through.
  • Add the mushrooms to the cream sauce and simmer for 10 minutes. Add onions into the sauce.
  • Place the chicken back into the pan with the sauces, increase heat to medium and saute until chicken is fully cooked and juices run clear.
  • Remove chicken and add the Parmesan cheese to the sauce. Stir until melted through the sauce.
  • Plate the chicken, top with sauce, and garnish with fresh parsley. I often serve this chicken over the top of basmati rice.

4 (4 ounce) skinless, boneless salmon fillets
½ cup vegan margarine (such as Smart Balance®), melted
1 lemon, halved
¼ cup balsamic vinegar
2 tablespoons soy sauce
2 tablespoons white sugar
½ teaspoon minced garlic
½ cup chopped fresh parsley

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Dip salmon fillets in melted margarine, covering both sides. Place in a baking dish. Squeeze lemons evenly over each fillet.

Place on a cutting board and cover with a large piece of plastic wrap. Pound with the smooth side of a meat mallet or a heavy saucepan to an even thickness of about 1/4 inch.
