BLACK WALNUT BUTTER COOKIES
This part of the Show Me State has an abundance of black walnuts, so these cookies certainly represent my region of the country. I created this recipe after a lot of experimentation...my family thinks they're a hit!

Steps:
- In a bowl, cream butter. Combine the flour, cornstarch and confectioners' sugar; add to butter and mix well. Stir in walnuts. , Roll into 3/4-in. balls. Place 1 in. apart on greased baking sheets. , Bake at 300° for 20-25 minutes or until set. Remove to wire racks to cool. Dust with additional confectioners' sugar.

- Gather the ingredients. Heat the oven to 375 F.
- Grease a large baking sheet or line with parchment paper.
- In a mixing bowl with an electric mixer, cream the brown sugar and butter until light. Add egg and vanilla; beat well.
- In another bowl, combine the dry ingredients-flour, baking soda, and salt-and mix to blend well.
- Add the flour mixture to the creamed mixture along with the black walnuts; mix well.
- Shape the dough into small balls about the size of walnuts.
- Dip the cookie balls in sugar. Place them on the prepared cookie sheet and press with the bottom of a glass to flatten slightly.
- Bake the cookies in the preheated oven for 12 to 15 minutes.

- In a large bowl, combine the first 7 ingredients. Stir in the crackers, walnuts and cheese. Coat hands with cooking spray; shape mixture into 1-in. balls. Place in a 13x9-in. baking dish coated with cooking spray., In a small saucepan, combine sauce ingredients. Bring to a boil. Pour over walnut balls. Bake, uncovered, at 350° for 25 minutes or until a thermometer reads 160°.

OLD-FASHIONED WALNUT BALLS RECIPE
Steps:
- Gather the ingredients.
- Preheat oven to 375 F. Cream butter, sugar, and vanilla in a stand mixer or with an electric hand beater at medium speed until fluffy; the butter should approximately double in size and turn pale yellow.
- Sift flour and salt together.
- Add it in two or three batches to the creamed mixture; mix gently to incorporate it between each addition. Stir in walnuts.
- Pinch a walnut-size chunk of dough off, roll it into a ball, and place it on an ungreased cookie sheet. Repeat with remaining dough, leaving about 1 inch of space between each ball.
- Bake cookies for 12 to 15 minutes. Transfer walnut balls from cookie sheet to a wire rack using a spatula. Cool for 10 to 15 minutes.
- Roll cooled cookies in sifted confectioners sugar.

- Preheat oven to 350 degrees. Toast nuts on a rimmed baking sheet until fragrant and golden, about 10 minutes. Let cool.
- Beat butter and granulated sugar with a mixer on medium speed until pale and fluffy, 3 to 4 minutes. Beat in orange zest. Reduce speed to low; add flour and salt, scraping down side of bowl as needed. Mix in walnuts.
- Divide dough in half, and transfer each to an 8-inch square baking dish, pressing down until flat. Refrigerate for 15 minutes. Prick lines into dough every inch with a fork. Bake until pale golden, about 25 minutes. Remove from oven. Sprinkle Demerara sugar over surface of each. Bake until sugar is set, about 5 minutes. Let stand for 5 minutes. Cut into 2-inch squares while warm. Transfer pans to wire racks, and let cool.
